Title: How to Pressure Cook Black-eye Peas
Review: Tastes like black-eyed peas after cooking. Here's some instructions due to the bags lacking cooking times.How to Pressure Cook1) Sort 1lb (16 oz) for any stones2) Soak, covered by 1-2" of water overnight3) Drain and rinse4) Add black-eyed peas to pressure cooker and cover with one to two inches of water. (I think only 1/2 inch will suffice with beans soaked overnight.)5) Pressure cook for eight minutes at 15 PSI or the second ring, natural release.Tips:1) Add 1 to 2 tablespoons of oil for preventing foaming.2) Add chicken/beef stock instead of all water.3) Saute chopped carrots and celery, along with a 1/2 clove of garlic, add a bay leaf.4) When there's an excess of liquid, I usually add some cold water with potato starch for thickening, vigorously stir while adding to hot liquid.5) Add ham hocks prior to pressure cooking, or chopped pre-cooked ham after pressure cooking.

Review: It is a New Years tradition in the South to eat Black eyed peas and ham for good luck on New Years day. Every year we make a large batch of Black-eyed peas and ham for home and for friends. These organic peas are by far the best. They taste good and don't get mushy. If you like Hoppin Johns these are the best you will find.
