Tips for Using a Brine Bag

• Livingston recommends layering two bags in a large stockpot or bowl.

• Malouf reminds first-timers to place the bag in a bowl or pot before adding the bird and the brine. Keep the whole solution in the container while brining to avoid unwelcome spills.

• When you're through brining, don't pick up the bag for transfer. "Don't carry the bag on its own, as it can split and spill the turkey-laced brine everywhere," says Malouf.

Title: Super easy way to rotate meat during brining process.
Review: I’m brining corned beef. I recommend these bags.My family loves corned beef. I would buy 2-3 during the sales around St. Patrick’s Day holiday when the price was less. A few years ago the price didn’t get low enough to fit my budget so, I researched and I have been brining my own meat for about 3 years and we can have corned beef whenever we want.I use Top Round London Broil when it goes on sale for close to 3 dollars a pound, and I buy 3 to go into the brine solution. Those pieces are usually around 9 pounds total. I have also used a bone in pork shoulder roast at a dollar a pound, around 10 pounds, and cut it into similar size pieces for the brining and cooking. I use the same brine recipe for both. They taste just like a corned beef brisket from the store. They are not quite as tender, but I’m not throwing away half the meat because it was actually a layer of fat. This bag has made the process so much easier, because I don’t have to worry about excess liquid spilling out of my bowl. The meat takes 7-10 days in the refrigerator, and should be rotated about once a day. I can now easily turn over the meat in the solution. I remove bag from bowl and push the meat around in the still sealed bag. Then, the bag goes back into the bowl, and returned to the fridge. I don’t have to clean my hands, the sink, the outside side and bottom of the bowl when I am done, because the bag doesn’t leak. Rotating the meat used to take me 10-15 minutes, now it takes about 2 minutes. If you have ever used the large bags that you fill with clothes, bedding, pillows, etc., seal shut, and then vacuum out the air, that is what these are like. The double zipper on the top can be a little difficult to close. The included plastic slider helps, but I did need to slide it back and forth 3-4 times. After I finally got it sealed, I re-opened the corner and pushed out as much air as I could, then re-sealed it.The single sheet instructions do not mention placing the filled bag in a bowl or on a platter like the product listing does. I am glad that I went back to the product listing and reviewed it before I got started. The bowl, platter, roasting pan, etc. provides extra support for the seams in the bag to prevent them from failing during transportation around the kitchen from the fridge to the sink. These bag are thick and feel very durable. They are not oven safe. I think they are expensive. Instructions sound like they are a onetime use item. Because I want to continue to use it, I will be turning the current bag inside out and washing it when I am done with this round of meat. That will then make these bags an even better deal and more budget friendly.FYI: After the meat has been in the fridge all those days, I will dump off the brine and rinse my meat 2-3 times in fresh water to remove the excess salt. Then I will place it in my 8 quart instant pot with about 1 cup of water along with more pickling spices. The 8-9 pounds of London Broil only take 35 minutes on high pressure to fully cook with a complete natural release (the locking pin drops) and lid can be removed. The meat falls apart and is easily shredded. We have it for dinner and the extra goes into the freezer for additional meals.

Title: Way bigger than I thought
Review: This bag was way bigger than I expected it to be, which was nice. It didn’t leak when we marinated the chicken in it. Still have one more bag that I will use next year probably.
