Title: Gorgeous layout, creative techniques, recipes are lacking key details
Review: For layout, recipe quality and variety, and techniques, this is a 5-star book. I borrowed this through Kindle Unlimited and have now decided to buy the paperback because I can really get some use out of this one. I love the flavored frostings in this that use fruit purées and the decorating tips and techniques are great and very helpful. My quibble (and itâs a big one) is the lack of some key details that are not too much of a problem for experienced bakers but would completely flummox those with less practical experience. These are serious omissions that, for me, dropped my rating from 5 stars to 3.First, none of the recipes indicate yields. I have no idea how much each recipe makes and what size of cake the recipe will cover - 6â? 8â? 9â? Frost and fill? Frost only? Fill a 2-layer? Fill a split cake with more than 2 layers? Cupcakes? How many? This is pretty critical information for planning purposes. I donât want to have to wait until Iâve made the frosting and am using it to find out that the recipe will not yield enough to fully frost and a fill a two-layer (or three or four) cake that is 6 or 8 or 9 inches in diameter. This is a pretty critical lapse that an editor should have caught.Second, many of the fruit-flavored buttercreams use purées. Okay, but where are the purée recipes? How was the purée for that specific recipe made? It matters. Just saying to use 1/4 cup of strawberry purée is not enough. There are scads of recipes for purées that vary along lines of sweetness, firmness (how liquid), and intensity of fruit flavor. Use the wrong purée and you have frosting that could end up pretty but tasteless or so runny that it never comes together. So, while I like the ideas provided by the buttercream recipes, Iâm still going to need to work out purée recipes and experiment to see what works in these recipes. Since the author presents this book as a culmination of hours of experimenting with variations and WITH PURÃES, she should be complete in sharing her wisdom and include the recipes for the purées she uses in her buttercreams.Finally, there are some recipes that involve cooking over the stovetop. The caramel one particularly jumps to mind. The only instruction for cooking is to boil 5 minutes. Wait...what? Nothing about the consistency we should be looking for to indicate that it is done. Not even a temperature (very helpful to have when making caramel or any sugar mixture). What is our goal? Soft ball? Hard crack? Something in between? Why does this matter? Because all stoves are not alike and, therefore, cooking times will vary. The heating capacity (BTU output) of a typical home range will be much lower at each setting than it will for a commercial cooktop or for an induction cooktop. Well-written recipes get around this variance by describing the finished appearance of the mixture and let the cook use whatever settings and time it will take for her/his stove to get there. Even better, when cooking caramel, a really great recipe also indicates the desired temperature using a candy thermometer.These are the points I would raise were I editing a cookbook like this. They may mean more print and leave the book less pretty in terms of layout, but cookbooks are supposed to be emphasize use over utility. If you leave half the information out about how to make the recipe you are including, whatâs the point?That said, the techniques section of the book is incredible. Again, beautifully laid out and each skill is well illustrated with step-by-step photos. There are not many actual cake examples but there are enough to get your own creative wheels spinning. Thereâs even a section on cupcakes. What I especially liked was the section on roses and other flowers. So many authors do roses; no so many do carnations, peonies, poppyâs, and flowers using Russian tips. This was great and really informative. As a bonus, you get QR codeâs in the back of the book. Scan the codes and youâre taken to the authorâs online resources, including how-to videos. Thereâs a QR code for each recipe and technique illustrated in the book.So, it gets 4 stars from me, and I will likely purchase the bound copy in the near future. I can see this being a very useful technique book for me as a prolific baker of cakes.

Title: Beautiful and Easy to Follow
Review: Beckyâs beautiful and masterful cake art is inspiring! As a very inexperienced cake decorator with no idea where to start, the step by step illustrations have made it so easy for me to follow directions. The QR codes the author leaves in next to her recipes and how-toâs is ingenious! All I have to do is scan the QR code from my phone and it leads me right to a YouTube tutorial.
