With previously unpublished recipes and beautiful colour photographs of food and the local landscape, this is a glorious tour around the Caribbean and its culinary delights. The book features both traditional and updated recipes from the different islands and, although the Caribbean has a reputation for hot food, it includes dishes with delicate, evocative flavours. The dishes are simple to make with ingredients that can be found in most major supermarkets. Traditional recipes such as Jerk Chicken vie with modern classics such as Grilled Coconut Shrimp and Sweet Plantain and Ginger Flans. A whole range of recipes is covered, including vegetarian dishes such as Creamed Cassava with Roasted Garlic and desserts like Little Rum and Chocolate Puddings.

Title: Book content great; binding is terrible.
Review: I read about this book in one of our Caribbean magazines, so I ordered it. It is a beautiful book with layout, photos, and recipes. HOWEVER, it is one of the poorest binding of a book I have ever seen. The outside cover peeled off after the first viewing of the book. It should have been made into a hardback book. I am surprised that Simon & Schuster ever released this book in the poor production state that it is. Since I doubt that getting another copy will be any different, I have salvaged the book by using some Elmer's glue into the spine area and then package taping the outside cover to the inside cover pages.Going back to the content, since I am into learning all about Caribbean cooking, it is beautifully handled. The photographs are totally appealing, the measurement conversions are so helpful to a person used to the U.S. measures, and I look forward to trying out many recipes. I just wish it had been a hardbound copy.

Title: Excellent book
Review: First, this book is beautiful to look at... great photos, full of colours, very Caribbean. Then the recipes are very appealing and mouth watering and they don't come accross as too difficult to execute. And most off all, so far all the recipes I have tried turned out to taste great and also look good.I live in the Caribbean and the recipes in that book really seem to represent the islands. The best cookery book I have bought in a long time.

Title: Caribbean Treasure
Review: This is a really nice collection of authentic Caribbean dishes. The jerk recipe is the best that I've tried. You won't be disappointed with any of the content or the many colorful pictures. This author did a great job. Living in the midwest, some of the ingredients are a challenge to find. A really nice book!

Title: Great book!
Review: Ms. Burke made an awesome book here with not only tasty, relatively easy dishes but she goes further to explain and provide history and tradition as well. For this woman of Caribbean heritage born in the States, I appreciate the background. I've made several dishes from this book that in some cases, I've made before or were cooked for me by a relative, and have been able to add to them or tweak them in some way that has proven to be a good thing. My book did come detached from the cover a week after it arrived. While still usable, I'm not happy about that 🙁

Review: A great introduction to the food and drink of the Caribbean. Lots of background on the evolution of the food and good anecdotes make this also an armchair read. The recipes are easy to follow, cover soup to nuts and drinks. The results are delicious.
