Cheesy Chicken Enchilada Soup

Hands-On Time: 25 minutes | Cook Time: 28 minutes | Serves 6

1. Press the Sauté button on the Instant Pot and heat oil. Add onion and cook until tender, about 5 minutes. Add cilantro, garlic, jalapeño, tomatoes, cumin, coriander, salt, and pepper and cook until fragrant, about 1 minute.

2. Add broth and chicken to pot and stir well. Press the Cancel button, close lid, set steam release to Sealing, press the Soup button, and cook for the default time of 20 minutes.

3. When the timer beeps, quick-release the pressure and press the Cancel button. Open lid and transfer chicken to a cutting board. Shred meat with two forks and set aside.

4. In a small bowl combine water and masa, then whisk into soup. Press the Sauté button and cook, stirring constantly, until the soup has thickened, about 8 minutes. Press the Cancel button.

5. Once soup stops bubbling, stir in chicken, cheese, and sour cream and stir until the cheese is completely melted. Serve hot with tortilla chips for garnish.

Title: Great down home American recipes
Review: I love soups and stews and had always made them in my 8 quart pressure cooker. Now I can make them in my 6 qt. instant pot since I am alone. It is easier to carry and I don't have to take it to the sink for a quick cool. Don't have the strength to do that for my 8 qt pot when it is full. This is great. The beef stew recipe is great. I tweek everything for low salt diets. I also make the split pea soup and chicken stew. Really great recipes. There are so many that I love-- tortilla, turkey & wild rice, Manhattan Clam Chowder, Chicken & Dumplings, Unstuffed Cabbage soup, Eggroll soup, and many more that I want to try like Borscht, Tom Yum and Wonton Soup.

Title: The BEST tomato soup recipe
Review: This is a solid cookbook filled with easy recipes that use ingredients that are easy to find and probably already appear on your weekly shopping list. The tomato bisque recipe is THE BEST. My kids are obsessed and literally cheer when I tell them I'm making it for dinner. Perfect with a grilled cheese. I would buy this cookbook again for that recipe alone.

Title: The index is useless.
Review: I wanted to make a lentil soup, so I looked in the index to find what recipes I might use from this book, and it didn't even have lentils listed. Upon paging through the book, I saw there were several recipes with lentils, but now every time I want to look for a lentil soup, I'm supposed to page through the entire book?? Even if I remembered the exact name of the recipe, I would still have to page through the whole book, as the index does not have the recipes organized that way either.
