Title: MUST HAVE PASTA BOOK
Review: Unlike many of the other pasta books I own, this one focuses exclusively on machine made pasta, think your standard sheeter, extruders, and cavatelli machines. I love the variety of recipes in this book, youâll find way more than just standard egg noodles in here. Iâm particularly excited about recipes for Asian noodles, like ramen, udon (pictured here) and soba noodles. I have my sights set on the Russian plemeni recipe too. The beginning of the book focuses on pasta recipes, find herb pasta, sourdough pasta, filling recipes and more noodley goodness there. Then towards the end she shares recipes using the noodles youâve made. The recipes at the end are easy to follow, and arenât too intimidating or labor intensive either! In addition to traditional pasta dishes, you can find recipes for things like cultured butter, ricotta cheese, cannoli (made with the pasta sheeter of course!), stocks and more.This book is thoughtfully laid out and easy to use, with stunning photography and a nice range of recipes. Lucy has an amazing tool collection that makes appearances throughout the book, and it has got me itching to expand my growing collection of pasta making tools. Something I also really loved about this book is that she included a note about authenticity in her introduction, as well as advice about portion sizing, storing and drying fresh pasta, as well as notes about commonly used ingredients. Because this book focuses on the noodles and variations within them, it makes it easy to add them to your favorite sauce rather than feeling forced to make an entire composed dish. Iâm so excited to add this to my collection of cookbooks and recommend that you do too!

Title: If you make fresh pasta, you must buy this book!
Review: I purchased the KitchenAid pasta extruder and roller with excitement to make my own pasta. After many tries with different dough recipes (including a few from King Arthur Flour), I was frustrated and ready to sell my attachments. This book was my last hope. I made rigatoni using the durum flour recipe from the Extruder section of the book. Perfect! The book provides recipes for pasta rollers/sheeters and extruder (mechanical auger ones like KitchenAid and manual).I am looking forward to trying the recipes and making more fresh pasta. Thank you!!!

Title: All in one reference
Review: This is a really good book for beginning pasta chefs. The book contains a number of basic recipes as well as trouble shooting tips. Unfortunately for owners of electronic pasta makers like the philips the book Jayne be as useful. The book culminates with chapter 5 and about 88 pages of finished pasta recipes for that perfect meal.

Title: Best pasta cookbook I have purchased!
Review: Lucy is a talented Chef, culinary instructor and published author of several other fabulous cookbooks. I am so happy to add this one to my âLucyâ collection.I have an embarrassing number of cookbooks, and a large portion of those are dedicated to pasta and noodles of all kinds. What makes this book unique is that this is the only one I have that really focuses on the proper use of three different pasta machines (a sheeter, an extruder and a cavatelli maker) to make a variety of noodles. As a pasta instructor, I am frequently asked about the differences between these machines and the proper way to use them. This book tackles all these questions and will give a home cook as well as someone more experienced the answers they need and the confidence to use each one efficiently. The book is not limited to the use of the machines, it is chock full of recipes, techniques and sources for pasta tools (and filled with beautiful images, most of which Lucy has captured herself).Lucy writes her recipes in a way that is understandable and approachable for a home cook, but also in a way that culinary students or professional chefs will appreciate. It is a must have for a new or experienced pasta maker!

Review: This is a brilliant book. I wish it came out ten years ago.Lucy does for pasta books what Kevin Zraly did for wine books.She covers every machine from rollers to kitchen aid attachments to the torchio and everything in between.She doesnât write in whimsical stories or long winded diatribes, she explains the recipes and hydration and use of machines in clear and easy to understand language.Her hydration information and dough recipes are spot on and will save you a lot of flour, water, egg, and time.You canât go wrong with this book for yourself or as a gift, and whether you are a beginner or experienced.Great purchase.

Title: The pasta book Iâve been waiting for
Review: Some cookbooks are meant to be read. The Ultimate Pasta Machine Cookbook is one of them. The book is informative, clear and the pictures are beautiful.Within a few days of having the book I grabbed some semolina and my pasta tools and put them to work. The result was beautiful pasta that was light and flavorful. So far Iâve only tried the extruded dough for macaroni and rigatoni noodles. I baked the rigatoni with Italian sausage, marinara and cheese. I was so impressed with the pasta I donât foresee myself buying a box of pasta any time soon.I canât wait to try some of the sheeted dough and accompanied recipes. Thereâs even a recipe for cannoli dough.If you were like me and had a bunch of pasta tools but was striking out with online recipes, look no further. This book is for you.

Review: We *LOVE* this book! Very thankful that we ordered the book. I have only had it for a week, but was able to enjoy cooking Lasagna, Spinach Spaghetti, and last night made Homemade Ravioli with an improvised filling based on this books! (All I did was add three spoons of Black Olive Pesto to the Ricotta Parmesan Garlic fixed fill!!!)Makes making pasta super easy and super fun. Very clearly written.
