CHICKEN NOODLE SOUP

Instead of buying canned or premade chicken soup, you can easily make your own in about 20 minutes. See Toby’s Tip for a time-saving trick.

1. Fill a medium saucepan three-quarters with water and bring to a boil over high heat. Stir in the egg noodles and return the water to a boil. Lower the heat to medium, and boil gently until the noodles are al dente, 5 minutes. Using a colander, drain the noodles and set aside in a medium bowl, covered with foil.

2. In a large pot over medium heat, heat the oil. When the oil is shimmering, add the onion, garlic, carrot and celery, and cook for about 5 minutes, until the onion is translucent and the garlic is fragrant.

3. Add the chicken and stir to combine. Add the broth, dillweed, salt and pepper, and stir together. Increase the heat to high and bring the mixture to a boil. Reduce the heat to medium-low, cover and simmer until the flavors combine, 15 minutes.

4. To serve, divide the noodles evenly into each of four soup bowls. Using a ladle, top the noodles with the soup.

TOBY'S TIP:

The egg noodles are stored separately because they fall apart when stored in the soup. If you want to store the noodles in the soup, use 1 cup (250 mL) dry elbow macaroni, ditalini or orzo pasta and add it directly to the soup along with the broth, dillweed, salt and pepper.

Title: Well written cookbook and easy to follow
Review: This Rotisserie Chicken Cookbook has added a great variation to our Covid at home menu. As a Physician I impress upon my patients and myself the need for protein in our diet. This cookbook was great to give my family a nice variety of ideas. Ms Amidor’s Cookbooks always had great ideas. Keep up the good job.

Title: Brilliant Cookbook
Review: I bought it without noticing it was about how to use store bought rotisserie chicken. I thought it would be recipes about doing rotisserie chicken on my grill with my new rotisserie.It became a happy accident though. I marinate chicken breasts which I cook on the grill and sometimes use several recipes from her book during the week. I like how she has a section on how to do salad dressings so I can make my own. This is one I keep in my kitchen instead of banished to the bookshelf in the living room where the rest of them are. That is the highest praise I can give a cookbook.

Title: Yummiest Chicken Tacos with pineapple salsa!!!!!
Review: Let me begin by saying that I cannot cook well, and have basically given up on all but the simplest of recipes.My family is literally SO incredibly bored by my meals that they begged me to try some other recipes.So I bought "The Best Rotisserie Chicken Cookbook" and tonight I made the chicken tacos! The pineapple salsa was so zingy with the jalapeno pepper and the combination of the salsa with the yummy chicken was fun for all of us to make our own tacos! This recipe was SO simple to make and SO yummy! We used whole wheat taco shells to keep it really healthy and the salsa was so spicy that it worked beautifully!
