Title: Easy, delicious, and healthy
Review: I was not a “salad person” prior to using this cookbook. My parents were “meat and potatoes” folks, and some of these recipes were way beyond my comfort zone. I’d never tried a daikon radish before!A few months ago, I committed to eating a salad every weekday, and I used this cookbook as my go-to. I have really enjoyed every recipe I’ve tried. I’ve been eating a salad a day from this book and have lost 20 lbs in 3 months as a result.Recipes are very easy to follow and the book is organized nicely. This is definitely a book that won’t wind up in the yard sale pile!

Title: HEAD AND SHOULDERS ABOVE ALL OTHER SALAD COOKBOOKS!
Review: One of the most used cookbooks in my kitchen and I own over 500 cookbooks but this book stands head and shoulders above all the others when it comes to innovative uses of greens and grains plus those marvelous dressings - YUM! My husband and I have enjoyed EVERY recipe I have made from this book and to date I have prepared about half the book so I figure I know what I'm talking about! The only recommendation I would make about any of the recipes is to double the dressing proportions if you decide to throw anything extra into the salads or just to have extra on the side if someone likes more, or save for another salad for lunch the next day. The dressings are delicious and you will find many more applications for them besides just pouring over greens. Recipes are enough for 2-3 big eaters as a complete meal or serve them with a large family dinner as a side dish. Absolutely wonderful flavors and I intend to purchase this book for several family members for Christmas presents this year! Enjoy!

Title: Raising the Salad Bar
Review: This book, bought at the same time as Kafka's Vegetable Love, is much more to my liking. It has colored pictures which entice me to make the salad shown--and I'm one who needs enticing, especially with salads! I'm someone who has to love the look of something before I'll make it. I also very much like the organization of the book. For instance, there's a section of nothing but various kinds of vinaigrettes so you can quickly read over the recipes and choose which of those you'd like to make. Very easy to follow. Simple recipes. Not cluttered with a lot of words...very nice.Raising the Salad Bar: Beyond Leafy Greens--Inventive Salads with Beans, Whole Grains, Pasta, Chicken, and More

Title: Wonderful Salads
Review: My husband and I first used this book at a cooking class, so I then bought it from amazon. I love the variety of salads, and in the summer we use this book constantly. I also like that it has a whole section on dressings so that if we create or own salad, we can still use the book for dressings. The only thing I always modify is the amount of olive oil in the dressings. In our cooking class, we learned to cut the amount of olive oil in half and use grape seed oil for the rest. Grapeseed oil will allow your flavored vinegars to come through better, and our dressings usually aren't overly oily. Oh, I also often put in a little bit of mustard to help "bind" the oil and vinegar together. Personally, I like that it's a straightforward cookbook. It doesn't have long stories about the recipes, and that's more my style.

Title: Ingenious title!
Review: Catherine Walthers is a great teacher! While most salad books simply give the recipes, this authoress really does 'raise the salad bar' with her instruction. In the beginning of each chapter, she teaches what ingredients are necessary, how to choose them, as well as the easiest means of preparing them.I went to a Farmer's Market for the first time as a result of this book. It was great fun and the taste of the fresh vegetables really is much better than what you can buy in the supermarket. The salad spinner I bought is a great tool for salad preparation. While you gather and prepare the rest of the ingredients the salad crisps right back up in the cold water as it awaits all the great plans with which you are going to dress it. Now if I can just motivate myself to get walking in tandem with these wonderful recipes I could feel ten years younger...

Title: One of my go-to favorites
Review: I’ve moved three times in five years and had to cull my cookbook collection each time, but this one always makes the cut. There isn’t a section of it that doesn’t contain something that hasn’t become part of my salad repertoire. One of my best cookbook purchases!

Title: This review is on design, not recipes. FYI.
Review: This book is not attractive enough or designed well enough for me to use. I know this isn’t quite fair, because the recipes may be amazing. But there are amazing recipes all over the Internet. As it is, I’m already vegan, and make excellent salads. For me to use a physical book, I need compelling photos for almost every recipe. I need a great layout, the right font, right spacing, right everything. This book was uninspiring to me. It was also very heavy on the old concepts of using animal protein to round out the salad. I cut out huge sections that were unnecessary. For someone else, they might like that approach, but not me. I wish I had given it away instead of cutting out so much. Now it’s pretty much ruined, so I guess I will recycle it.
