Critically acclaimed baking expert and media star Samantha Seneviratne dispels common baking myths and fears—and shares 100 of her favorite irresistible recipes.
Star baker Samantha Seneviratne wants to tell you the baking secrets of industry pros: You can soften butter in a microwave in seconds, without melting it. Don’t bother sifting flour. No stand mixer? No problem—you can mix it by hand. Test the doneness of a cake without toothpicks (who actually has those?). Make a custard with a dump and stir method. Tempering schmempering.
Break free from common baking myths, fears, and unnecessarily fussy procedures, with Bake Smart, filled with Sam’s tips and warm reassurances plus 100 stunning, mouth-watering recipes that are surprisingly achievable for any home baker. Chapters are organized by main baking ingredient (Butter; Sugar; Eggs; Flour, Nuts & Cocoa; and Yeast), each starting with a quick intro to break down the fundamentals of baking, as well as core recipes—like Basic Custard, Any-Nut Frangipane, and Rough Puff Pastry—that are easy to master and return to again and again.

Title: Great photos + unique flavors
Review: I collect cookbooks so I'm a bit picky about the content - this cookbook has beautiful full-color photographs of each recipe. There are some classics like chocolate chip cookies, but also a lot of unique flavors like cardamom, stone fruit, pistachio, toasted coconut, etc. Only reason for 4-stars is there were only about 10 recipes out of the whole book that I'm likely to make, given the uniqueness of a lot of the baked goods + odd flavors.

Title: Great premise but some missing info
Review: I love her ideas but kinda disappointed that some recipes are missing some basic info. For example in her basic enriched bread dough recipe there's a step where she gets you to activate the yeast but then never actually specify where to include it in the dough. In her marmalade blueberry bread, she never specified the size of the loaf pan. I'm pretty comfortable baking so it wasn't a big deal but if the promise is that she guides you every step of the way so you don't need to fear baking, she doesn't.

Title: Really needs a lot more editing and recipe testingâ¦.
Review: I am an experienced baker. This book just misses the mark. A lot of the recipes seem almost identical e to those published in other cookbooks, like david leibowitz ,for example. ..with no credit.-the maple syrup pots de crème, a disaster. The cooking time was way off. The recipes neglected to tell you to cook the eggs and the cream..how else can custard be made? I threw the whole thing away. Ridiculous waste of ingredients.-the honey cake called for a 9 inch cake to cook 20 minutes in the oven, really/ It was raw and needed about 2 x the baking time.Wonât venture anywhere else on this bookâ¦needs editing and more testing.
