Discover the Wonders of (Naturally Gluten-Free) Coconut Flour!

Coconut flour is quickly becoming one of the most popular flours on the market today, and deservedly so. It contains no gluten and no grain, and is low in digestive carbs and high in fiber, making it a favorite among Paleo, gluten-free, grain-free, nut-free, and low-glycemic dieters. In addition to what coconut flour doesn't contain, what it does contain is just as impressive. Not only is it packed with protein, but it also contains four times more fiber than oat bran; just a few tablespoons provides you with between 25 to 50 percent of your daily required intake! Unlike gluten-free flour mixes, however, coconut flour may be used on its own and contains only one, all-natural ingredient coconut. Yet its pure, slightly sweet taste is subtle enough that even coconut haters won't be able to detect it, and it lends itself perfectly to baked goods, creating results far superior to many other gluten-free treats. One bite of light and moist coconut flour bread is sure to have you addicted!

Inside, you'll learn how to bake wonderful muffins, cakes, cookies, savory bites and more with this amazing flour, which is now easy to find in most grocery stores and online. No fillers, additives, and gums here - just simple, all-natural treats such as:

* Cheddar Biscuits * Skillet Cornbread * Chocolate Chip Scones * Spiced Pumpkin Bread * Carrot Cake * Chocolate Layer Cake * Red Velvet Cupcakes * Pesto Flatbread Pizza * Garlic-Cauliflower Breadsticks * Spinach Mushroom Feta Crêpes * Coconut Shrimp with Sweet Chili Dipping Sauce

Author and blogger Erica Kerwien (www.comfybelly.com) will walk you through everything you need to know for using the flour with great results. You'll also find a handy icon guide for those recipes that are (or can be made) Paleo, grain-free, gluten-free, dairy-free, nut-free and more, so in no time you'll be whipping up new favorites that will please everyone (and every diet) at your table.

Title: many of the recipes I've been able to easily alter to reduce the sugar content even further or ...
Review: I was heartbroken when my doctor told me I needed to on an immune protocol diet due to a health concern. As a vegetarian, a extremely low sugar no grain diet is extreme. This cookbook has been invaluable to me. It not only provides recipes, but gives instruction on how to alter the recipes given the type of diet you are on--exchanges you can make. Further, many of the recipes I've been able to easily alter to reduce the sugar content even further or exchange it for a different sugar source (like a half cup of honey for a mashed banana). Some of the recipes are easier than there flour counterpart, like the every day pie crust. I can't recommend it enough.I've recommended it to so many friends who are on an immunological related diet. One of them, I brought a quiche made out of it for a Christmas party. She was so incredibly happy to have something she could eat which tasted GOOD. You have no idea how frustrating it can be when your diet is so limited.

Title: Loved this cookbook!!!
Review: It was laid out and thought out perfectly! The recipes actually work!!Clearly the BEST cookbook for good gastritis recipes which are very hard to find.I’ve yet to find a good book for multipurpose flour recipes that has all healthy ingredients like this one. I prefer using the almond and coconut flours as they taste better but I have all this multipurpose flour I have to use so I’m still searching for a good one for that.

Title: Should be called Almond Flour Cookbook
Review: I believe this book is an adequate introduction for those of us who are shifting our baking skills over to low-carb, gluten free, low fodmap, low sugar lifestyles. This book has some useful info, including substitutes and how to make your own coconut milk. However, MOST of the recipes require the main ingredient to be almond flour, or an equally expensive substitute... and I did not buy this book because I wanted to use almond flour, I obviously bought this book because I want to use Coconut flour. Almond flour is a controversial ingredient, as it has several health detriments when used in excess, which this book would have you do. I have converted some of the recipes to just coconut flour, but that should not have been my job. The recipes I have tested have come out well, so at least they were tested thoroughly. Also, there is some misinformation in this book, I assume the consequence of a lack of research. For instance, I do not recommend using coconut sugar in your recipes. It is poorly refined, with copious amounts of bug bits, yes, bug body parts, feces, larvae, etc. I did the experiments myself. It is also not sustainable, as it requires coconut farmers to choose between flowers (sugar) and coconut fruit (much more useful on the whole). It is also controversial as to whether coconut sugar is low glycemic.Overall I am happy with the book as a building block for further research into coconut flour baking, at the least it saves me some time searching the internet. If it were less expensive I'd recommend that everyone use it as a spring board into low carb baking... but as it is almost $20, meh. On a more mundane level, I appreciate the photos, any good cookbook should have a photo of the end result for each recipe.

Title: The ONLY healthy baking cookbook you need on your shelf…
Review: First, I rarely ever write reviews, but THIS book needed a review!! Let me explain why… I am an avid cookbook collector (hoarder) and this is THE cookbook that I always pull off the shelf when I want to make a healthy dessert or any baked good. There is virtually a recipe for every common baked good and treat (chocolate chip cookies, brownies, cakes, scones, waffles, pancakes, tortillas, crepes, savory dinners, you name it). Erica’s recipes are always simple to execute with everyday ingredients (for the paleo-friendly, SCD-friendly, gluten-free, grain-free, and /or dairy free pantry), and always full of flavor. Gluten free baked goods rarely taste like their gluten filled counterpart, but Erica’s recipes taste almost identical to the real deal. For someone with autoimmune disease who is always working on gut health and making wise decisions for optimal health, this book has been an invaluable asset (thank you Erica!!). I have many cookbooks that I rarely pick up or only have a few favorites that I turn to. But, you will drool over every single recipe in this book and I promise your family (even the dairy and gluten eating members) will love how they all taste!! Get this book! If there was one book you needed to make healthy desserts and baked goods, THIS is the one, don’t waste your time hoarding and searching through other books!
