The Quest for a Perfect Espresso

It is generally agreed that there are four basic elements critical to the perfect cup:
Element 1. Water:
Coffee is 98% water. Often overlooked, the quality of the water is as important as the quality of the coffee. A good rule of thumb is that if your water doesn't taste good from the tap, it won't taste any better in your coffee. That's why Cuisinart has added a water filter to the Fully Automatic Burr Grind & Brew Coffeemaker. The charcoal water filter removes chlorine, bad tastes and odors, for the purest cup of coffee every time.
Element 2. Coffee:
While the bulk of the liquid is water, all of the flavor should be from the coffee. To achieve the same great quality of coffee you receive at a coffee bar, you need to use the same quality beans. Buy the beans fresh and whole, only about a two weeks' supply at a time for maximum freshness. Once the coffee bean is broken, its flavor degrades very quickly. That's why the Fully Automatic Burr Grind & Brew Coffeemaker grinds your coffee just prior to brewing. If it is not practical to buy small supplies, we recommend you separate larger amounts of beans into one to two week portions immediately after purchase, and freeze them in airtight containers. The best way to maximize freshness is to minimize exposure to air, light and moisture. So, once beans have been removed from the freezer, maintain them in a sealed container at room temperature, since damaging condensation occurs every time the beans are removed from the freezer or refrigerator. Note that some coffee experts advise against freezing dark-roast beans, because freezing can cause the oils to coagulate. Other experts disagree. We suggest you experiment and decide yourself. We recommend keeping the hopper at least half way full. Be sure that you have sufficient amount of beans in your hopper for the amount of coffee you intend to brew. Although it is preferable to use fresh, whole beans, you can make coffee in the coffeemaker using pre-ground beans. To do so, turn off the grinder by pressing the Grind Off button before turning on the unit. It is suggested to use 1 level scoop of ground coffee per cup and adjust the amount to your taste. The maximum capacity for ground coffee is 16 level scoops, using either a paper or permanent filter. Exceeding this amount may cause overflow.
Element 3. Grind:
The grind of the coffee is critical for proper flavor extraction. If the grind is too fine, over extraction and bitterness will result. Too fine a grind may also clog the filter. If the grind is too coarse, the water will pass through too quickly and the desired flavors will not be extracted. The Fully Automatic Burr Grind & Brew Coffeemaker is preset for a medium grind, the optimal grind for this type of coffeemaker.
Element 4. Proportion:
The Fully Automatic Burr Grind & Brew Coffeemaker makes up to twelve cups of (54 ounces) of coffee.

Making Coffee with Whole Beans

12-cup thermal caraffe

  1. Fill the Water Reservoir:
    Open the reservoir lid. Pour the desired amount of water in the reservoir using the water level window indicator. Close the reservoir lid. Note: Do not exceed the 12-cup line; doing so may cause the carafe to overflow.
  2. Add Beans:
    Lift the hopper lid, using the recess on either side. Fill the hopper with beans. It is recommended keeping the hopper at least halfway full. Be sure that you have a sufficient amount of beans in your hopper for the amount of coffee you intend to brew (maximum capacity is 1/2-pound Do not over-pack the hopper. Over-packing may result in jamming the grinder.) For easy filling, the hopper container can be taken out by turning the hopper container release knob to the unlock position. Note: Do not put any water in the unit once the hopper container has been removed. If the water gets into the grinder motor, the motor may become damaged and may malfunction. Put hopper lid back in place.
  3. Lock Hopper:
    If you have removed the hopper from the unit, be sure that the hopper container release knob is in the unlocked position and place the hopper container back in the unit. Turn the knob to locked position. This unit is equipped with a safety interlock system. The unit will not grind if the hopper container is not in place. If you try to turn on the unit for grinding with the hopper out of place, the unit will beep continuously until the missing part is installed. The brewing process can be restarted by pressing the On button. Restarting the process will not affect coffee results.
  4. Insert Coffee Filter:
    Open filter door by pressing filter basket door release button. Remove filter basket cover and place a #4 basket paper filter or Cuisinart's commercial style permanent filter in the basket. The unit is equipped with a safety interlock system. The units will not operate if the filter basket cover or filter basket are not in place or if the filter door is not closed. If you try to turn the unit on while the filter compartment is out of place, the unit will beep continuously until the missing part(s) are installed.
  5. Brewing:
    • Immediate Grinding and Brewing:
      1. Turn the Grind Control Knob to select the number of cups you want to brew. The coffeemaker will grind the corresponding amounts of beans. The unit will automatically adjust for low cup settings.
      2. Press the Strength Control button to set the coffee strength. MILD, MED or STRONG will show on the LCD display.
      3. Press the On button. The indicator will light and process will begin.

    • Programmed Brewing:
      Press the Program button. The indicator will light and the display will show the programmed time for as long as the button is depressed. The display reverts back to the time of day once the button is released.
      1. Turn the Grind Control knob to select the number of cups you want to brew. The Coffeemaker will grind the corresponding amount of beans. The unit will automatically adjust for low cup settings.
      2. Press the Strength Control button to set coffee strength. MILD, MED or STRONG will show on the LCD display.
      3. The coffeemaker will begin brewing at the programmed time.

  6. During and After Brewing:
    The Brew Pause feature allows you to remove the carafe from the resting plate during mid-brew. The brewing process does not stop during this period; only the flow of coffee from the basket stops. Do not remove the carafe for longer than 20 seconds or the coffee may overflow the basket. While Cuisinart offers this feature, it is not recommended that you pour coffee before the cycle has reached completion, since the coffee brewed at the beginning of the cycle has a flavor profile which is very different from the coffee made at the end of the cycle. Removing the cup during the brewing cycle will alter the flavor of the finished pot. When the brewing cycle is completed, five beeps will sound. Coffee will continue to stream from the filer for several seconds. After brewing, the unit will automatically shut itself off. The thermal carafe will keep the coffee hot for hours.
  7. Making Coffee with Pre-Ground Beans

    Simple operation control panel

    1. Fill the Water Reservoir:
      Open the reservoir lid. Pour the desired amount of water in the reservoir using the water level window indicator. Close the reservoir lid. Note: Do not exceed the 12 cup line; doing so may cause the carafe to overflow.
    2. Add Coffee Grounds:
      1. Open filter door. Add ground coffee to the permanent or #4 paper filter.
      2. Place filter basket lid in place and close filter door.

    3. Brewing:

        1. Press the Grind Off button. When this function is activated, an amber LED will be illuminated.
        2. Press the On button. The indicator will light and the process will begin.

      Title: Wish I'd bought this before
      Review: I vacillated so long before buying this coffee maker, torn by the huge polarity of reviews. I even spent several months with my last grind & brew machine requiring a fresh application of scotch tape to hold it together every time I used it. Eventually I decided to bite the bullet and go for this machine and wow am I glad I did. It looks great, feels like a real piece of engineering (OK, I'm a guy, I like to be impressed by engineering), works perfectly, makes great coffee that it keeps hot for a good amount of time, is simple to clean and operate, and far less messy than my previous grind & brew machine.There is a lot of discussion by reviewers about the cleaning process required to stop this machine from clogging and preventing the fresh coffee getting from the grinder to the basket and thus producing weak coffee. This was one of the things that initially made me so reluctant to buy this machine, but I have had no problem with that at all. So, every time I use the machine I press the button on the side and the filter basket assembly opens, I take the whole thing to the sink and have everything emptied and rinsed in less than a minute, (I always dry the filter cover/lid with a kitchen towel before replacing the whole assembly, just because it feels like the right thing to do), I unlock the coffee bean hopper take it off and using the supplied brush just give it a quick jiggle in the chute where the ground coffee is fed to the filter basket and replace the hopper. Then just rinse out the carafe and use it to refill the reservoir. Believe me, it has taken me longer to write that than it does to actually do it, it really is a fast, clean, and simple job to clean and refill this machine.It has an insulated carafe to keep the coffee hot rather than the conventional hot plate to keep the coffee stewing. Some have complained that it doesn't keep it hot enough and there was an extra note from the manufacturer in with the instructions, suggesting that the carafe should be warmed with hot water before use. I have never warmed the carafe and the coffee is always hot enough, in fact I recently made coffee at 6am and had the last cup at midday and it was still hot enough to drink (but I do drink it black so adding milk or cream would cool it down). I personally like the idea of NOT having a hot plate that keeps stewing the coffee.The carafe does need to be tipped up at a very steep angle to pour the coffee, due to the lid mechanism that is designed to prevent heat loss. Even when tipped right up the coffee still comes out fairly slowly. Being 6'2" I find the tipping angle required for the carafe quite natural, though my wife at 5'4" does find it a little awkward. If I'm in a hurry to get at the coffee the 1/4 turn required to remove the carafe lid and pour it faster really isn't a problem.I do like my coffee brewed quite strong and this probably the only area that makes me less then delighted with this machine. You set it to the number of cups that you wish to brew and it grinds the amount of coffee that cuisinart think you need for that number of cups ... and it's not really strong enough for my taste. However, because this is a 12 cup machine (larger than most) and I rarely need to brew that much, I simply fill the water level to 10 cups but leave the setting on 12 cups. That works a treat and makes coffee at a good strength for me. If I need to make more than 10 cups I simply add some pre-ground coffee to the filter basket before turning the machine on.I think this is a great machine, certainly the best coffee machine that I've owned and I really wish that I'd bought it long before i did.

      Title: Worth Every Penny
      Review: Hi! I just wanted to offer my opinion to any interested persons on the Cuisinart DGB-900BC Grind & Brew Thermal 12-Cup Automatic Coffeemaker. This model replaces an older Cuisinart Grind & Brew model I have used for over 3 years. After making two 4-cup pots of coffee to test this new pot, I can let you know this coffeemaker is the best I have ever owned. The coffee was strong on the 'Strong' setting (it was strong, but not overpowering), stayed hot enough to drink in the carafe for at least 30 minutes, and the bean grinding was excellent. The 12-pot carafe is wider than my old 10-pot carafe, but it is the same height. This means I can reuse the old carafe on the new coffeemaker when I entertain! The design of this one (e.g. beans are stored in a hopper located on the top of the coffeemaker) makes coffee easier to make than my old Cuisinart Grind & Brew. Pretty much all you have to do is add water to get the best cup of coffee you will have all day. The grinding system is far better than the old style system.The only quibble I have is that the coffee 'chute' tends to collect coffee grounds. After two 4-cup pots, the collected coffee grounds tended to build up in the chute very slightly, but it appears to fall off during use. I can understand where an oily bean may build up grounds sooner rather than later. I suggest keeping an eye on any potential buildup in the chute. The owner's manual recommends you check the chute every few pots. If you have owned a similar grind and brew coffeepot, I don't have to tell you to keep your chute clear :). Another tip is to make sure the beans are loaded in the hopper and the lid placed on the hopper BEFORE you add water. The water reservoir opening is a bit small and you may get water on your beans. You do not want to do that.This coffeepot is worth every penny I paid for it, and I highly recommend it for coffee fanatics who want something more than the standard, cheap Mr. Coffee coffeemaker. If you have owned a prior grind and brew system, this is a very capable replacement. If you have never owned a grind and brew system, you are in for a treat! But please take the time to watch the included (!) video CD and/or read the instructions before use. It will save you some grief and you will appreciate your new coffeemaker a lot more. You will NEVER go back to a regular coffeemaker again after using this one. I guarantee it!**UPDATE**I have had this coffee pot for a couple weeks and my initial impression has not changed. However, I can state the coffee, when made according to directions, is strong (which is a good thing!). If you like your coffee somewhat weaker (like when my brother comes to visit), I simply add more water (e.g. bean counter set to '6' and add 8 cups of water, strength setting set to mild). I REALLY like this coffee pot.**UPDATE**05/16/2014 I have had the coffee pot for nearly one year and my opinion has not changed. This coffee pot is worth every penny I paid for it. I highly recommend it to anyone who likes GOOD coffee.

      Review: Pues durante mas de 4 meses estuve revisando en todos los lugares de la red por la mejor opcion en cafetera que moliera el cafe al prepararlo, entontre que las 2 mejores opciones son:1 Breville The Grind Control2 Cuissinart DSG 900Por razones personales tengo 2 cuentas de amazon una aqui en mexico y otra en USA donde tambien recibo productos. La verdad el producto es excelente solo que por cuestiones de operacion del mismo supuse estaba funcionando mal y solo tenia conmigo 1 semana.El producto se puede seleccional en el grind control cuantas tazas de cafe en intervalos pares de 2 a 12. Ponia en el recipiente 12 tazas, es decir todo lleno de agua y sin importar la seleccion menor a 12 siempre siempre ocupaba toda el agua, esto sin importar el strengh del cafe (lo cargado). Pensando que fuera un desperfecto hable a cuisinart de mexico para pedir soporte todo estaba bien hasta que me preguntaron que donde habia adquirido el producto, les menciono que en Amazon MEXICO, hasta ahi todo bien luego cuando les menciono que en el recibo el producto fue importado ellos me dicen que no pueden darme soporte y mucho menos garantia. Al dia siguiente me contacto con amazon, incluso me llaman por telefono y me entero que por haber sido este producto importado sin importar que fue comprado en Amazon MEXICO cualquier problema de garantia era por parte de cuisinart USA, imagien lo que senti cuando me dicen esto, la marca ofrece garantia por 3 años. Puedo vivir sin la automatizacion de que la maquina prepare en liquido el equivalente a las tazas que pense se podrian, todo por que la calidad de tomar un cafe recien molido es por demas superior al sabor del cafe molido.Razones por las que compre el producto 1 la calidad 2 la garantia y 3 la mas importante lo compre en "MEXICO" para no tener problemas con garantia fuera del pais y miren, lo que mas me molesta es que Amazon solo se limita a decir que regrese el producto, comprre el producto para quedarmelo no para regresarlo lo que esta fatal es que ahora me dicen que asi es cuando nada de esto se menciona en el sitio, YO COMPRO EN MEXICO me cobran los aranceles de importancion para legalizarlo en el pais por asi decirlo y esperaba garantia en MEXICO lo cual creo que no sucedera, aun tengo tiempo de devolverlo, pero quiza tome el riesgo ya que cuisinart USA me garantizo que en su estadistica no hay daños mayores a este tipo de maquinas solo partes de desgaste.Tomen precauciones cuando compre productos importados porque es como si los hubieran comprado en USA solo que mas caros.       Review: Excelente y elegante cafetera que buscaba desde hace tiempo y solo la encontré aqui. En Sears y Liverpool tienen una igual pero con jarra de vidrio y a mayor costo. La recibí muy rápido y perfectamente empacada. Ha funcionado perfecto y es muy precisa en moler el café justo para la cantidad de tazas. Muy rápida en la preparación y nula evaporación. Incomparable el café recién molido en aroma y sabor. Me encanta la jarra térmica que mantiene el café caliente durante varias horas. Estoy muy satisfecha con el producto.Al día de hoy (26 Dic 2018) Me hace la observación mi esposo que la cafetera no calienta suficiente. Yo no lo percibo porque tomo mi café con leche líquida, pero él que lo toma negro, lo notó desde un principio pero hasta ayer me lo dijo.

      Review: Al principio sentiamos que gastaba mucho cafe para preparar las tazas pero despues de probar el café te das cuenta que lo vale. Es muy simple de usar. Es un poco ruidoso el molino aunque nada que no sufriese ya con el molino externo. No se te olvide limpiar el molino constantemente porque se genera un bloque de cafe que se queda estancado.

      Review: Lo digo en serio, el producto no funciona. El café a veces ale frío, a veces caliente... es muy complicado usarla y realmente ningún feature funcional al 100%. Yo lo compré con mucha ilusión de que fuera una maravilla y ahora estoy ahorrando para comprar una cafetera normal en el supermercado que al menos si haga mi café en la mañana... (esta nunca hará el café con el timer).
