Written with the no-holds-barred ethos of his beloved series, No Reservations and Parts Unknown, the celebrity chef and culinary explorer’s first cookbook in more than ten years—a collection of recipes for the home cook.

Anthony Bourdain is a man of many appetites. And for many years, first as a chef, later as a world-traveling chronicler of food and culture on his CNN series Parts Unknown, he has made a profession of understanding the appetites of others. These days, however, if he’s cooking, it’s for family and friends.

Appetites, his first cookbook in more than ten years, boils down forty-plus years of professional cooking and globe-trotting to a tight repertoire of personal favorites—dishes that everyone should (at least in Mr. Bourdain’s opinion) know how to cook. Once the supposed "bad boy" of cooking, Mr. Bourdain has, in recent years, become the father of a little girl—a role he has embraced with enthusiasm. After years of traveling more than 200 days a year, he now enjoys entertaining at home. Years of prep lists and the hyper-organization necessary for a restaurant kitchen, however, have caused him, in his words, to have "morphed into a psychotic, anally retentive, bad-tempered Ina Garten."

The result is a home-cooking, home-entertaining cookbook like no other, with personal favorites from his own kitchen and from his travels, translated into an effective battle plan that will help you terrify your guests with your breathtaking efficiency.

Kuching-Style Laksa

“In the hierarchy of steaming hot bowls of magical broth and noodles, laksa is at the absolute top. The best. The most delicious. Breakfast, lunch, or dinner—it will cure what ails you.”

Bodega sandwich

“Forget about pastrami: The iconic New York City sandwich is bacon, egg, and cheese on a hard roll—cooked on a griddle and served by someone who addresses you as papi or mami.”

Mac and CheeseMac and Cheese

Mac and Cheese

“Truffles do not make it better. If you add truffle oil, which is made from a petroleum-based chemical additive and the crushed dreams of nineties culinary mediocrity, you should be punched in the kidneys.”

Macau-Style Pork Chop Sandwich

“This sandwich, loosely inspired by a pork chop bun served to me for television in Macau, is possibly the most delicious thing in the book. We had a hard time shooting it, because everyone in the room kept eating the models.”

Korean Fried Chicken

“There are many ways to make tasty fried chicken, and I like them all, but I’m particularly enamored of the Korean way. The freezing step…[is] essential for extra-crisp results.”

RatatouilleRatatouille

Ratatouille

“In a break with the ‘right way’ to do things, I cook all the vegetables separately, highlighting their differences, while (ideally) honoring the original flavor profiles. This version is fresher and crisper—and undeniably prettier.”

Title: Great read
Review: Love Anthony Bourdain when he was with us. A great chef and very honest man it’s a pity he had to leave us so soon. I’ve enjoyed the recipes and can’t wait to add them to my repertoire.

Title: Pretty straight forward recipes
Review: I’ve never cooked before but damn do I feel like Gordon Ramsey now, it has a small section of breakfast food but I don’t use those, the lunch and dinner recipes are amazing and explained very well with a dash of humor to ever story, I loved watching Anthony bourdains show and now I’m glad I have his book too!

Title: I'm hella cool, I'm badass
Review: Okay, this is one of those books that when you pick it up in your grubby little hands it says, yeah, I'm hella cool, I'm badass, I got a Ralph frigging Steadman cover and you will not be through with me until I say you are, punk! Now, first, as someone long in the publishing industry world this is a gorgeous book. It feels really good in your hand, has a wonderful weight and heft to it and a nice contrasting cover of high gloss and an almost burlap sensuality. 100%. Open it up and the gorgeous full color photos just don't stop. They are enticing, clear and evocative of the sensibility and meaning of the courses portrayed and there is that unmistakable Bourdain wit at work in most of them. 100%. Then you get to the recipes and it just doesn't let up. Bourdain is at work here too in his off the cuff repartee about food and dishes (wait till you get to his dessert "chapter") and it makes for as entertaining, and useful, a read as the best of the Bourdain essays. I think this is a book I will start at the beginning and read through like a potboiler (all puns shamelessly intended) and then flip it back over and just start making the damn things from the first page. Oh, I know some lucky people who are getting this for Christmas! A must have for any fan of Bourdain, any foodie, or anyone who just loves beautiful books. Buy one to get trashed in the kitchen and another to sit pristinely on top of the stack of books on the coffee table.

Title: Grief counseling...
Review: I bought this book at the height of Covid after realizing that dining out was just not an option. And realistically I could not think of someone better to ride my ass and make my cooking skills improve more so than Anthony Bourdain. Whether you decide to make these recipes or not, this book is absolutely recommended. Some of us just can't get enough of Tony and we find it where we can. By the way, this is an image of the Ma-Po pork and tripe dish. I have done many others but in terms of this particular dish, make sure you are ready to cut up that much raw tripe. Love you Tony, miss you.

Title: Full Range of Good
Review: This one's a keeper. There aren't a ton a recipes but there is a good representation of the basics and the comfort foods to the fancy to the international. Recipes are presented with some history and helpful hints. I think I would try most of these. After reading some of the other reviews I have to admit I am perplexed. Who did we think Anthony was? I've heard complaints of profanity in this book and disturbing pictures. This did not come as a surprise to me. I saw this and thought. "oh, so Bourdain!"I've heard complaints that some recipes were so simple it insulted ones intelligence and some so out there who would make that? And I can only think, so Bourdain.I read the recipe for scrambled eggs, which I've made a biggilion times and thought, I'll have to try it that way. I'm a good cook, but I'm not a Chef. Now, I'm off the the book seller's site for a one star review because I bought a New book, but this one is used. It has grease stains on pp.s 1-10. 190-191, and 238-239.Note: I'm editing this review before it even got posted and approved. The seller was you know who and complaints about customers getting damaged and used books from them go back to 2016. I contacted you know who and was told they would contact admins about the problem.... (its too late to return it). well, admins have known about the problem for six years. they don't care. Thanks, you know who you are.

Title: Interesting, but not for everyone
Review: I recommend this for Anthony fans and/or for cooks above beginner levels. There are some universally straight forward recipes, but I feel most of the recipes are a little more advanced or niche. Nonetheless, the recipes are very personal and the book is visually awesome.

Title: New approaches to preparing food, with an attitude!
Review: I have made several offerings. This is part of a cooking group, our first meeting. The host chose the book. Desserts should be added. I don't do them, but I make them for social gatherings. Thank you.

Review: A great book with amazing recipes. Has some interesting recipes and definitely isn't a run of the mill book with the token recipes thrown in. Each recipe has a story behind it and has some interesting Italian recipes. Book quality is top of the line and arrived in perfect conditions. Great for any Anthony Bourdain fans and even has a few personal stories.

Review: The cover art is outstanding, the pictures are beautiful, Bourdain's comments on life and food are entertaining. Most of the recipes have many ingredients, but they can be boiled down to fewer, and the meal will be just asdelicious. I have been cooking for a long time, so I have the go to ingredients on hand to make any recipe work.As long as you have a bottle of Worcestershire Sauce and Parmesan cheese handy, anything can taste great.Don't put them on dessert - LOL.Bourdain in also that kind of cook. He loves good Mac 'n Cheese - he's not a cooking snob.

Review: It's beautiful, the pics are fantastic, and it doesn't make me feel sloppy because the book comes with its own splotches on every page.Apart from that, the writing, the recipes.... everything is amazing.
