No-Bake Granola Bars

Contributed by Patricia Lindsey, Lockport, IL

Lightly grease a 13"x9" baking pan with a small amount of coconut oil; set aside. In a large saucepan, combine remaining coconut oil, peanut butter and honey. Cook and stir over low heat just until blended and smooth. Remove from heat; add oats, cereal, coconut and cranberries. Stir just until evenly coated and well combined. Let cool about 10 minutes; stir in chocolate chips. Quickly transfer mixture to baking pan; spread evenly with a spatula. Cover with plastic wrap or wax paper; press mixture down evenly and firmly. Refrigerate for one hour before cutting into bars. May be kept tightly covered and refrigerated for up to 10 days. Makes 16 bars.

Cookies! Cookies! Cookies!

We know them as a "just-a-bite" treat, a little morsel of sweetness or a "pick-me-up" goodie. One of the nicest aspects of cookie-making is that often it is a multi-generational event, with great-grandmas and grandmas passing along their skills to moms and children. How sweet is that?

Title: Whatever “grandma’s cookies” means to you, it’s in this cookbook!
Review: UPDATE - I TOOK NOTE OF ANOTHER REVIEWER’S COMMENT ABOUT THE USE OF CAKE MIXES - OF THE 239 RECIPES, 22 INVOLVE A CAKE MIX, TUBE OF COOKIE DOUGH, TUBE OF BREAD, ETC. I TOOK THE TIME TO ANALYZE ALL 239 RECIPES AND I’VE MADE A LIST OF ALL RECIPE NAMES AS WELL AS WHAT READY-MADE INGREDIENT THEY CONTAIN. MY LIST IS AT THE END OF THIS REVIEW. A PRO FOR THESE TYPES OF RECIPES IS THAT THEY ARE TIME SAVERS. A CON IS THE PROCESSED NATURE OF THESE FOODS.Half of my family is Pennsylvania Dutch, so for me personally, “grandma’s cookies” invoke memories of autumns heavily spiced with variations of gingerbread and molasses-based cookies. If a nostalgia cookbook is missing those, then I seriously doubt the book’s authenticity. THIS BOOK IS AUTHENTIC! It has every cookie I ever wanted and more. Our family also loves the taste of black licorice. One recipe that really excited me contains anise. I have not tried it yet, but it’s at the top of my list next time I have a chance to get into the kitchen. (See my photo of this cookie from the cookbook.)All that being said, I think I can guarantee that whatever “grandma’s cookies” means to you, at least one of these 239 recipes will be exactly what you are looking for. This richly illustrated book will appeal to all ages. I encourage you continue these marvelous traditions by getting the children in your life to participate in baking with you. This is a book that I can wholeheartedly recommend!HERE IS THE RESULT OF MY ANALYSIS FOR READY-MADE INGREDIENTS:1. Peanut Butter Surprise Cookies (tube of peanut butter cookie dough)2. Rockie Road Bars (brownie mix with chocolate syrup pouch)3. Coconut-Pecan Fudge Brownies (chocolate fudge cake mix)4. Speedy Little Devils (devil’s food cake mix)5. German Chocolate Cookie Bars (German chocolate cake mix)6. Easy 4-Layer Marshmallow Brownies (chocolate cake mix)7. Cake Mix Brownies (devil's food cake mix)8. Triple-Layered Brownies (brownie mix)9. Divine Praline Brownies (brownie mix)10. German Apple Streusel Kuchen (loaf frozen bread dough)11. Raspberry-Marshmallow Cookie Pizza (refrigerated sugar cookie dough)12. Mix-and-Go Chocolate Cookies (chocolate cake mix)13. German Chocolate Delights (German chocolate cake mix)14. White Chocolate Macaroons (tube white chocolate chunk cookie dough)15. Frosted Cherry Drops (white cake mix)16. Quick & Easy Lemon Bars (angel food cake mix)17. Coconut Crunch Pretzel Bars (German chocolate cake mix)18. Pineapple Goodie Bars (refrigerated sugar cookie dough)19. Quick & Easy Nutty Cheese Bars (golden butter cake mix)20. Pumpkin Spice Bars (spice cake mix)21. Title: Proofreading
Review: I haven't tried recipes yet. They do look good! The spellchecking is terrible: eegs, pflace, and on and on. I'm just a little concerned about the accuracy of the ingredients.

Title: The recipes looked good, but many used store-bought mixes
Review: I bought the digital version of the book. Many recipes looked good, and there was a good variety of styles, but too many of them were using cake mixes for my taste, and I returned it. Other people might not mind, but I thought I would mention it in a review.
