CRISPY GARLIC CHICKEN THIGHS

Ingredients 1.5 lb boneless, skinless chicken thighs (5-6 pieces) 1 tsp garlic powder 3/4 tsp kosher salt 1/4 tsp black pepper 1 tbsp extra virgin olive oil 2 large garlic cloves, finely minced 1.5 tbsp unsalted butter 1/2 cup Chardonnay or other dry white wine

Here’s my favorite no-prep way to cook skinless, boneless chicken thighs. However, if I have time, I like to marinate the thighs for more flavor. SERVES: 4 I PREP: 3–5 MINUTES I COOK: 10 MINUTES

Prepare chicken—Sprinkle each side of the chicken with the garlic powder, salt, and pepper.

Fry chicken—Heat the oil in a large nonstick skillet over medium heat. Place the thighs in the skillet, smooth-side down, and press down lightly on them with a spatula. Cook for 5 minutes until deep golden and crispy.

Flip the chicken and again press lightly with a spatula. Cook for 2 minutes.

Sauce—Add the garlic and butter, cook for 1 minute until the garlic is light golden and smells amazing.

Add the wine, then turn up the heat so the wine is simmering. Stir around the chicken to

dissolve the golden bits stuck on the bottom of the skillet into the wine. Simmer rapidly for 1 ½ minutes or until the alcohol smell evaporates.

Serve—Remove from the heat and transfer the chicken to serving plates. Rest for 3 minutes, drizzle with the pan sauce, and serve!

Title: Recipe Tin Eats Makes New and Interesting Recipes Achievable
Review: First, I am biased: I've been following and using Nagi Maehashi's Recipe Tin Eats online for several years. She was already one of my top two cooking gurus. (The other is Meredith Laurence, the Blue Jean Chef.) I have printed out MANY pages of Nagi's recipes in notebooks and use them on a regular basis. Many more pages hang in my kitchen waiting to be sampled. And I've been eagerly waiting since October for the arrival of her first cookbook in the United States.When I "finally" received my hardcover copy of the book last night, I jumped to check out which recipes I've already made that are in the book. There are many, and my favorite go-tos include:Greek Chicken Gyros: just finished up a set-aside batch from the freezer - YUM!Chicken Shawarma: Double YumMac & Cheese: Her cheese combination is wonderfuland Shepherd's/Cottage Pie, the ultimate confort foodWhat I enjoy most about her recipes are the excellent notes that describe the whys and how-tos for the different ingredients; what substitutions can be used, and what won't work as well. For many years I had listened to numerous TV chefs extol the virtues of chicken thighs. But as a confirmed white meat eater, I never tried them until Nagi talked/wrote me through using them. The book's links through to her online videos are an inspired feature. Wonderful, empowering cook and a great teacher for an old dog like me.Another plus is that the ingredients are, in general, "normal" items that are readily available in a local supermarket. For me, ingredients must be available in a small town Winn Dixie. Again, her suggestions for alternatives really matter.There are many other recipes I've used from her blog, but this is the "Dinners" cookbook. I have never been disappointed with flavor or found them to be beyond my skills.Now to go back and mark the recipes in the book that I want to try next. These kept on side-tracking me last night but I stayed true to my task of finding my old favorites.One of the reviewers mentioned thin paper. My book does not have thin paper.Taste is individual, but for me this book does not disappoint. I am probably going to order the Kindle version as well so I can keep it with me. And recommend to all: buy the book, sign up for the blog, follow on social media, etc. And enjoy cooking something delicious!And enjoy the contributions of Dozer, one of my favorite Goldens ever!

Title: Throw out you other cooking books, this one's a Keeper
Review: Great recipes, easy to follow and results that impress. This book not only has great recipes but the directions and amount of information about the recipes are useful and interesting. I love the fact that the author fuses Asian and Western cultures creating a diverse menu of food that tastes amazing. Her website RecipeTin.com is equally interesting, if you like Asian food and want to blend Western cuisine with Asian flavor, I recommend this book.

Title: Superb cookbook
Review: I have made recipes from Recipe Tin Eats website. They've all been successful and delicious and I expect recipes in the cookbook to be just as delicious. I received the cookbook yesterday and it is beautiful and well-organized. Though the organization of recipes is not unique, it might help some readers to go through the book and mark recipes you want to try, as I have done. However, there are two indices for the recipes. The Recipe Index lists the recipes as organized in the chapter headings like Everyday Food and Stir-Fries and Noodles. The 2nd Index lists recipes by main ingredients such as "chicken", "lamb", "gluten-free". I appreciate the brilliant index organization and design which helps to find a recipe and also makes menu planning easier. I also like that a comprehensive glossary of ingredients is provided. Notes and ingredients are marked by asterisks and superscript numbers in the ingredients, which I think are just a tad bit too small to be easily seen. I like that LEFTOVERS in the Notes is used instead of "storage"! The photographs of each recipe is beautiful, although, as one reviewer noted, some of them, not many, do have an "orange" tint, which I've found to be annoying, but appreciate the large photographs of EVERY recipe! Each recipe comes with QR code which leads to her website to watch how to make that particular recipe. The book relies heavily on meat recipes. I hope Nagi writes a plant-based cookbook in the future, as there were not enough "dinner" vegetarian recipes for my eating lifestyle. A lot of planning and recipe testing went into the final design of this cookbook and it shows. I mostly appreciate the extensive recipe testing, which I find lacking in many food bloggers and by even established and famous recipe developers and writers. All in all, I think this cookbook rates 5 stars.

Title: One of the best cookbooks ever!
Review: I am obsessed with Nagi's website so imagine how excited I was when one of my friends showed me this.I got it a few months ago and I have been working my way through it. My family loves these recipes and there are so many that are easy to do and quick, but taste like you're at a restaurant.No matter your skill level definitely check this one out!

Title: Easy and Delicious
Review: I have made almost all of the recipes and they are outstanding. Most whip up quickly. The flavor combinations are fabulous. I love the easy sauces that add zing to dishes without sauce. I saw that a new cookbook is coming out in October. I definitely am going to get it.

Title: My New Favorite
Review: I have a lot of cookbooks but this is absolutely my new favorite. The recipes are varied, the instructions for prep are clear and have great "hints" about how to substitute ingredients, and there's a glossary in the back in case you're not familiar with some specific ingredient. Almost every page has one of those recipes where you say "Ooh, I have to make that!".

Review: This is probably my favourite cookbook I have bought and I have a LOT! Our cookbook club is cooking from this book and we all love it. The recipes are well written, the tips help you know things like if you can substitute and ingredient, or whether an alternate cooking vessel will work or different methods that were tested and if they worked. She also tells you on each recipe if you can store it for leftovers or freeze it. The QR code takes you to online content that shows how to videos and ingredient brands etc. Nagi has put a lot of work into this book and it shows. The photos are beautiful, the glossary is complete and informative and the index is great. If I had any bad comment it would be that she only has celsius oven temperatures. Not a big deal to convert but would have liked fahrenheit in brackets. Having said that, this is the best book for quality of recipes! Each one has gone through rigorous testing and our cookbook club really appreciates that! Thank you Nagi! We love this book and Dozer!

Creo que muchos lectores del gran mundo hispano disfrutarían de este magnífico libro de cocina.Fui probando recetas del blog de Nagi Maehashi, recetas nada complicadas y con resultados espectaculares, recetas para chuparse los dedos (literalmente !!!). He ido adaptando otras para ajustarlas a los gustos de casa, yo suelo echar mucha menos sal por ejemplo. Algunos de sus trucos son espectaculares, en cuanto a resultados quiero decir; a veces me ha quedado pensando "bah, no cambiará tanto", pero no se pierde nada al probar, ¡al revés! y ¡qué mejoría!Las instrucciones de las recetas ocupan una sola página, la presentación es cómoda, limpia, bien ordenada. Las fotos son estupendas también.
