Discover the joy of cooking for yourself with more than 160 perfectly portioned, easy-to-execute recipes, flexible ingredient lists to accommodate your pantry, and ideas for improvising to your taste.
Taking care to prepare a meal for yourself is a different experience than cooking for others. It can be a fun, casual, and (of course) delicious affair, but there are challenges, from avoiding a fridge full of half-used ingredients to ending up with leftovers that become boring after the third reheat.
Cooking for One helps you make cooking for yourself special without becoming a chore with unfussy yet utterly appealing meals that rely on ingredients you already have on hand, like Garam Masala Pork Chop with Couscous and Spinach and Weeknight Chicken Cacciatore. Don't have exactly the right ingredients? Never fear--with a "Kitchen Improv" box on every page, we offer ideas for altering the dish so it works for you. And for those weeks you didn't make it to the supermarket, we use a "Pantry Recipe" icon to clearly mark recipes that rely entirely on our checklist for a well-stocked pantry. We show you when it's worth making two servings (but never more) with our "Makes Leftovers" icon, and suggest how to transform those leftovers into a whole new meal. (We love our Spice-Rubbed Flank Steak with Celery Root and Lime Yogurt Sauce served over arugula as a hearty salad the next day.) Ingredients themselves often lead you to another exciting meal--when you're left with half an eggplant from Simple Ratatouille, we direct you to Broiled Eggplant with Honey-Lemon Vinaigrette as the perfect way to use it up. And if the thought of a sink full of dishes keeps you out of the kitchen, there are plenty of appealing one-pan dinners like Sheet Pan Sausages with Sweet Potatoes, Broccoli Rabe, and Mustard-Chive Butter or Couscous with Shrimp, Cilantro, and Garlic Chips that are here to save the day.

Title: Excellent recipes and tips to keep from wasting
Review: This is an awesome cookbook for anyone looking to cook for one or two people. The recipes are truly designed for 1-2 servings to limit leftovers. No more math needed to scale down a 4-6 serving recipe. There are tons of suggestions for avoiding food waste, too. For instance, if a recipe calls for half a can of chickpeas, there is another section which will list recipes for using the other half. It also has tips for making many of the dishes vegetarian or vegan. The book is hardcover with beautiful pictures and easy to follow instructions. All of the nutritional information is located in one section for easy reference. It makes a great gift to anyone living on their own or cooking just for themselves.

Title: Excellent Cookbook!
Review: Bought as a gift as we already have a copy. I love how each recipe comes with suggested alternate ingredients or ways to further level up the recipe. It's a cookbook that meets you at your level and will continue to have options as your cooking capabilities grow.

Title: My New Favorite ATK Cookbook!
Review: As an owner of 30 ATK Cookbooks, I am obviously a fan. I resisted purchasing Cooking for One but picked it up on Prime Day and am I ever happy that I bought it. Besides really healthy recipes, what makes me love this book is how it can make you a very resourceful cook. Why? There are recipe suggestions to*Use it up*Get saucy*Level up*Make it easier*Make it heartier*Spice it up*Make it a meal*Shop from your pantry (includes freezer and fridge)*Make it Dairy Free*Make it Vegetarian*Make it Meatierâ¦ETCAs an ATK aficionado, the common thread for all their cookbooks is the first paragraph WHY THIS RECIPE WORKS. They explain their testing rationale and results, and having made hundreds of their recipes, the food is always delicious. I highly recommend this cookbook if you find yourself cooking for one, regardless of the reason.

Title: Game Changer!
Review: I've only made a couple of the recipes so far, but I LOVE this book. This is so much more than just a cookbook and I wish when I first started cooking. Not being someone who was born with any sort of innate ability to cook, swap ingredients, scale a recipe, or even figure out "what do I actually need in my pantry" I have spent my adult life wasting a LOT of money on food - either by ingredients going bad before I can use them up (or having no idea what else I can use them for with only the amount I have left), or leftovers going bad in the fridge because I just can't eat the same thing for five days in a row. I've improved in this time, and definitely learned some tricks, but this book is a gamechanger. Pantry recommendations. Ingredient swaps. Ways to use up the rest of the can of beans that you opened but you just didn't need all of it for yourself in one meal. They even mark which recipes make leftovers, and they specify that these are good leftovers. Those sad meals I used to make, that the first night tasted good but just weren't the same day two and I literally dreaded eating by day three? That won't happen with this book. I have read this cookbook, and I will continue to re-read and learn from it. Definitely worth the purchase!

Title: Really great for 1 or 2
Review: I really like that it tells you if there will be left overs and what you can use the extra ingredients for in other recipes. I found a lot of tasty recipes and have made about 12 of them so far.

Title: Too many recipes end up with leftovers.
Review: I have the Cooking for Two from the Test Kitchen and I used it a lot when my wife was alive. I thought Cooking for One would give me recipes designed for a single person. Unfortunately, most of the recipes are actually for two because with many of them you end up with leftovers. Not a fan.

Title: Senior Citizens Newly Adapting To A Single Life
Review: As a long time foodie that owns literally hundreds of cookbooks my friends seriously questioned why I spent money on âanother cookbookâ. My reasoning was that Iâve learned over a couple of decades that I can totally trust ATK and/or Christofer Kimballâs recipes and I was tired of wasting food and/or grabbing unhealthy fast food after trying unsuccessfully to adjust to a single person home after almost 40 years. I just thought that if this book didnât provide the information I was looking for I would return it, something I donât believe Iâve ever done before but based upon the reviews I kept that option in the back of my mind. My book arrived yesterday afternoon, even with a busy schedule today I had sufficient time to read the text and visually scan the recipes. My first impression was that I would cook, and almost certainly enjoy, the vast majority of the recipes and although a few of the introductory main dish recipes might seem obvious to accomplished cooks (as I consider myself) I found the switch out options made those recipes worthwhile. Maybe the most important reason that I decided to keep this book is because the recipes are quite easy, proportioned for one person (sometimes having extras for the next dayâs lunch) and I already have most of the recipe ingredients stashed in my extremely small âpantryâ or in my freezer. I had pretty much given up cooking for myself but this book really excites me with recipes for one person that are delicious, not difficult to prepare and often significantly reduce pots, pans, utensils that need to be cleaned.

Review: Very interesting selection of mains and sides. I have prepared several meals using these recipes, and all have turned out well. Reducing quantities for a one-serving recipe is not easy, but this book is full of successful examples.

Review: There are some good recipes in this book, but by and large the claim that this is 'Cooking for One' is misleading. Many recipes (it felt like over half of them although I've not gone through and counted) state openly that they have leftovers - in other words they serve more than one. They won't tell you how many they actually do serve, though, so you can't scale the recipe accordingly, except by educated guesswork. And some of the recipes that do serve one are a little obvious - how to cook a steak, for example.Overall, this feels like a recipe book that I might dip into very occasionally, largely when I force myself to, but it's never going to be one of those books that I reach for time and time again to find something to make. It's just not that useful.

Review: This book (like ALL Americas Test Kitchen books) is essential for anyone to learn much more and change the way they cook. I was even more pleased than usual as I was really struggling with cooking just for myself. This is an amazing book as all the rules for cooking for 2-4 or more just dont apply to cooking for one. Thank you so much, ATK!!
