Title: My knives haven't been this sharp in a long time!!
Review: I was contemplating either buying a new set of knives or getting my current ones professionally cleaned. Both options are expensive! I didn't really know anything about electric sharpeners until I stumbled across this item.I can definitely say that this thing works really well! My go to butcher knife had gotten so dull that using it became a pain. After sharpening it with this device, it's REALLY sharp. It now slices through tomatoes and other food that it used to struggle with. I highly recommend!!

Title: Worried when I opened the box, but in the end it is money well spent!
Review: So I researched all the electric knife sharpening models from Chef's Choice and landed firmly on the Model 15XV. When I received and opened the Amazon delivery I was surprised to discover that it was packed in a generic brown box with nothing more than styrofoam end caps, a plastic cover, and a manual. It was very underwhelming, and my first thought was "did I receive a refurbished item"? My concerns grew more serious when I noticed that the sides of the unit, where all photos clearly showed the text "Model 15XV" was blank.. missing on my unit. I flipped it over and a plate from the manufacturer simply said "Model 15", along with other identifying elements, like the serial number. I was worried that my "great deal" was nothing more than a "bait and switch". So I called Chef's Choice customer service... and verified that the brown box packaging was because this was a factory-direct delivery, the missing "Model 15XV" print on the outside was part of the NEW design, and that my serial number matched their records of their Model 15XV. Legit item, great price! Then I read the manual (quick read), followed the instructions to the letter, and can say with great confidence that this was worth every penny. Ease of use is about as easy as you could ever expect this to be. It would be difficult to mess this up, and the guides do lock the blades into the perfect angle every pass. Speed: my knife set had not been sharpened in 2 years, and were originally 17-20 degree edges from the factory. So, just like the instructions point out, the first time you sharpen any knife on this machine, the first stage may take up to 20 passes per side (mine took 12 per side). But stage 2 and stage 3 were 3-pass-each-side stages just as the instructions suggested. And the finished edge is as good if not better than the factory edge. I assume now that my edges are ground to the 14 degree (not 15 as the model says) angle that this model is set up for, any future sharpening sessions will only require 3-4 per side passes on the first stage, as the instructions point out.100% recommended. I only wish I had purchase this 15 years ago. It really works. It is really simple. And the results pay for themselves immediately.

Title: Very servicable and not disappointing for the price
Review: I love the Chef's Choice products. At my main reisdence I have a top end one and it is simply fantastic. I use the finest steel German knives and it makes them as sharp as scalpels - I am maniac on knives and cooking. I bought this budget one for my second home. Its not as good at all as my orginal, but for the money - wow! If it your first outing wiht this type of sharpener you can do a lot worse with others. It is true to their performance and not up to my top end one - but for the money - BUY IT. You won't regret it.

Title: My Knives Are Better Than New
Review: Two days ago, my new Chef's Choice sharpener arrived.Yesterday, starting with some inexpensive and not-great knives that we take with us when we travel, I started sharpening (decided to practice on the cheap knives before working on my good German ones). Holy tomoly, even the cheapo knives cut paper now!The learning curve is not steep so long as you read and follow the instructions in the user's manual.I did notice that the 15XV gets hot after a few knives are fully sharpened. I don't know if this is peculiar to my sharpener, or if it's normal. Again, I've had the sharpener for three days, so I cannot attest to its longevity, but it did get a good review by America's Test Kitchen, and I'm sure that they give their sharpeners a workout. For years, I used a Chef's Choice Hybrid 250. Until recently, I thought that it was doing a decent job. Little did I know....

Review: Was looking for model 15xv, but turns out it is now just model 15. Works amazing. Have sharpened all my knives and those of a family member to RAZOR sharpness from completely dull (and changed the angle from 20 to 15 degrees). Probably close to 20 knives in all, including 2 serrated bread knives. Would buy again.Note: this little unit's motor can get quite hot after extended use (maybe 5+ knives from absolutely dull) all at once, but it never caused any issues with performance.

Review: I've dabbled with whetstones and other sharpening devices for years and never had as much success as with this handy little machine. Got my entire knife set razor sharp in under an hour and accidentally cut my finger washing my paring knife lol.

Review: I'm always on the lookout for a kitchen tool that will make sharpening easy for my wife and I. I decided to try this Chef'sChoice XV15 after reading several reviews. I tried it out on ten kitchen knives and two sizeable pocket knives, one of them Buck brand steel. In 20 minutes I had learned how to use the 3-stage system and sharpened all the knives. They pass my paper cutting test with an average slicing. To get better slivering of paper, I would have to go back to my old water stones. Good enough for fast sharpening of our kitchen knives, however. This machine is larger than I thought it would be and heavy. It is powered through a corded plug. It is quiet even while grinding the blades. It will do fine in our kitchen for as long as it lasts.
