Gold Medal Unbleached Bread Flour is unbleached and formulated from higher-protein wheat to produce exceptional bread results every time. Protein produces gluten, which gives the desired volume or chewiness required in recipes like bread and pizza crust. Gold Medal Unbleached Bread Flour absorbs greater quantities of water and has a more elastic dough-handling quality than all-purpose flour. It also produces better volume and crumb structure in bread, creating quality baked goods with sustained consistency. This multipurpose flour is sure to help you create high-quality baked goods for all occasions. Gold Medal has 135 years of baking success. We mill the flour that people rely on to make everything from family favorites to new and inspired creations. We put our best into everything we do — so you can too.

Title: Good flour but the bag is weak.
Review: 2nd order and this time the bag broke inside the Amazon box. The vacuum packed yeast package was fine but the bag on this flour is really, really delicate.

Title: Oh, the aroma of fresh bread!
Review: I hadn't put my old bread machine to much use for several years, but am so glad I started using this bread flour to get fresh bread again. I had forgotten how easily I could make cinnamon rolls, too. I experimented and rolled the dough in from both sides and made 24 small cinnamon rolls rather than 12 large. Amazing quality and I suspect I used regular flour in earlier attempts that made my bread a little disappointing, but now with this bread flour, I can get the job done with little effort.

Title: Versatile in many recipes
Review: I meant to purchase all purpose flour, but accidentally ordered bread flour instead. As it turned out, this flour worked beautifully in my grandmother's peanut butter chocolate chip cookie bars. Everyone loved it! The only caveat is that the bag is thin, and when it gets even slightly wet, will tear easily. Otherwise, this is a great product.

Title: Its like I wanted to Know what A Sour Apple didn't know about Candy
Review: The first time I opened the package I was delighted about the flour. The color presentation of the paper around the flour makes for an eye popping square. In addition, I thought the aroma of the flour was perfect. It was like it was just milled today. The delivery of the fine texture to the board was amazing. I mashed the flour to the countertop. It was great proof for the next day. The bread was kneed first. The rest was a simple as the rise making for a few cuts. The oven made the bread airy but not too hard. The time in the oven wasn't bad either. For example, I went to the store to buy a loaf. It didn't have a good presentation on the shelf. The bread also was too gummy. The bag was ripped a little but the stretch didn't let a whole show through. The cost was 3.99 for the cheapest bread. I made bread for pennies on the dollar. The best part it was that my wife made it, lol. I am writing this to tell you that the taste was as good as advertised. We had the bread for our communications class for understanding product delivery and marketing. The paper that I wrote got me an A so I really appreciated Gold Medal helping me with the class, hungry pains, and all the proper alignment of my belly. The amount of money paid for an online class never out weights a good flour. If I could only get rid of the wait time!

Title: Works but you don't really need it
Review: I bake bread about once a week. I've always used all-purpose flour when baking bread, on the advice of the King Arthur Flour website, which I refer to often. King Arthur sells all kinds of flour, including bread flour, but their recipes and articles generally tell you to use all-purpose flour even when baking bread. After years of using all-purpose flour (I use Gold Medal and King Arthur AP flour, and find them both to be excellent), I decided to try bread flour. My results were indistinguishable from AP flour. So yes, this flour works very well for baking bread. But King Arthur is right -- you can also bake bread using all-purpose flour, and it will turn out just as well.
