BLUEBERRY MUFFINS

Yields 8 muffins

1. Preheat the oven to 350°F. Line eight muffin wells in a muffin tray with paper liners.

2. In a large bowl, whisk together the almond flour, flaxseed, granulated erythritol, coconut flour, baking soda, salt, and psyllium husk powder.

3. In a medium bowl, whisk together the eggs, cream, water, vinegar, vanilla, stevia glycerite, and lemon zest.

4. Add the wet ingredients to the dry and stir to combine, being careful not to overmix.

5. Pour the batter into the prepared muffin wells and sprinkle the blueberries on top.

6. Bake until a wooden skewer inserted into the center comes out clean, about 22–26 minutes.

Title: Loved this!
Review: Loved this book! There were a lot of recipes and a nice variety of them. I love how she incorporated the bread recipes with other recipes. For example, she has an English muffin recipe that she incorporated with a breakfast sandwich recipe. I would definitely recommend this book to anyone on a low carb/ low sugar diet!

Title: Great low carb pizza recipe
Review: This book does a good job of explaining alternative ingredients. I have made the almond flour / mozzarella based pizza several times, with excellent results. I shape the crust on lightly oiled baking paper, and place that directly on a preheated pizza oven. Pre-baking the crust alone at about 420 degrees for 5 minutes, then adding sauce and toppings and then back in the oven for about 8 minutes still on the baking paper, then place on heavy cookie sheet for cutting into slices, and back in on the paper on the sheet on the stone for 3-8 minutes with oven off, just to crisp up a bit more. I also add garlic powder and oregano to the flour mixture. So nice to have pizza again, while avoiding sugar and carbs!

Title: Tortillas more like crepes but pretty good!
Review: I liked the book as far as recipes go but agree with other buyers that the math in the carb courts are way off in some recipes. I’ve only made the English muffins and liked them. (Nothing like a good old real muffin!) I’ve started experimenting with additives to the recipe and am pleased. Stirred pumpkin spice in 2 of my last batch and really good. I also made recipe into 5 cakes with thinner form.Update: made the tortillas today (half recipe) and pretty good. I’d add more salt and they are tricky to flip. Luckily I had a large spatula! They really are more like crepes. So next time I may add sugar and use for crepes. I’m not sure they’d be strong enough for wrappers.🤷‍♀️🥴

Title: Excellent book
Review: I started Keto early December, but decided to mix it with the Mediterranean diet as I wanted to focus on lower, quality carbs in my diet but not so restrictive I'd have to worry about some of the negative affects of Keto dieting - especially for older women. I find the two complement each other quite well - I follow the Keto bread / baking / dessert recipes mostly and Mediterranean for everything else. This is a combination I can easily maintain and hardly ever want to stray as it is very satisfying, even in the sweet departments. Anyway, this book is perfect. There is probably only 2 recipes I wouldn't normally make, but really only because I never had them before. The variety of recipes are those we all know just Ketofied. The Tips, Keto Baking Basics, explanation of alternative ingredients used, etc. is a great beginning to this book for people. I love the Nutrition facts broken down per serving after every recipe. It helps you work with your Macros for the day. I especially love that every 3rd or so recipe has a photograph - good number of photos in this book. I love that, photos make a recipe / cook book. I even appreciate the quality of the paper in this book - like smooth photo paper. I would not hesitate to purchase more recipe books written by Faith / Lara.

Title: Finally! Decent Keto Baked Goods!
Review: I originally found this book at the library, and after trying a few of the recipes and loving the results, I decided to buy it! And the price to own this book is extremely reasonable. Beautiful pictures, easy instructions, I will recommend this book to everyone I know on Keto and to diabetics!

Title: Net Carbs?
Review: Is there some new way to get net carbs? Some of the recipes show the correct net carbs, if the math was done correctly, and others recipes do not match. What gives? Sandwich bread, cloud bread, sweet vanilla cream biscuits, press-in sweet crust, soft tortillas, banana nut quick bread, zucchini quick bread, pumpkin spice bread, basic muffins, corn bread muffins, blueberry muffins - the net carb count for the breads I have listed from the bread section of this book all appear to be off by at least 1 net carb and some, up to 12 net carbs! If the net carb formula (total carbs - fiber = net carbs) has changed, please let me know, because I am definitely confused when I look at these recipes! Please Advise! The recipes sound good, but I still need to pick up some ingredients. I will update my review after I bake some of the recipes.

Title: Very good!
Review: I made the sandwich bread. I failed. It was my fault left out the butter… BUT I made these two pizzas followed the dough part perfectly ( which is hard for me to do) made the white cheese. Garlic sauce is sooo good! Then I added veggies to it. The other I added my own touches. The crust made it all come together. I think you do need a clay stone to brown and crisp the crust just right.

I guess it's aimed at the American market because of measures ( cups and pounds), some of the ingredients such as half and half (which I had never heard of and had to look up) and recipes such as pumpkin pie. Yes pie in a bread book 😉 there is a US metric conversion chart in the back though

This is not the case, one chapter is bread with about 19 ‘bread’ recipes in total (pastry is not bread) with the rest of the book full of recipes you can eat with the bread you have already made and some desserts at the end. I will be returning this.
