Michelin-starred chef Josh Emett brings together more than 300 of the most important classic recipes by 150 of the world's most acclaimed chefs. Taken together, this is a compendium of the crème de la crème of blue ribbon cooking from the world's top restaurants in an elegantly designed volume that will stand up to use in the kitchen but be classically beautiful to behold - sure to delight any food lover or serious home cook.
Josh Emett, holder of three Michelin stars and best known for opening Gordon Ramsay's restaurant at the London Hotel in New York, has collected the most important classic recipes from the world's most acclaimed chefs to create a kind of Larousse Gastronomique of the 21st century. These are the best new classics that have emerged during the last 50 years from culinary stars.
Each recipe has been tested by Emett in his home kitchen, and he includes guidance and advice for the home cook-- discussing complexity, preparation, key elements, complements for planning a larger menu, and tips of the trade.
Featuring specially commissioned photographs, the book is organized into 12 easy-to-follow sections from basics (stocks, sauces, and dressings), to grains and vegetables, meats, seafood, baking, and more. Each section includes a dedicated introduction with key knowledge elements.

Title: EXCELLENT ( not for a beginner)
Review: I sent my dad a few recipes from this book and he was amazed( heâs a chef) then I ordered it and Iâve made about 8 recipes. They are easy to follow, a bit more time consuming but well worth the time and effort. I would say most of the recipes are intermediate and some more advanced. A-lot very easy. But Definitely not for someone just starting out. And not for someone who wants a meal in 20 min. The recipes are outstanding so far and need to tweak recipes. Some say weird hard to find ingredients but those ingredients are mostly Asian (a few recipes) only. For someone who likes to really cook, mostly fresh and somewhat elegant, youâll understand and know most of the ingredients like I did. I had to look up maybe 8 (Asian) ingredients and two or three headings of a recipe. High standard cooking. All will greatly impress the palate.

Review: This book takes your favorite childhood recipes and makes them into something a little more sophisticated, yet delicious just the same. Every recipe I've tried so far has been exceptional. Most of them are easy to replicate even for not-so-experienced home cooks. A wonderful discovery that will have a place among my favorite cookbooks.

Review: You can argue all day long whether these are the definitive versions of the dishes contained within this book. No doubt some are. But, in a way it's irrelevant as the versions of the dishes within these pages are so yummy and some so well known and attached to the chef\writer who created them, that what you have here is almost the definitive recipie book for the 20th(21st) century.Someone has said each should be cooked at least once - If you LOVE food and cooking I'll go along with that. In addition to this the presentation is first class. Beautiful photography, sublime print and binding this looks just as good on the coffee table as it does on the kitchen shelf.I bought this book as a bargain, I'd say it's worth it's RRP. It's even good for chef Bingo - a total who's who of food and food writing, they're (mostly) all here, the big chefs & the successful writers. Essential buy.

Review: This is well worth the buy!! Fantastic cookbook with such a variety of recipes. Love the degree of difficulty for each recipe, the majority of which are marked easy. The few moderates I've tried weren't even that taxing! & they've instilled confidence in me to try the recipes marked hard. If you're lucky the chef, Josh Emett, has already provided a video on his instagram to compliment using some of the recipes. Ingredient wise, it pulls from the everyday homecooks kitchen, so we haven't felt the pinch of having to splash out for expensive, use once, fancy ingredients. Key point for me was the back of the book, which provides a breakdown of measurements & a glossary of cooking terms, essential when you're a European cook. Thoroughly enjoy this book, great addition to any kitchen. My own skills have been pushed for the better & dinners have had a welcomed shake up.
