BRAIDED ONION BREAD
This savory bread packs an oniony punch and is the perfect companion to your next potluck. Don’t be intimidated by this technique; it’s not difficult at all if your dough is well prepared. You’ll enjoy a great sense of accomplishment and pride when the finished loaf emerges from the oven.
NO-KNEAD BAGUETTE
These baguettes are unlike traditional French baguettes. This version is soft and pillowy inside with a very open crumb, a golden, crispy crust, and the savory addition of olive oil and sea salt on top. Shaping the loaves can be a little tricky with this wet dough, but perfection is not the goal here- flavor is. You’ll want to make this bread over and over, so you’ll get plenty of practice with the technique.
SOURDOUGH BISCUITS
This recipe is easy and fun to make- the biscuits can even be baked in a dutch oven over coals in the great outdoors, pioneer-style. They have that characteristic flaky crust (enhanced when you use lard) and soft, tart insides.

Title: beginning bread baking
Review: Have you ever watched one of those baking shows (perhaps a British one in a tent) where you see a bunch of people making bread and wanted to try it for yourself? I mean, not the part where you have to bake in a tent out in a field, but getting your hands into some bread dough, kneading it until itâs smooth, and baking it until itâs crusty and delicious? Then Easy Homemade Bread is for you.It has more than 150 recipes and lots of tips throughout to bake the perfect loaf of bread at home. It starts with some tips about your ingredientsâwhat flour youâll want to buy and which oil to use. Then there are instructions for kneading, along with photos, to make sure you understand how to get this important step just right. Then itâs on to the recipes.Starting with Classic Breads, there is the Crusty White Bread, Basic Sandwich Bread, Old-Fashioned White Bread, Greek Country Bread, Whole Wheat Bread, Light Wheat Sandwich Bread, Oatmeal Sandwich Bread, and Farmerâs Bread, among others. These breads are perfect for sandwiches. Some are a little sweeter, for the best peanut butter and jelly, and others are crusty, for the grilled cheese sandwich you want to dunk in your soup. But if all that sees a little intimidating, head to the next chapter. There are also recipes for No-Knead Breads, so you can start off with something easier but still delicious, like the Basic No-Knead White Bread, Basic No-Knead Wheat Bread, No-Knead Rye Bread, No-Knead Cranberry Walnut Bread, No-Knead Cardamom-Cherry Bread, No-Knead Oat Raisin Bread, No-Knead Pumpkin Bread, No-Knead Baguette, and a 48-Hour No-Knead Ciabatta. These breads tend to use few ingredients, but they take a long time to rise, so youâll need to plan for that. Then itâs on to Sourdoughs, with its tangy flavor and high protein content. Itâs made with a sourdough starter, which you can either get from another baker, buy, or make yourself with some time and determination. There are some basic directions for working with starter, for feeding it and keeping it alive. But once you have the starter, you can make your own 72-Hour No-Knead Sourdough Bread, Sourdough Sandwich Bread, Sourdough Biscuits, Sourdough Hamburger Buns, Sourdough Blueberry Muffins, or Sourdough Hot Cross Buns. But this cookbook has more recipes than just breads. There is a chapter for Buns and Rolls, which includes Whole Grain Hamburger Buns, Hot Cross Buns, Crescent Rolls, Whole Wheat Honey Rolls, Quick Buttermilk Rolls, Pecan Caramel Rolls, Yorkshire Pudding, and Popovers. Then itâs all about the Quick Breads, where you can learn to bake Glazed Orange-Pecan Bread, Apple Quick Bread, Pumpkin Bread, Banana Nut Bread, Chocolate Zucchini Bread, and Herb and Cheese Bread. There are also chapters on Flatbreads and Crackers, Muffins and Scones, Biscuits and Cornbread, Boiled Breads (Bagels, Pretzels, and Dumplings), Doughnuts and Other Fried Breads, and for those baking for family or friends with Celiac Disease, Gluten-Free Breads.Easy Homemade Breads is a little over 200 pages, but it includes 150 recipes. Not every recipe comes with a photo, but many do, and the sheer number of recipes gives you a lot of bang for your buck with this one. Beginning bakers will find that this book can take them deep into intermediate baker territory, learning so much about bread doughs and techniques. I do wish that there were more photos, but I am impressed by the (pardon the pun) breadth and variety of recipes that are included here. This is a strong cookbook for breads and baked treats, from no-knead loaves to sourdoughs to basic sandwich breads to crackers, muffins, biscuits, scones, pretzels, doughnuts, and bagels.Egalleys for Easy Homemade Bread were provided by Voyageur Press through Edelweiss, with many thanks.

Title: Excellent Beginner's Book on Bread Baking
Review: I have been making homemade breads for my family for 25 years and I have learned a lot over the years as to what makes bread good versus what makes it great. Sometimes, simple and straightforward is better than complex, and this book is a case in point. The recipes in this book are mostly quick-rise formulas (excepting the chapter on sourdough), and the results are good enough for daily baking. This book is marketed as aimed toward beginners and that's a fair assessment. Many people are intimidated by the bread making process and think it's a hard and complex process. To be honest, it's actually simple (and in my experience it's simpler and easier than making a layer cake). The majority of the recipes in this book are formulated to bake in the same day, very often within 3-4 hours of starting the process. The initial chapter deals with bread basics - flour types and kneading, to be specific. After this, the rest of the book is dedicated to different bread types by chapter: Classic Breads, No-Knead Breads, Sourdough Breads, Buns & Rolls, Quick Breads, Flatbreads & Crackers, Muffins & Scones, Biscuits & Cornbread, Boiled Breads (Bagels, Pretzels, Dumplings), Doughnuts & Fried Breads, and finally Gluten Free Breads.Bread bakers who have been at it for a while expect formulas to have the ingredients measured by mass (weight) instead of by just volume. This book sticks to the volume measures which is not a problem for the beginner. It is easy enough to convert to mass measures if you're feeling so motivated. However, chances are that if you need the ingredients measured by mass then you're likely not a beginner and you're not in the intended audience. The formulas are straightforward and are easy to read and follow. The results are good and will encourage anyone just starting out. I wish I had had a resource like this when I started. This is a very good collection of bread formulas, intended for beginning bakers who want to make homemade breads and need a starting point. The formulas are easy to understand and follow and the results are satisfactory. Though I am an experienced baker I still find use in this book when I need to make bread on a shorter time scale.

Review: On a first quick browse this seems like a wonderful recipe book for bread lovers; a LOT of gorgeous photos throughout. Unfortunately, for my needs it was a disappointment.ðVery few classic, kneaded breads, only 12 out of 150 recipes in total. Not one rye bread for example, which was something I was looking forward to trying first. The remainder of the book is filled with other baked items including sweet rolls, donuts, crackers....these are obviously not bread recipes so the main title is misleading.Sending back for a refund.Geraldine Helen Hartman author of,"The Groovy Green Kitchen" cookbook seriesðððð
