About Kamikoto Kanpeki Knife Set
Over a thousand years of craftsmanship have inspired the final form of the Kamikoto Kanpeki Knife Set. Meticulously handcrafted, each blade features high-quality steel from Honshu, Japan – a steel with high corrosion resistance and durability. The Kanpeki Knife Set is rigorously quality tested to ensure that it meets the distinction and caliber of Kamikoto.
The Kamikoto Kanpeki Knife Set includes one vegetable knife, one slicing knife, and one utility knife to tackle the smaller, more intricate chores in the kitchen. Each knife is precision balanced and weighted for optimal form and long-lasting performance.
The Nakiri vegetable knife is 7 inches long, the slicing knife is 8.5 inches long, and the utility knife is 5 inches long. Each blade is carefully tapered on one side and hollow ground on the other. Both handle and blade are satin finished to a subtle, yet stunning luster. The Kamikoto Kanpeki Knife Set is presented in a natural-colored ash wood box for safe storage and keeping.
Yamamoto-san is a fourth-generation master knifesmith and Chairman of the Kamikoto 神箏 Advisory Board. He continues to work in the company founded by his great-great grandfather in 1908. A family of swordsmiths, Yamamoto-san ancestors made their living forging traditional katana blades. The family refined steel and made katana blades for the Japanese Navy. Yamamoto-san’s sees the knife industry in Niigata as one born of necessity and demand, and is optimistic that this ancient craft will stay alive and flourish for many generations to come.

Review: We are quite serious about our cooking at home--we cook a LOT of Korean food which means a ton of chopping and thin-cutting of meat and vegetables--but full disclosure in that we are not professional chefs. So I debated for awhile whether or not we should invest in high quality knives but now I can say I'm extremely happy with this purchase--its made my own cooking at home more fun, easier, and we're actually able to do more with these knives. (I'll leave the same review for the 7 in. chef's knife we also purchased since its general enough to cover both)One of things you should know before the purchase is that these are single blade knives. In case some are not familiar with this, I'll put it briefly: most regular knives are double bladed which means the right and left side of knife are sharpened. With Kamikoto knives only the right side is sharpened. This means that you have more control of the cut and can perform better for more sophisticated cuts. For example, sushi, so considering that I cook Asian cuisine more often, this takes me to another level of cooking. With these knives, I can actually make my own sashimi at home and also cut veggies more thinly so it opens up more possibilities for us. This can take a little getting used to, however. But once you know the techniques, EVERYTHING becomes easier.Also, when I held the Kamikoto knives for the first time, I was thinking that they weigh in my hand really well. Bigger knives weighed lighter than I expected and the smaller one was heavier than I expected. The grips are good too. Not too sticky, and also with wet hands I can grip them well.Especially I am a big fan of the vegetable knife (others are great too, of course). To me, it's a perfect size. Since it has a single blade, the vegetables don't stick to the back much.I'd better wrap up here otherwise I can write it on and on. If you are a serious home cook or want to explore more serious techniques that can make your life and cuisine easier, I would definitely recommend these knives. That's why we put it as a full 5-star--even though we're quite picky, we couldn't find anything wrong with these.

Review: We are really impressed with these knives. We had what we thought was a good set of knives. We were wrong. These are light, expertly crafted, and EXTREMELY sharp. Honestly, the biggest complaint I have is they might be too sharp for my wife to use.She started cutting an onion with the utility knife this morning and she was really impressed with how easily it handled simple kitchen tasks.They came in a very nice wooden case with a foam insert. We went ahead and got the magnetic knife block and the chef's knife based upon how impressed we were with the quality.
