Molybdenum for better sharpness. Made of high carbon premium 13 chrome, stainless steel, and molybdenum steel. This stainless steel knife is rust resistant and sharp using a high level of technology. A small knife for cutting meat from the bone for fine work. This is a Kanto style knife with ago, which is used for cutting birds and disassembling meat. Cannot be used on frozen or hard objects (such as bones).

Title: Very nice, sharp, hefty knife
Review: Very nice knife. It's very hefty for its size, which given its intended use, is a good thing. The handle is quite a bit bigger than the other Misono knives, but again, I think that's a positive for deboning. Quite sharp out of the box.

Title: Large and weighty in the hand, melts yardbird
Review: Crazy sharp. I’m going to have to learn to hone and sharpen single beveled knives now. It’s larger than the picture would have you believe, and it’s heavy. With some practice, you can almost wave it like a wand at whole chicken and scare them into an eight piece dinner. Cook it first, though, ‘k?!
