Title: Absolutely wonderful knife for processing sub-primeial cuts
Review: I have a Zwilling Twin Pro set of knives (which are different than Zwilling Twin Professional - look at the tang at the bolster), same price as Professional. I bought this one by accident, figured I'd try it before I returned it - but I'm not shipping it back!Holds an edge for over four "whole ribeyes" (approx 70 steaks) cuts cleanly and effortlessly, reduces need for additional trimming (better beef yield) than my shorter 8", backside edge is comfortable enough for that additional "push", very ergonomically well balanced - even very pretty - such an awesome tool!It's a pretty expensive knife, but definitely a "lifetime" knife, but if you sharpen all four grades of whetstone and a strop it will stay incredibly sharp and should last a couple of lifetimes!Zwilling Twin Knives (not the same as Zwilling - with a similar but single logo) might be the best knives I've ever used - but even though they're "dishwasher safe" the dishwasher discolors the rivets on the handle so it's a better idea to hand wash these - but that also gives you a better opportunity to see if you need to steel the edge prior to sharpening (after every wash).

Title: perfect for me!
Review: I'm a Henckles fan so was not surprised to find this chief knife to be more than adequate for my uses. I cook nightly and often chop foods of all textures. This knife retains it's edge, feels great in my hand, which is on the large side for a woman, and has a nice weight. I also like the 10" length, which is not common anymore.I'm glad to have a handle that will survive the use of the knife. My previous knife, a purchase made in Germany in 1969, was Solingen steel but the handle was wood. I only washed it by hand but, sadly, the handle finally deteriorated beyond repair. The blade is still good, despite having been used to attempt chopping a frozen pkg of vegetables! Won't do that again.!it was pricey but this knife will be passed on to my grandchildren and is worth every penny

Title: Welcome Home Baby!
Review: I received this knife for Christmas. I have a thing about good quality knives. I am not a chef; but, I love quality. This knife stole my heart. Her name is Bertha and she has her own resting place in my home. Until now, my favorite did not have a name. But she was excellent and I know she feels neglected these days. I feel a little guilty neglecting her. She is only 8 inches and that is fine. Personally, I prefer a big 10 inch blade when working on meat.Bertha is my desired 10 inches and has an edge sharp enough to almost shave. I love the weight of Bertha and I want to get her sisters sometime in the future. I also would like to purchase a wall-mount resting place for her and her sisters.I give this knife 5 stars for Edge, weight, grip and shape. She will last several lifetimes with a little care. You will not regret this purchase.

Title: Not all Henckels are equal.
Review: I replaced a 10" Henckels bought many years ago. The tip was broken but it was still a joy to work with. When the new one arrived I was surprised that the quality and feel were the same. I do have other "Henckels" that are not Pro S and they are definitely not in the same class. This knife is worth the money.

Title: This knife is huge!
Review: I now have a 6", 8" and 10" in this set. I don't reach for the 10" as often as the others, but it's great when you need it. The balance is very good, which surprised me because of the length. This isn't for everyone -- the smaller sizes are more useful -- but if you envision needing a longer knife or are rounding out your collection, this is a sharp, well balanced, and well made knife.

Title: Great knives.
Review: Never knew why I was missing by not having a 10” chefs knife. This thing is nice. I have had the Pro S set for 14 years now and they still look very good. They hold and edge well too.
