Get the dough rolling and perfect your pie-making skills to bake beautiful, foolproof versions of the corner bakery classics and French patisserie favorites--plus a host of whimsical, modern pies and tarts of all kinds like sky-high meringue pies, uniquely flavored fruit pies with intricate lattice-woven tops, and lush elegant tarts.
The Perfect Pie is the definitive guide to gorgeous pies and tarts. Maybe you want to master homespun pies that celebrate seasonal produce, or get creative with pastry-encased canvases for modern flavor profiles. No matter your pie preference, this collection will inspire you to bake. We've tested our way to the best techniques for building foolproof bakery-quality pies from the crust up: Learn how to create the flakiest pie crust from dough that's a breeze to roll. Become the expert in classics like Sweet Cherry Pie and also wow with pies that show off interesting flavors like Blueberry Earl Grey Pie (tea is infused into the filling and an adorning glaze) or Browned Butter Butternut Squash Pie with Sage. Make meringues that don't weep, or fruit filling for Deep-Dish Apple Pie that doesn't shrink under the tall-standing top crust. Discover the world of tarts like Chocolate-Hazelnut Raspberry Mousse Tart with looks that deceive its simplicity (we top crispy store-bought puff pastry with a quick mousse), sleek sesame brittle-decorated Chocolate-Tahini Tart, and rustic galettes.
When you're ready to up your game, learn to design intricate pie tops (think: braided edges for Pecan Pie; a herringbone lattice pattern for Ginger Plum Pie; creative cutouts for Apricot, Vanilla Bean, and Cardamom Pie; and candied peanut clusters for Peanut Butter and Concord Grape Pie), fashion pies big (slab pies for a crowd) and small (muffin tin pies, jar pies, and pie pops), and use ingredients you never thought to put in pie like husk cherries or rose water.

Title: Great Book!
Review: The recipes taste great! The only issues Iâve had are my own fault, such as forgetting to set a timer. The raspberry chiffon pie is a real favorite. So many delicious recipes for so many different occasions. I really like the section on individual and slab pies. Only downsides are that the recipes are very time consuming and do not have the time it takes to prepare listed on the recipe. Love this book though!

Title: In-depth, comprehensive and clear
Review: I have very much enjoyed the other two books in this series (Cake and Cookies) and this is proving to be just as helpful and enjoyable as the others. In addition to some fantastic recipes, the book provides an excellent grounding in the 'why' and 'how' for all sorts of pie techniques. Add to that excellent illustrations, and this is a book that deserves a spot on any bakers shelf regardless of their skill or experience level. All three volumes in this series are ones that I use almost every time I bake, and are also great to just read to learn about techniques. I would have loved to be able to get all three volumes in the series in a boxed set. Would have made a great gift item.Five solid stars -- an excellent cookbook.

Title: The Perfect Pie
Review: This is the perfect pie cookbook. There's such a nice variety of recipes, even ones rarely seen in other cookbooks. The layout is easy to follow while preparing the ingredients. I get a sense of what the final pie will look like. All of the pies look so appetizing in the photographs, as the pictures were so nicely done.

Title: excellent book for pie
Review: A great way to get into pies and the reasons for what they do and why is well laid out. That information is useful to apply to recipes you find online and I was happy to know that the technique I learned from this book helped make a recipe from elsewhere turn out flawlessly

Title: First Rate Pie Cookbook
Review: What a great cookbook. I've been cooking pies for years and have a number of pie cookbooks. This is one of the best. The recipes are broken into different sections, including classic standard pies, regional favorites and more adventurous pies as well at tarts and galettes. In the Upping Your Game chapter there are some really inventive more advanced recipes. The step by step instructions and illustrations are really helpful. I also appreciate the hints such as what can go wrong and how to avoid the problems.I've already made two of the pies and I am really looking forward to cooking my way through the book.
