Title: Another ATK Book of Can't-Fail Recipes
Review: American's Test Kitchen does it again, this time with healthy Mediterranean-inspired dishes that embrace fish, lean meats, and vegetables. By adapting recipes to the Instant Pot, ATK provides almost-foolproof and easy to prepare dishes. I love that they find a way to cook delicate fish and seafood without overcooking. Of course, they also include excellent, creative recipes for beans/legumes, meat, and vegetables. As with all ATK cookbooks, each recipe is prefaced by a "Why this recipe works" paragraph explaining both the evolution of the specific recipe and why ATK has chosen the techniques and ingredients. I love that the total time listed at the top of each recipe includes prep as well as cooking time. I often find myself beating the time by a little but never going over.Most recipes require minimal effort, although the total time is usually about an hour, mostly because it includes the time for the Instant Pot to get up to pressure. That gives me plenty of time to prepare a salad or other side dish if I want. My favorite recipes so far are Shrimp With Tomatoes and Warm Spices; Mussels With Fennel and Leeks; Beet and Watercress Salad with Orange and Dill; and Coucous with Chicken, Fennel, and Peppers. I can't wait for fresh fig season to make No-Stir Polenta with Arugula, Figs, and Blue Cheese. Even though the most of the recipes use readily available ingredients, each dish is unique and not found exactly elsewhere, making this cookbook worth the purchase.I love ATK cookbooks with rare exceptions. This one is one of the moderately-sized ones, not huge but not small, either. I have yet to make a so-so recipe from it.-- Debbie Lee Wesselmann

Title: Well written and illustrated
Review: Dry well written and illustrated book. Has some interesting and useful information about using the Instant Pot. Many of the recipes were a bit exotic for a beginner cook and called for some ingredients that werenât in our pantry. This would be an excellent resource for someone experienced with Mediterranean cooking and would like Instant Pot recipes.

Title: What are you looking for in a cookbook?
Review: I am experienced at mediterranean cooking and purchased this as a new instant pot owner looking to get over the learning curve quickly. This book has a nice 11 pgs introductory section on the nuts and bolts of using the appliance. Another 8 pgs of "DIY mediterranean pantry" recipes follow. The technique pages were the most valuable to me, with practical tips that kept me from getting back on Amazon to order some accessories I might not actually need.That said, the recipes that follow strike me as "just ok". They might be a little bit of a reach for home cooks who do not already have some of the fairly short list of seasonings common to this cuisine, but I did not find most of them to be especially interesting.My first dish was plain chickpeas which I was reluctant to try from the generalized chart in the "pantry" section, so found a YouTube video with a more detailed recipe. Similar instructions, except it told me what to do if using beans that have not been soaked. BTW, they tasted wonderful! I quickly made them into hummus, which I have made many times over more than 10 years, using lots of different recipes from both native and gourmet cooks. This book's version has what I find to be a very fussy step for hummus. Not that it is necessarily bad, but it probably would discourage many cooks in a hurry.All in all, my opinion is, this book fits in kind of an odd spot: good for beginning appliance technique, kind of mediocre for recipes that show off the delightful range of flavors that mediterranean cuisine has to offer.

Title: Ooops on page 28?
Review: ATK is my go to for all things related to cooking. I've always appreciated their scientific approach using chemical reactions that occur with cooking. In fact, I purchased ATK's MULTICOOKER PERFECITON, before getting my IP, based on their recommendations about how pressure cooking concentrates flavors. The IP has opened up a world of making restaurant quality Indian food and perfect braises.As for this particular cookbook, it is beautiful with creative recipes that can be prepared with ease. Most ingredients are found in mainstream supermarkets. If not, Amazon carries it.I'm sure I'm not the first person to notice the misprint on page 28 with the recipe for oxtails. The recipe calls for 1/4 cup of Aleppo pepper. I kept looking at it, thinking I misread it. But nope, it's right there. I hope it has been corrected in later editions of this awesome cookbook. I look at a recipe as a template anyway, based on what I have on hand and previous experience. BTW, with the large amount of collagen, oxtail are one of my favorite things to braiseThanks ATK ,for doing what you do.

Review: There are probably purists who will object to this book (the Instant Pot is not a standard appliance in Mediterranean households) but the recipes are worth making if you're in a hurry. I learnt a lot about what's possible with an Instant Pot from this book.Here are some of my favourite recipes:The pork sausage with white beans and mustard greens on page 140 is a cassoulet-lite that is colourful, full of flavour and sure to impress.The weeknight paella on page 56 is better than most restaurant paellass (I added olives and used a seafood mix instead of shrimp)The shrimp and asparagus risotto (page 110) is effortless and memorable.I've also cooked the creamy, carrot soup, french lentils with swiss chard, rigatoni with tomatoes and pancetta, orecchiette with broccoli and sausage and toasted orzo with shrimp and feta and they were all successful. I expect to try another five or six recipes and am optimistic that they'll also be well-received.
