Soy Butter Pan-Grilled Chicken from Maangchi's Big Book of Korean Cooking

In case you didn’t know, soy sauce and butter is an awesome combination! Soy sauce is salty and savory, butter nutty and rich. When the two are combined with grilled chicken, the resulting dish is juicy, savory, and rich tasting. For maximum flavor, I recommend you use thighs and drumsticks. I buy whole chicken legs and bone them myself.
Serve with rice, kimchi, Soybean Paste Dipping Sauce, and lettuce. Cut the chicken into bite-size pieces with scissors at the table. Enjoy as is or make ssam by wrapping a piece of meat in a lettuce leaf with some sauce, and rice if you wish.
DIRECTIONS
1. Combine the garlic, scallion, soy sauce, rice syrup, and black pepper in a bowl and mix well with a spoon to combine.
2. Add the chicken and mix well by hand to marinate. Cover and refrigerate for at least 30 minutes and up to several hours.
3. Prepare an outdoor grill or heat a cast-iron skillet or grill pan to medium-high heat. Using tongs, remove the chicken from the marinade and place it on the grill or in the pan, spreading it out so it cooks in an even layer. Cook for about 2 minutes, until the sauce sizzles and the bottom is nicely colored. Flip and cook for another 1-2 minutes. Scrape the marinade in the bowl onto the chicken.
4. Lower the heat to medium (or move the chicken to a cooler part of the grill) and cook for 5 to 6 minutes, flipping the meat from time to time and moving it around so that it doesn’t burn or overcook. To check to see if the chicken is fully cooked, insert a skewer or fork into it; if the juice runs clear, it’s fully cooked.
Ingredients 2 garlic cloves, minced 1 scallion, chopped 2 tablespoons soy sauce 2 tablespoons rice syrup or 1 tablespoon sugar ¼ teaspoon ground black pepper 1 pound chicken thighs and drumsticks, boned and scored 1 tablespoon unsalted butter
5. Using tongs or a fork, rub half of the butter all over the chicken and cook for another 30 seconds. Turn the chicken over, rub the remaining butter over the other side, and cook for another 30 seconds. Transfer to a plate and serve.

Title: Even better than I expected!!!
Review: What a gorgeous, user-friendly cookbook. Maangchiâs inviting warmth exudes from every page, and the recipes and tips are exceptional and easy to follow. Excellent photos of everything, including her shopping/ingredient guide (maybe my favorite part of the book). Her personal stories throughout were an especially nice touch and really bring each dish to life. I heartily recommend this to everyone I know. Thank you, Maangchi.

Title: Beloved by our child who usually only eats via their g-tube
Review: Our child has a lot of difficulty eating by mouth, and has been using a g-tube since they were just a baby. Something about this book sparks the interest in food and cooking in our kid. It has been a bridge for introducing foods and cooking that we've needed for years. Even though we've had the book now for years, our kid still looks through it and picks a dish they'd like to try. I can't praise this book enough!

Review: What a great way to write for someone venturing into korean cooking. A good balance of information, ingredient suggestions and personal stories. Even if your local supermarketâs âinternationalâ section is limited you can find subtiutes or items available online.If youâre looking for a great way to add to your culinary playbook and trying traditional korean cooking, this book hits home. The author shares her personal experiences and memories of recipes while making it easy considering her readerâs American cooking experience and enthusiasm.

Title: Actually pretty good forâ¦
Review: Actually this is pretty good for someone (like myself) whoâs a vegetarian aka vegan. She actually gives an ok amount of vegetable and soy dishes options.Of course I wouldnât recommend this to any vegan because majority of it is meat and fish, but if you are interested in well explained Korean foods and I would say simplified, then this may be right for you.She gives a decent amount of vegetable options though. I was mostly interested in the sauces and the marinates (the marinated meant for the meats, I would try it on seitan or jackfruit or tofu minus the fish sauce or whatever). I think some stuff I can actually make it into something great and vegan.Now I have not tried any of the recipes yet, but there are some recipes that I watched on YouTube thatâs in here and very well explained and detailed. I do make a vegan version of her kimchi and always Maangchiâs version never goes too crazy, or goes bad or is too salty. I do have another Korean recipe book, but itâs not as good or well explained as this one and itâs way more complicated!I will be experimenting with some of the vegetable recipes. Maybe do a Korean bbq with some homemade seitan. I do appreciate that she does consider us veg heads.There are a few things she could have left out but this is the âbig book of Korean cookingâ so why not add them in. I was not sure if this book would be useful to me, but Iâm pleasantly surprised (just have to ignore some of the animal meat parts).I already ordered some Perilla seeds to grow.-in the cover foto, the yellow and green labels are actually veg or vegan. The blue tags and pink I think I may be able to make plantbased. Also she does dedicate a section to Korean Buddhist temple, which happens to be vegan yay! The recipes aren't as exciting as some of the other recipes, but there are a few that I will try. How fun⦠(à¹>â¡<à¹)

Review: This cookbook is very helpful and informative with beautiful color photos that come with most (not all) but most of the recipes. I love how the photos and descriptions of key ingredients are in the front. Not only the spices but the packaged photos of ingredients. Very helpful and delicious recipes.

Title: I Love this book
Review: This book is easy to follow and filled with so many good looking (and sounding) options. I never have time to cook them all. I also don't entertain guests enough but this book is still really good. I also love that a good chunk of these recipes are also on her youtube page so I can use the youtube videos to double check that I'm doing it right (for the ones that have videos of course). She also has the recipes on her website as well. It usually gives a few substitution options or you can get rid of ingredients as well or make the amount smaller (like any other cooking). Please give this book a try and see if you like it yourself.

Review: I love Korean food and I love this book. I had a few recipes already under my belt, but they were all just online and ones I was already aware of. Getting this book has helped me to expand my repertoire of Korean cooking and is a great thing to look through if I'm ever needing some inspo for what I want to cook. There's great photos on every page and clear, easy to follow instructions. It has lunch box recommendations, classic Korean recipes, along with some more modern street food recipes. I love it.
