Chocolate Brownie Energy Bites
These are the only brownie bites I don’t feel guilty eating at four o’clock in the afternoon. The raisins add fiber while the cashews add protein, making this a satisfying and nutritious snack.
- 1 cup (145 g) raisins, packed
- 1 cup (120 g) cashews
- 1/4 cup (20 g) cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Pinch of cinnamon
Place raisins in a medium bowl and cover with hot water. Soak for 5 minutes to soften then drain. Add raisins and all remaining ingredients into a food processor and pulse until mixture is the consistency of sand. Remove blade from the unit. Using your hands, scoop out dough and form into balls on the palms of your hands.
Chill for 30 minutes and enjoy. Store in an airtight container in the fridge for up to 1 week.
Yield - 18 bites

Title: Love it!! Great snack ideas, especially for picky eaters.
Review: This cookbook is fantastic! My 8 yr old is a picky eater and found so many recipes here that she is excited to make and eat! Great photos and instructions and more user-friendly than getting recipes from the Internet.

Title: Highly recommend!!
Review: Delightful recipes! I highly recommend this book and author.I have 2 boys at home (6 and 3 currently) and they are starting to eat us out of house and home! So far, they have enjoyed all of the 10 or so recipes we've made from this book and they're excited to try more of them!I really appreciate how easy and straightforward she makes her recipes and how they taste great too! If you want proof, just ask my kids!

Title: I Like it!
Review: I really like both of the books by this author. I purchased her first book at our local health food store and immediately fell in love with it. I purchased this one on Amazon and have been pretty happy with it. It does seem like this book was a little rushed as the directions in some of the recipes isn't quite as detailed as her first book. The first book also has a ton of great tips especially for packing food on the go. This book doesn't have quite as many helpful hints. What I love about both of these books is the inspiration it has given me. I used to pack super boring lunches and now I am really thinking outside of the box and tapping into my creativity (who knew I even had any!!). I make almost every single breakfast, lunch, and dinner for my family of 4 and these books have been super helpful. Also, I love how durable these books are in the kitchen and with little ones who like to drag them around the house! The pictures are also great! Also, keep in mind that this author doesn't cook with kale and brussel sprouts for every snack. This is a snack book and *gasp* does have snack recipes that sometimes involve chocolate and other treats. So, if you are looking for a strictly veggie snack book, you are simply out of luck.

Title: Lots of great ideas for snacks that I would have never thought ...
Review: Lots of great ideas for snacks that I would have never thought of. My kids love looking through at the pictures and have picked things to try after seeing just the picture. I like that they have tried foods that they normally would not have tried because they were to ones to find the picture and to suggest making it.The items in here not only work as snacks, but I often find myself turning to this book when I need something to send in a lunchbox to go along with their meal. I have saved money making these snacks instead of buying pre-packaged foods full of preservatives added sugars and chemicals.

Title: We love Laura's recipes
Review: We love Laura's recipes! I felt like a giddy school girl to get my copy in the mail! They are kid tested and I know from following her blog and website- momables she puts a lot into each recipe. I love that I can make more healthy versions for my boys, and also appreciate all the time and effort into each recipe. So far the handful of recipes we've done have been a hit! (I've had to double them! But then again I have three boys who could eat half a pizza lol) The chart at the back of the book rocks! 🙂 Thanks again Laura!! 🙂

Title: I love this book
Review: I love this book. It has so many pictures and great ideas. I know that when I'm stuck and I feel like I'm feeding my kids the same thing over and over I'll get this book out and let my kids pick something they see that they want to make together.

Title: So much sugar! And a whole lot of greek yogert.
Review: I have been going back and forth on the raiting for this. Three might be to much but two seems a little harsh, 2.5? I had high hopes for this book. It seems like most of the recipes are just fruit, dipped or drizzled with some kind of sweetner either honey or chocolate, or Greek yogurt. If its not sugar it seems to be cream cheese. I was really hoping for more savory options. Although there is a recipe for hummus, and a few other savory options, ninja turtle nuggets made from chopped steamed broccoli with cheese, every kid friendly cook book has the mini English muffin (or bagel) pizzas. I mostly saw recipes for fruit, a couple granola bars, and cakes, one of the recipes was for watermelon wedges on a stick. Don't get me wrong everything looks delicious. (That coffee shop blueberry loaf, yes please! I also spent way to much money on this guilty pleasure.) If you have kids that don't want to see their veggies, or need a little coaching to eat something new, this book could be a slam dunk. Mine however are weird they really like veggies, so I dont have to hide them. I just wanted newer ways to serve them, so they don't get bored. ( they didn't get that from me, they got it from their dad.) fruit also is sweet enough, and shouldn't have more sugar added to it. (That's just my opinion.)it just seems like I looked at a bunch of recipes for desserts, not snacks. But then again a treat every now and then is okay. Although I am very thankful for the hummus recipe, and the fruit leathers and fruit snacks.(lets not forget the coffee shop blueberry cake, of 81) I am not sure that I would purchase this book again. If you are unsure if this is the book for you, see if you local library has a copy to borrow. If it seems like some of the recipes work for you then the money would be worth it.

Review: I have been following Laura Fuentes for a while now, and have yet to find a recipe that didn't turn out as promised! This book is no exception. I've only had it for a few days and I've already made the banana oatmeal muffins and snack bites. The recipes use ingredients that you likely have on hand, and do not require any special skills or equipment beyond a food processor or blender. That said, you wouldn't know it to taste the finished products. Highly recommended for anyone who is looking to get away from ready-made over-processed snacks for kids (and themselves).

Title:
Review: I absolutely love this book. It's the first cookbook I own that has really simple recipes using ingredients that I actually have on hand! There are recipes with only two ingredients. I love how many recipes in this book replaces the store bought crackers or fruit snacks, and they are really easy to make. I recommend this to all parents out there, because many of these recipes require very little time to prepare, and they tend to be healthier.

Review: Great ideas! I find myself reaching for it a few times a week. The best thing about this cookbook is that the recipes are simple enough that the kids they are for can usually help make them, which makes them even more exciting for them to eat.

Review: Although there are some interesting recipes many are far too basic like trail mix and raspberries stuffed with a white chocolate chips. The pictures are pretty but it is far from revolutionary
