Potjiekos has been part of South Africa’s culture for many centuries – since the days when food was cooked in a black cast-iron potjie pot hanging from a chain over the kitchen fire.
These cast-iron pots retained heat well and could be kept simmering over a few embers. Rounded, potbellied pots were used for cooking tender roasts and stews as they allowed steam to circulate instead of escape through the lid.
What sets potjiekos apart from these traditional cooking methods, is the fact that it is cooked outside. When the pot was moved from the kitchen hearth to a fire in the open bush, it became a potjie and part of the South African cooking heritage.
Potjiekos is uniquely South African, and is a friendly food, to be enjoyed by rich or poor, young and old, city-dwellers and country folk, needing only one’s imagination when it comes to selecting the ingredients. Title: Cooking in a different style.
Review: When I bought an old Best Duty #2, I had no idea the adventure in foods it would take me on. The book has a zillion recipes (no kidding) that are full of flavors and meats I have never used, but as an American scratch cook, opens up a new world of culinary delights for me. Weights and measures are a bit of a challenge, (metric) but I'm learning. The cooking style of layering foods in the pot according to their cooking time is pretty new to me. Starting with browning meats with herbs and spices adding onions and garlic is pretty normal cooking which you stir, but no stirring from then on when you start the layering with longest cooking time veg over the meat and you build up the layers, Add liquids and sauces as you build the layers, cover with the lid and over a light fire, let it cook low aand slow (while keeping an eye on necessary liquids in it.) for often several hours, depending on the recipe.. Potjiekos (the dinner in the pot) is often a social event with friends and family who will share in the meal when finished. This is the frugal food of common people in simpler times, but it is as good for you in these financially tight times as it was for them over their generations of survival. I am tickled to be able to slow down and enjoy the process that the potpie brings to my life no matter where I light the fire, at home, camping or at friends.

Title: Great book written for South Africans
Review: First off, it is a fabulous book and I highly recommend it. Well written and full of intriguing recipes. But the book was written for South Africans. Many of the terms and ingredients are words I am not familiar with. I had to use translation software to convert these words to English or their equivalent one by one, page by page before actually studying the recipes to get a feel for what their intended taste would be. The book should have had a glossary page for outsiders which would have saved me considerable time.Also, what are "mixed spices" that are referred to in many recipes? is it anything you want it to be or something specific in South Africa.Finally, a question for the author or other potjiekos fans. The potjie pot I have is quite large (#14). I don't intend to increase the volume of ingredients to accommodate the large pot since we are a small family. Can a potjie pot be too large to cook these recipes?Again, a great cookbook. Gets a special spot on my cookbook shelf.Aside, anybody know where "BY ACTION AFRICA" potjie pots were made? I've had it for many years and can't find any information on it. I gave up on searching. Seems like most out there are Falkirk or Best DutyThanks all, Tony

Title: Utterly detestable
Review: Don't judge Potjiekos by this ghastly book! It claims to have 250 recipes - more like 10 recipes repeated with minor variations 250 times. You do not have to read far to realize that this is NOT a carefully crafted recipe book. In the very first recipe - ingredients are presented in an entirely different order from which they are used in the instructions - not an unforgivable sin but definitely annoying. There are multiple ingredients in the list that are never used in the instructions. Every recipe in the book should have a final step "# add all the remaining ingredients not used thus far". An embarrassing exposition of an interesting and under-appreciated cuisine. For the record - I am South African. Another ding - Most of the recipes in the Sannie Smit book are copied directly here.

Review: Initially thought this might be more of a 'Coffee table' book but the paperback version works better in the kitchen and outdoors (why didn't I think of that earlier!). A very good variety of recipes across many different meats and fishes, and the surprise inclusion of some dessert and bread options. Well laid out and indexed. Will enjoy working our way through the many recipes.
