Ebelskivers are small Danish puffed pancakes made in a special multi-well pan.
Sweet and savory variations of this petite puff are appearing on restaurant menus and at farmer's markets across North America. The widespread availability of the pans at department and super stores has encouraged home cooks to join in the fun of this tasty treat. Originally only available at Williams-Sonoma stores, the pans are now a top selling item at many mass merchants and gourmet stores.
Ebelskivers, with their ideal shape and size, appeal to home cooks of all kinds for all occasions. This fantastic cookbook goes well beyond a collection of recipes, as it is an appliance/equipment handbook, too. The recipes range from simple to sophisticated, yet all are convenient and delicious treats, which range from classic ebelskivers, to newer breakfast options, to make-ahead appetizers, to snacks for the family. Even decadent desserts can be made in minutes all without turning on the oven.
Just a small sample of these sumptuous recipes include:
Cranberry Orange Ebelskivers, Buttery Beignet Puffs, Maple-Pecan Ebelskivers Smoked Salmon and Dill Puffs, Roasted Pepper Feta Puffs, Crab Cake Puffs Chocolate Ganache Ebelskivers, Praline Puffs, Browned Butter Ebelskivers Buckwheat Blini Puffs, Lamington Puffs, Spanakopita Puffs, Linzer Puffs.
The 150 recipes deliver inspired flavor combinations in addition to vegan and gluten-free variations of the classic and simplified batters, both of which can be substituted for recipes throughout the collection. And the step-by-step photos of the ebelskiver techniques ensure a perfect result every time.
From the Publisher
RASPBERRY BLINTZ EBELSKIVERS
Delivering all of the flavor of cheese blintzes, but with a fraction of the time and effort, these portable, popable ebelskivers are small bites of bliss.
MAYAN CHOCOLATE PUFFS
Ready for a showstopper dessert? Look no further than these stylish puffs. Chocolate and spice may be a fashionable combination, but it is a trend backed up with centuries of Central American history.
PA JEON
Literally translated as “green onion pancakes,” pa jeon are a beloved Korean dish that is eaten as a snack or a full meal. Making them in an ebelskiver pan is a snap and results in a greater puff than when they’re made on a griddle or in a skillet, and plenty of crispy edges. Consider the vegetables in this dish (other than the green onions) entirely variable: the beauty of pa jeon is that it is perfect for using up bits and pieces of vegetables you already have on hand.

Title: One hell of a book and enjoyable as well.
Review: For those of us that are interested in this food, not only plenty of hints, but encouragement as well great recipes to try as well. I loved both the Viking folklore as well as likely history being it, and was most probable started as the author states regarding trading.Any one dealing with battle wouldn't use a dented shield and most likely that would be cut through. But both trading as well as the fact that many had the military protecting the expedition is coming to mind. I am thinking this came about because they worked up the ammunition and be it Asian or European, the cannon ball molds were already heated up, ready to use and they needed to be prepared to bug out fast. With studying international food, as well rugged camping, this would have been so great as if you master pancake making, this is an easy adaption to be economical to create wonders to stuff into them ingredients as well those flavors normally only savored when time and the environment is at hand.

Title: Reliable & tasty recipes
Review: I loved this book. I am not familiar with ebelskivers. I bought a pan for them and then this book online. Every recipe I have made from the book has turned out very well and delicious. If looking for very quick recipes this may not be the book for you. Quite a few have 2 or 3 steps. Though, if looking for a variety of recipes that turn out tasty I would go with this book. I also like that it does not take up a lot of shelf space. I keep going back to it to try new ebelskivers.

Title: Nice book for the novice.
Review: Great book on ebelskivers. Shows the novice how it is done. Only problem - it shows chocolate ebelskivers, but where is the recipe? I have successfully made several different recipes - now I am an ebelskiver expert. But I sure would like the recipe for the chocolate ones.

Title: Lots of yummy recipes
Review: My daughter has had an ebelskiver pan for several years, but was not having success with recipes she tried. She LOVES this cookbook. She has become and ebelskiver-making machine :). There are so many recipes in the book, not only for breakfast, but also appetizers, dinner and desserts. It not only has recipes, but provides solutions to common concerns. If someone wants to learn to make ebelskivers, this is the perfect book to get them started.

Title: Great tips!
Review: Thank you Camilla for all the fantastic recipes. The hardest part is trying to pick one to make. I can't even pick a section to start with, they all sound so yummy!Love the introduction. The tips are fantastic, too, providing lots of learning and variations. I'm thinking of going gluten free so I'll be trying all of the other flours I can find and hoping they come out good.

Review: Though this author writes a number of commercial cookbooks on a wide range of foods, this book is far from just a template or formula. I am from a Danish heritage and know ebelskiver well. The clear and intelligent instructions and basic information in the first part of the book set you up with a good understanding and technique to handle the following recipes and make this European favorite very accessible. The creative recipes brought new life to an old favorite, and I am having fun trying the recipes out and sharing them with many of my Danish friends and family. A reasonable price for the usage I will get out this item.

Review: This book is full of nice ebelskiver's recipes. I didn't try any of them yet because received an ebelskiver pan just some days ago. I tried my first batch of this delicious meal using original pan's recipe. I definitely will use this book's recipes some time soon. I never made ebelskivers before, and this is my first experience. My whole family was very impressed how yummy they are.
