Apple Pie Filling
Makes one (9 to 13-inch/23 to 33-cm) pie
Instructions:
Thinly slice the apples into flat slices so the filling can be made smooth under the top crust. Place the apple slices in a large bowl and sprinkle the lemon juice over them if they are very sweet or if you need to keep them awhile before using. The juice will add tartness and also keep the apples from turning brown.
Add the flour, brown sugar, cinnamon, nutmeg, and allspice. Mix all the ingredients with your hands or use a large salad spoon and fork. It’s important that all of the apple slices be coated evenly with the flour, sugar, and spices.
Pour or spoon the apple mixture into a prepared pie shell and scatter small bits of butter over the surface. Alternatively, you can melt the butter and drizzle it over the top of the apples. Proceed with your top crust, decoration, and baking as directed.
For a pleasant variation, add 2 tablespoons (30 ml) of Calvados to the apple mixture before putting it in the crust.

Title: Excellent Book
Review: While I'm not a fan of the crust recipes, which is probably my fault. I have been able to use my own to make pies that look like they belong in a high end bakery. The ideas are endless and not difficult at all. The author was thorough in her explanations and the book was very inspiring.

Review: What a terrific book. The author shows you how to make some lovely and creative pieces of edible art. Not only are there step-by-step instructions, there are also templates that you can copy in the back of the book. The designs fire your imagination where after duplicationg the pies shown in the book, you can go off and explore new possibilities on your own.I can't wait to try out freeze dried powdered blueberries to color dough. There are so many available flavors & colors like mulberry, strawberry, even beets! Recently, I've seen recipes turning sliced root vegetables & fruit into roses for pies & tarts. Why not use these freeze dried powdered fruits & vege's to add color to tint & color these and even pastry cut-outs instead of gel food colorings. It's worth a shot, wish me luck. I'm hoping to add color and flavor to potato roses, etc...Would I give this book as a gift? Yes, there's always a cook in your life that would love new and proven ideas for a special dinner, pot-luck, or even a gift for your local police or fire department for the holidays. Most people forget our 1st responders over the holidays. Or even just to make your family smile when they see it, just before they demolish it. In my opinion, the book was a good investment for an addition to my cookbook collection.

Title: For Advanced Pie Baker
Review: It really is a beautifully photographed book with amazing pie crust designs. Somewhat intimidating but I definitely will be planning to try a few of these designs. I haven't tried their recipe for the pie crust. I like my own recipe so I plan on comparing the two. I don't want to sacrifice taste and flaky texture for an intricate design with a tough crust. So, I will get back to you when I have the opportunity to experiment.
