Cooking with a Dutch Oven

At least three times a week in our kitchens, something is either stewing, braising, simmering, or roasting in the Dutch oven. A pot of soup on the stove, slowly simmering, was always a welcome-home treat after school.

Baked Spiced Lamb Shanks

The spices give a nice flavor to the lamb and make it less gamey tasting. We love this dish served with Israeli couscous and a tzatziki sauce on the side. The lamb just falls off the bone.

Lemongrass Chicken Pho

We have many pho restaurants in the Northwest. Steaming hot bowls of this delicious Vietnamese soup are the perfect thing for a rainy day. Make a batch at home to enjoy with your family.

Maple-Glazed Roasted Root Vegetables

These vegetables are wonderful roasted together. Each has its own characteristic taste and texture. The spiciness with the sweetness keeps you coming back for more. Even the kids will want seconds!

Roasted Chicken with Figs, Olives, and Onions

We love the flavor of this chicken dish. The saltiness of the olives complements the sweetness of the figs. It’s always fun to see which member of the family likes which part of the chicken. The kids almost always want the drumsticks.

Bonnie’s Fish Stew

The fresh basil adds just the right flavor to this Northwest fish stew. It’s a wonderful summer dish served with melon and prosciutto. Our thanks to Bonnie for sharing this delicious recipe with us.

Beignets

Beignets are traditionally made with a choux pastry and deep-fried until golden brown. They are then doused with confectioners’ sugar and devoured with a cafe au lait. Kids love these with fresh strawberry jam or orange honey butter.

Title: The Dutch Oven Cookbook 2014 edition
Review: This is a review of the 2014 edition of The Dutch Oven Cookbook. I borrowed the 2006 version and wanted to purchase my own copy. I discovered there was a new printing. I wondered if the recipes were the same, but I couldn't find any information about that in any of the reviews. So I thought I would provide that information in case anyone else was wondering the same thing. The 2006 edition has the pears on the cover. The 2014 edition has a red enamel dutch oven on the cover. There are a few differences. In the Soups, Chiles and Chowders section, Pasta Fagioli Soup was removed, and replaced with Chicken Posole Soup. The other recipes are all there. Some have been reworked a bit, like Dutch Oven Scrambled Eggs is now Dutch Oven Eggs with Pancetta and Kale. A few others have slight changes in the name of the recipe, but the recipe is unchanged. There are more pictures in the new one, which is not necessarily better. Sometimes imagination is better than the picture! One other thing I wanted to mention is the size of the book itself. The 2014 book is smaller is size than the 2006 version. 2006 is 9 1/4 x 7 1/4. 2014 is 8 3/4 x 7 1/4. Not much, but enough to make it seem small. 2014 has more pages, 163 v. 147 for 2006. The book has some very nice recipes in it. Definitely worth the money to purchase. My own personal preference would be the 2006 first edition. It's plain, but I like it. This is still a good purchase though, and I enjoy the recipes.

Title: Excellent Quality
Review: Wonderful cookbook with lots of tasty recipes (I've tried 5 in the two weeks I've had it (the dumplings in the Beef Stew With Parsley Dumplings is sublime!) and every recipe has been delicious and well written. The Smoked Sausage, Chicken & Shrimp Gumbo is the BEST gumbo we've had to date and I've already received requests to make it again. The index is well organized, the photos are great (wish there were more photos) and the ingredients are typical pantry foods which I appreciate. Overall a fabulous find for the fancy new Dutch oven Santa Claus gave me! A++++

Title: Good cookbook, not great
Review: Good cookbook, not great. Limited. I find myself wishing I had more recipes or types of cooking discussed in this cookbook. This one specializes in stews and related items. The advantage for a newbie like me to the dutch oven is that times are given, so I can extrapolate to other recipes available elsewhere. So even if you find a, for example, crock-pot or other recipe, you can make it in a dutch oven with the right time and different ingredients.Bottom line: OK cookbook, well laid out, enthusiastic about itself. Good guidance for the limited number of items provided, but only scratching the surface of what a dutch oven can do. Online, probably better recipes available but this is a reasonable starter cookbook for those new to dutch ovens.

Title: A perfect dutch oven starter book
Review: I bought dutch ovens for all three of my daughters for Christmas this year. They all like to cook ,especially soups, crock-pot and 1 dish foods so I thought the dutch oven would be the perfect gift. I was thankful to find a dutch oven cookbook that had the basics of "how to" select, take care of and cook with a dutch oven. It also has lots of information of the basics of cooking with a dutch oven. All my girls are wonderful cooks but unfamiliar with the dutch oven. I gave them their dutch ovens and dutch oven cookbooks at Thanksgiving since they all cook from scratch regularly and have much holiday cooking to do I thought they could use it early. So far I have gotten rave reviews from the girls on their dutch ovens and the cookbook. They may alter some of the cookbook recipes to their own likings but really like the good information it has. It is their "go to" book for their dutch oven. To those complaining about the edit issues, look beyond them and look at the great information and recipes it provides. To the authors: Thanks ladies for taking the time to write such a helpful cookbook.

Review: This is an inspiring book and has me using my Le Creuset French ovens more frequently. Love the smothered chicken recipe p. 94. After sautéing the mushrooms, I softened the onions with 2 minced garlic cloves. Great tips, sources, and recipes.

Review: Brilliant product for a fraction of the price of a Le Crusiete. Heats evenly and is very heavy as it should be. It can be used in the oven or on top of the hob, it's enamel interior makes cleaning a doddle. For 50 Quid, what's not to like.
