Title: Simple and delicious recipes for every day meals and special occasions
Review: This is a wonderful cookbook that features delicious recipes drawn from a wide repertoire of French culinary traditions and presents them in an easy to follow format.I love the way recipes are presented. Each start with a short introduction explaining what the dish is about and why it's worth making. The list of ingredients is clearly laid out and the "mise en place" section briefly spells out some pre-requisites needed before tackling the main preparation steps.The author strives to keep things as simple as possible and optimizes for the best effort-to-reward ratio. This style of cooking suits me very well, as I enjoy preparing dishes that pack a punch in terms of flavor and texture while trying to steer clear from overly long / complex preparation methods.Most recipes fit on one page, and are accompanied by mouth-watering photos. The format of the book compact yet sturdy, making it ideal for using it on the kitchen counter.As a French expat who's been living abroad for 20 years, it's been a pleasure re-discovering the tastes of my home country through Stephane's recipes (and his awesome YouTube channel). Title: Sophisticated French Cusine made easy!!!
Review: I received Chef Stéphane Nguyen and his wife Kate Blenkiron’s new 224 page cookbook “French Cooking Academy: 100 Essential recipes for the Home Cook” yesterday and I must say, I am VERY impressed!I have known Stéphane for a few years now, having met through his Instagram and YouTube channel “French Cooking Academy” where he teaches the art of French cuisine. And just as in his videos, the recipes in this book are very easy to follow and they produce incredible results!The book is full recipes with simple instructions for what look like should be very complex dishes. Ingredient lists are not long and consist mostly of things home cooks will already have on hand or are very easily obtained.Each recipe starts with a brief history and explanation of the dish, then provides the list of ingredients needed and the instructions to make it and there is a small, “mise en place” paragraph of personal notes and tips from Chef Stéphane. And each recipe has a FULL PAGE COLOR PHOTOGRAPH to go with it!As a pastry chef, I of course immediately opened to the back of the book first to check out the desserts and I am impressed! The desserts Stéphane offers recipes for range from the simple to the more complex, but even the “complex” looking recipes are presented in a very easy-to-do and simple manner. It will be easy to impress if you make any of these desserts!When I saw that Stéphane included a rice pudding recipe I knew I had to try it first. I love rice pudding and I wanted to see if this was going to be any different than the rice pudding I usually make. It was. And it is a winner! His version is as easy as any rice pudding can be but his “tweaks” to the recipe turn it into a very sophisticated pudding – one good enough to serve to friends who are over just hanging out or at the end of a classy dinner party where you’ve served other dishes made from this book.Stéphane’s book will hold a place of honor on my culinary bookshelf – if it ever makes its way there from my kitchen where I will be using it quite often!I highly recommend this book to any aspiring home cook who wants to try their hand at French cuisine. Stéphane makes it easy! Using the recipes in his book will allow you to impress your family and friends and make them think you have been studying the art of French cuisine at the finest culinary schools.Congratulations Stéphane and Kate on an excellent cookbook!

Title: Easy To Use Techniques That Make All the Difference
Review: I discovered the author on YouTube. After enjoying the videos I purchased the book which I have been using for a month now. I love that I can pull it off the shelf to find ideas for the proteins in my fridge. You will need a food scale especially if you are in the states. The book has photos for almost everything in it so you will know how everything should look when completed. There are so many basic techniques that I have learned from making sauces for meats, browning flour and more it’s hard to get excited about eating out at a restaurant now. It’s helpful for taking healthy foods and making them delicious not to mention the rich flavors leave one feeling full with less. The recipes and techniques are easy to adjust/ alter as desired or need w/what is on hand too. I hope the author releases more books! This is one of the few cook books I use regularly.

Review: The French Cooking Academy is an online cooking school. I took several of their courses and learned a lot. The instructor, Stephane Nguyen, put together his first cookbook that arrived last week with 100 recipes for delicious French dishes. I like the book and the meals I’ve already made from it.The book is organized into four parts. The first part has recipes and directions for the various things you need for the later recipes – stocks, salad dressings, sauces, and pastry staples. The second part covers starters with recipes for salads, soups, appetizers, and small bites. Thirty-six recipes for main dishes are in the third part. There are recipes for beef, lamb, seafood main courses followed by classic and regional side dishes. The last section “Treats, Tarts, and Deserts to Please Everyone” needs no further explanation.The recipes are easy to follow and do not require a long list of ingredients or difficult to source items. The directions are easy to follow. Measurements are given in imperial and metric units. There are numerous cooking tips included in the recipes, such as to remove the breasts from a chicken stew 10-minutes before the other parts because they cook faster. Serving suggestions and variations are included.The photographs by Kate Blenkiron are mouth-watering.If you want to learn about French cooking or just want to try some new tastes, this is a good place to start.

Review: So happy to receive my copy of this book today!.. Such a great selection of French dishes that look so retro and authentic. I can’t wait to cook from this book!.. I’ll definitely be starting with the Greek style mushrooms 😘and moving on to the chicken chasseur straight after that.. I always want to learn more French and how wonderful to be learning from Stephane who I know from ‘The Chefs Line’ and who has since grown the @frenchcookacademy to have taught thousands of people how to cook authentic French cooking!
