Review: Dear Reader,I wanted to share my favorite recipe with you, which I have attached as a photo with the review:Pictured above is the âPotato and Cheese Soup,â which is the best potato soup recipe Iâve ever tasted. I highly recommend this soup. I have listed several changes to encourage you to try these recipes and make them your own.I substituted almond milk in place of milk, Yukon Gold in place of Idaho potatoes (Yukonâs are smaller, therefore you have to use more), doubled the amount of cheese and chives (I couldnât find leeks so I used chives), simmered the soup for an extra 15 minutes to allow the potatoes to fully soften, and added a generous amount of paprika.Also of note is the beautiful artwork! I love the old fashioned illustrations and charming style of this cookbook.I hope this collection of recipes will be a blessing to you and your family as it has been to mine! May The Lord Jesus Christ bless you and keep you always.

Title: Seasonal, simple recipes
Review: I was looking for a cook book for soup that was simple and seasonal. This is the perfect cookbook for seasonal soup as it is split into months, with a number of soups in each month. The recipes are simple (some extremely so) and I love reading about the little historical tidbits about where the soup is eaten or how soups became a staple in so many communities.The 12 months are seasonal for the northern hemisphere, and are based on French cooking. Many of the recipes are meatless, but I have added meat to some of them to make them a full meal. My favorite is the bean and broccoli rabe soup (I sometimes add pre-cooked cut up chicken sausages to it). I am not a good cook, nor do I enjoy to cook, but these recipes are simple enough for me to follow. A few have been not to my taste. I enjoy trying 1-2 recipes a month.

Title: Such a wonderful book!
Review: I am still very much a beginning cook, so I try to find cookbooks that are not too intimidating in their scope. This book was such a great introduction to soups for me!These are all very simple soups and none call for many ingredients. Quite a few of the soups are even vegetarian. The soups that I have tried have all been plenty filling for me; however, the might not be hearty enough to stand alone as a meal. The Pasta and Lentil Soup is especially good!Only one recipe struck me a truly unusual; that was the recipe for Beer Soup. Other than that, all of the recipes are ones that I can see myself making at some point in time.I do wish that there were a least a few photographs in the book, but that is just a minor complaint.This book is definitely worth a look!

Title: Love this cookbook!
Review: I am a soup lover. These soups are wonderfully flavorful, with minimal ingredients that are easy to find. It contains a recipe that an old friend made large vats of only at Christmas time. The Caldo Gallego. It is so good! I was thrilled to find this recipe similar to what my friend made! If you like simple soups, this book is for you.My only complaint with this Amazon order is the stated delivery date of Saturday, Oct. 28...it was in my mailbox Oct. 31st. Someone isn't telling the truth.

Title: Soup by Season
Review: A book of vegetable-based soups (but neither vegan nor vegetarian.) From a Benedictine monk at a monastery in LaGrange, New York, these soups are simple but very satisfying meal starters or entire dinners.I made the Portuguese Kale soup which allows you to choose whether to put in sausage or not. The soup is based on tomato, white beans and kale. I did add sausage and some green part of leek and it was really good. There are many other soups that looks excellent; a bouillabaisse, barley soup and borscht to name a few.The soups are organized by season so you can choose to make pumpkin (poitiron) soup in Fall and fresh pea soup or sorrel soup in Spring.

Title: Thin on substance, good for ideas
Review: This cookbook is more useful for a creative cook to use as a source of inspiration -- seasonal recipes to riff on -- than it is for anyone who likes to follow recipes to the letter. The soups here are, as given, just too spare, and are rather bland. They are also presented with so little instruction that if you don't know your way around a kitchen you will make mistakes. For instance, the Polish Barley Soup calls for chopped leeks and diced turnip. If you don't know how to slit open and clean leeks (which are always full of grit and soil), that most of the green part of the leek is too tough to use for sauté, or that turnips need to be peeled, you will be disappointed with your meal. But none of that basic instruction is offered. When I made that particular soup I had to add herbs (thyme, fresh bay leaf) and an acid (sherry vinegar and a squeeze of lemon) to lift what was a very flat flavor profile. The result was excellent, but the thing is the recipe did need to be tweaked.

Review: This is a great cookbook. I'm here to correct a couple of the top reviews.1. This book includes seasonal ingredients to New York, not France. If you are in Canadian provinces or American states near New York this will be seasonal for you, too.2. This cookbook does NOT rely on bouillon, as that "chef" who didn't even try any of the recipes stated. There is an appendix with recipes for all the stocks, sauces, and croutons mentioned in this book. You are encouraged to make your own meat, chicken or vegetable stock throughout the book, from the very beginning.I love this book. It offers many recipes from around the world. They are basic enough to tweak and make your own, even for a beginner. Don't be fooled by erroneous reviews, this is a good one.
