Santa Fe Rice Bowl

Ingredients

1 cup vegan sour cream2 tablespoons plain almond milk1 cup canned black beans, drained and rinsed1 cup canned corn kernels, drained1 teaspoon olive oil4 cups cooked brown rice3 medium Roma tomatoes, diced1 medium avocado, peeled, pitted, and dicedSeasoning: 1 teaspoon ground cumin; 1 teaspoon chili powder; ⅛ teaspoon cayenne pepper; ½ teaspoon salt

1. In a medium bowl, combine sour cream, almond milk, cumin, chili powder, cayenne pepper, and salt. Refrigerate covered until ready to use.

2. Preheat air fryer to 350°F for 3 minutes.

3. In a medium bowl, toss beans and corn with

olive oil. Place mixture in ungreased air fryer

basket and cook 5 minutes.

4. Distribute brown rice among 4 serving

bowls. Top with black bean and corn mixture,

tomatoes, and avocado. Drizzle sour

cream mixture over top of each bowl and

serve immediately.

These bowls have complete protein from the black beans and nutrients galore from the many spices and vegetables. Although this recipe calls for brown rice, you can use any grain already in your pantry.

Title: Super tasty and easy recipes
Review: I love this cookbook! Every recipe I have made so far has been tasty and easy like the cape cod potato chip crusted cod, and the chicken nuggets and the roasted carrots with sesame oil. I highly recommend getting this with your air fryer for eating gluten free. It really takes advantage of all the best parts of the air fryer

Title: why aren't they all gluten free?
Review: I wasn't happy to discover that there is a chapter for vegetarians. Many of the recipes seemed like they were the same as gf minus the meat. Nothing against vegetarians but that should be a separate cookbook. Pretty sure they aren't going to want all the meat recipes in the book.

Title: Excited to finally EAT!
Review: I am Celiac and I love this cookbook! It has some good recipes and not with to many ingredients. I cannot wait to try a recipe. I have bookmarked a bunch of pages! Celiac has taken a major toll on my health and having easy meals will make it a little easier...My only complaint is that it doesn't list the serving size and uses some instructions with the ingredients I have never heard of before. But, I guess I'll google.

Review: I was hoping to find more baking ideas, especially how to make GF bread since it's so expensive in stores. Most recipes call for some kind of GF bread or GF tortillas. But no GF Bread or tortillas recipes included.I would have liked more info on how to use an air fryer too. I guess I expected too much from this cookbook.It's ok but not really what I was looking for.

Review: Delivered promptly and without fuss. The book itself is very impressive with lots of good clear instructions, nice pictures and helpful hints of gluten free cooking in your air-fryer. It is a U.S. book though so everything is in Fahrenheit and ounces so be prepared with a handy convertor app if you are in other countries.

Review: Although there are a few good recipes in this book and it's well written. The thing I really don't like is ...... Buy gluten free bread , but gluten free burger buns ...buy gluten free bread crumbs, gluten free BBQ sauce ect...In the UK the gluten free bread in the supermarkets is awful in my opinion. Have you seen the 30 plus ingredients in them never mind the preservatives ect . Not my idea of a gluten free diet maybe someone else's .
