Title: My new favorite cookbook!
Review: When I started reading the Best Skillet Recipes, I was very excited about the "new" skillet techniques and couldn't wait to try a recipe. So far, I have made several skillet recipes and have loved every one of them! I think my favorite is the bonless turkey breasts with pan gravy. Mmmmm great! Even though I couldn't find the boneless turkey breasts with skin, I used skinless turkey tenderloins and cut the oven time a little shorter for their reduced size. Tender, juicy, delicious turkey with fabulous gravy was still the end result. The smothered pork chops were also a big hit along with the Chicken Teriyaki and Beef Straganoff. I think I will try the Chicken Pot Pie next, then the Thai Green Chicken Curry...I have a long list as they all sound so intriguing. I save these tryouts for the weekends as they are somewhat time consuming and messy to prepare...not really a weeknight option, but well worth the time and effort. I have also learned alot about skillets and have expanded my collection. I have a huge library of cookbooks but this book will be keeping my attention for quite awhile. I highly recommend it!

Title: This is a great cookbook for people with limited time and limited space.
Review: I've owned this book for less than a month and am already addicted to it.Not everyone has a large and well-equipped kitchen with several stovetop burners and a large selection of pots and pans. Not everyone has all day in which to prepare a meal.This cookbook satisfies both stumbling blocks.Most of the meals can be prepared in much less time than traditional recipes and with many needing only one pan means that cleanup is also quick and easy.I'm now retired so do have more time to cook than I did in the years in which I worked, however I also have other activities that sometimes take up a lot of my time and I still want to have a good home-cooked meal. (Not at all a fan of fast food.)Some of the recipes do take longer to prep and have a significant list of ingredients but the directions are clear and concise and easy to understand.I like that the book contains CI's ratings of various "quick" ingredients such as Supermarket Chicken Broth, Extra-Virgin Olive Oils and even Fish Sauce.Many of the recipes are down-to-earth plain foods but there are also recipes for more exotic dishes for the cook who wants to be a bit more adventuresome.I have particularly found this cookbook helpful when unexpected guests arrived and the weather was somewhat nasty and no one felt like going out to a restaurant. I was able to put together a lovely main dish (Chicken and Couscous with Fennel and Orange) for four people with very little effort.

Title: A typically OCD approach for culinary mavens
Review: If you're at all familiar with Cook's Illustrated magazine, you already know that this brand is known for excruciating (sometimes entertaining!) detail and a preference for line drawings over photography. As a once and former subscriber to the magazine, I found myself getting impatient with its let's-document-the-journey approach -- just tell me what worked and why! But the information CI writers provide is undeniably useful, and sometimes even I succumb. Hence my purchase of this book, which offers solid, evidence-based recommendations on types of skillets and skillet-cooking techniques. If the CI approach works for you (or your giftee), go for it. You won't be sorry.

Title: A bit of repeat if you own other books
Review: I own quite a few of cook books from Cook's Illustrated and there's a lot of repeats from other books. The recipes are good. We like the mini meatloaf, stir fries and pasta recipe and have made them several times. These are already in our other books so I'm not sure that we need this one in our library.

Title: For people who love to read cookbooks
Review: Last night I had a dinner party and 2 of the recipes from this book were on the menu - we had the Ziti with sausage as the pasta course and chicken saltimbocca as the main course.. One of my friends had come early to help me cook and catch up on life (and drink wine of course.) She was fascinated by the book and totally hooked after the meal. April 1 is her birthday and she BOLDLY said to me: "can you send me this book for my birthday?" My sister-in-law was at the table and also said - "I know I'm not until October but can you get me one too?" Too funny.Seriously, I have had the book for about 6 months and bought it because I am a fan of Cooks Illustrated Magazine. I have a reputation among friends and family for being a VERY good cook. I will credit the magazine and the America's Test Kitchen cookbooks(and my grandmother) for REALLY teaching me about cooking - If you like to read cookbooks, each of the recipes is preceded by a "story" about what they were trying to accomplish, what worked and didn't work, what ingredients the test staff liked, and what totally failed.. After using this book, I will never again buy a jar of pasta sauce - I have a case of whole tomatoes in my cupboard and with a little help from my fridge, I can make one better than ANYTHING you can get in a jar.This book and a good cast iron skillet will open up many culinary doors!enjoy!

Title: Excited To Try More
Review: It took some time for me to order this book because I was hung up on the price, but now I'm glad I "took the plunge". I've already tried several recipes and am excited to try more. There are so many recipe choices, this book is sure to satisfy many different tastes. I also appreciate the recommendations on cookware and utensils. Learning from those who have walked many more miles in the kitchen than I have has not only helped me learn more quickly and avoid the mistakes I may have made in trying to figure things out myself, but has also helped in saving money when I may have had to discard those mishaps.
