Title: A valuable resource for fine dining
Review: For those that wonder why anybody would spend $300, $500, or even $1000 per person to “eat out,” this book attempts to explain why people eagerly seek out those special places, even booking months in advance, or scheduling travel around securing those reservations.The author, a former high end restauranteur and general bon vivant, gives an insight to what constitutes true fine dining and where one will find the “best of the best.” While at times the book is somewhat of an editorial on restaurant critics, his opinions are quite valid. Especially valuable are his descriptions of the well known, but somewhat mysterious, Michelin, Gault&Millau, and Gayot guides, and how to interpret them.Sometimes people flock to these bastions of gastronomy without any understanding of why they exist and what makes them special, just because they are the “in spots.” Mr Larsen ignores that and focuses on the essence of why those temples of cooking are what they are. He demystifies “haute cuisine” but simultaneously shows the respect it deserves. He also discusses restaurants he’s visited and the history of fine dining.Any erudite “foodie” will learn from this text and by reading it will have a better understanding of what fine dining truly is.

Title: A unique culinary trip through dining at its highest level
Review: What got my attention on Mr Larsen’s PHD grade masterpiece was his personal background: a cook, a chef, an operator/owner of an extremely complicated jewel in Miami, a regional supervisor of a number of top floor private havens of personalized and top professional performers and then a guy that does the outrageously expensive diligence to deliver this piece of art.I’ve lived in France and have eaten the weekday business lunch at at 3 star restaurant in Montpelier as Larsen mentions and he’s right on.This is a sophisticated, well thought out and researched piece that deserves a look from both professional and beginner epicures.Have a glass handy, it’s a slow challenging read into what defines gastronomy, where it came from and what it literally, first hand, feels like.

Title: A must read for anyone interested in high end dining
Review: In the preface, the author states the book should raise the comfort level and knowledge for novices. I have dined at a dozen Michelin 3-star restaurants and found the book does easily meet these thresholds. The author also states that it should offer insight into the restaurant rating guides for the pros. Though I am no pro, the book does appear to accomplish that on a high level with in-depth and insightful analysis.Specific highlights for me in the book include the intellectual argument about a restaurant's cuisine at this level; the importance of interior design; European captain service; best food bloggers; top restaurant comparison charts of the top rating guides scores for the United States and France; historical milestone dates for fine dining from 100AD to present; favorite hotels when traveling; chauffeur services in Europe, and finally recommended fine dining books.For those with little or no experience of dining at Michelin 3 star restaurants and who have an interest in learning more, I would not hesitate to recommend this book.
