Title: Great book. Lots of interesting, easy vegetable recipes.
Review: This has become one of my most-used cookbooks (and I'm not a vegetarian). I wanted to serve more interesting side dishes than just plain blanched, steamed, or roasted vegetables, and this book has lots of them. From mango-and-jicama salad to fennel with pine nuts and raisins, I found lots of things to try, and liked all of them. It has a wide range of vegetables (celery root was a real find), and includes simple notes on purchasing and storing them. It's very easy to use, with the vegetables arranged alphabetically. No photos, which is fine with me. I liked it so much I gave a copy to a friend.

Title: A cookbook that never gets filed away
Review: This unique cookbook, organized by vegetable, is invaluable. I keep it on my counter so when I open the refrigerator to prepare a meal and find only radishes, mushrooms, and/or celery in the vegetable bin, I can turn to that vegetable and find a delicious way to prepare it. I consult it when I want to know how to store a vegetable. I consult it when I've found a new-to-me vegetable in a recipe and have no clue how to select one in the grocery store. I've found many recipes that have become favorites. I couldn't believe how delicious asparagus is roasted. And it's the same with mushrooms; roasting concentrates their flavor amazingly; you'll never think of plain button mushrooms as boring again. I've served them to guests for appetizers; they always love them. And who would think to braise radishes?? It's a GREAT way to use those radishes that have been in the fridge for too long. There are lots of gems in this cookbook. It's one of my TOP FIVE COOKBOOKS that sit out on the counter and get used again and again. No glossy photos, just plain good advice on every page.Update 2010: Believe it or not, seven years later I stand by this review. This book has never left the top of my kitchen counter and I turn to it regularly. I'm just sayin ... 🙂

Title: good reference book
Review: I like Jack Bishop ,love his taste testes. This book is like the encyclopedia of vegetables with someinteresting recipes and tips . I am glad to be introduced to some new vegetables and new ways ofcooking and maybe I get a little slimmer on the way . Jack gives good tips on buying , what to lookfor and the recipes are simple , which is the best for taste and health . He also gives suggestion onwhat to serve things with . The book itself looks clean and simple with some drawings and palegreen accents , like walking through a garden . I wish there was a drawing for boniato , calabaza, chayote and jicama ,but he describes it .There are no pictures , but some interesting prose .

Title: Great for CSA and Farmers Market fans
Review: I use this book at least once a week and have owned it for quite a few years. When I joined a CSA (Community Supported Agriculture) I started receiving veggies I had never cooked before. Turnips, Fava Beans, Beet Greens etc. I know regardless of what is in my box, this book will have a recipe for me. There will always be at least one recipe that I will have the ingredients on hand for as well. It also had some interesting ideas for old familiar veggies - I now roast my green beans with ginger and garlic quite often especially if they are a bit old. The recipes are usually pretty straight forward and end up tasty (although my kids still haven't warmed to chards and kales). There are some fancier recipes as well - usually a range for each vegetable listed. This may be my favorite / most used cook book out of my 6' or so of cook books.

Title: Vegetables Every Day - A bit disappointed
Review: I was looking for a good reference on vegetables to increase both variety and quantity that we eat daily. Learning how to pick and prepare different vegetables sounded perfect. Unfortunately, there was no preview of the contents online. When the book arrived, I was surprised that there are NO color photos of the vegetables at all. There are drawings (yes nice drawings) but all in the same green pencil color. In terms of judging quality of vegetables to get, actual photos would be a tremendous help. To rate the recipes, I looked at recipes for veggies that I already prepare. I noticed that the author is very into blanching. For example, I looked up Brussels Sprouts. My favorite recipe, which is so easy, is just a matter of cutting the sprouts in half and then roasting them with just a little olive oil and seasoning. Very easy, very fast. Yet not one recipe for brussels sprouts in the book mentioned roasting. A bit disappointing. I am keeping the book because it does have lots of good tips and easy recipes I plan to try.

Title: Greatest Vegetable Book!
Review: This is a great book on vegetables. I found it in the library when my husband decided to go vegetarian, and although I cook A LOT, I felt i needed to find more and different veggie recipes. I liked it so much, I bought it from Amazon. I love that it not only provides recipes but tells you all about the vegetable, how to cook it, clean it, store it, etc. The book is easy to read, cleanly written, and well laid out, with all the veggies in alphabetical order. The few recipes I've tried weren't all that tasty to me, but the book offers great starting points with which I can work--and YOU might like them! Highly recommend, especially if you're not familiar with a lot of veggies or how to cook them.

Review: I haven't yet tried any recipes from this book. I bought it in hopes of feeding my family more vegetables. My reasoning for this, as it probably is for most people who strive to eat more vegetables, is that vegetables are healthy. However, there isn't nutritional information (calories, fat, etc.) for the different recipes. This kind of defeats the purpose of the book, at least for me.
