Say “Goodbye” to Sad Salads

Gone are the days when salads were disappointing meals made with wilted lettuce and a few standard veggies. In Seriously Good Salads, Nicky Corbishley shares 75 of her favorite salads, all packed with fresh flavor, loaded with exciting toppings and covered with delectable dressings.

Salad lovers looking for some extra protein to accompany their veggies will drool over Chipotle Chicken Cobb Salad, Salmon Sushi Salad and Chorizo and Lima Bean Salad. Other favorites, like Cheddar, Apple and Walnut Salad, Thai-Style Slaw with Peanut Dressing and Moroccan Couscous Salad with Orange and Apricot, are piled high with yummy cheeses, grains, nuts and more to keep you feeling full and happy. Nicky even includes fantastic fruit-based salads, like Orange Salad with Pistachios and Pomegranate, and all the tasty salad dressing recipes you could possibly want.

With Nicky’s innovative flavor combinations and unique ingredients, it’s easier than ever to turn a boring side salad into a showstopper of a meal the whole family will enjoy.

Title: Lots of Great Salad and Dressing Ideas
Review: I get tired to eating the same salads all the time so I purchased this book for ideas. It has a lot of great ideas from simple basic salads to ones with more ingredients. It has vegetarian and meat/poultry salads, some with nuts, grains and seeds plus egg and cheese salads. It includes fruit salads plus ones with pasta, potatoes and rice. I also like that it includes salad dressings for the salad that you are making as well as some bonus dressing recipes. This book has lots of great ideas for the salad lover and the person whose not crazy about salads but eats them anyway. The pictures of the salads are beautiful and a plus to the book overall.

Title: The binding on this book is 5 stars, the rest is good too.
Review: First, let me tell you about the binding on this book. It is amazing. At first, I thought I thought the binding had broken. It had not. The binding on this cookbook is pure genius. It is made so that the book sits open and FLAT no matter what page you are on. I really want to know why all cookbooks are not made this way. You will not need to worry about losing your place with this cookbook. I love the variety of salad recipes. The pictures are incredible and I love the layout of this book. My only complaint is that a lot of these recipes require a fair number of ingredients that I don’t usually have on hand so I have to know specifically which recipe I want to make before I go to the store. Not many of the recipes can I make by looking through what I have and finding a recipe that happens to need no ingredients from the store. However, this is a cookbook after all and I respect that not all ingredients are going to be on hand. Another thing, as someone who likes salads and wants to do them more, I want them to be easy so I will put it together. A fair number of these recipes require as much work as putting together a full meal and I was hoping for more simplicity. Again, this is a cookbook and I understand the complexity of recipes and not all recipes can be quick and easy. The recipes themselves are great.

Title: Delicious (not necessarily quick) salads
Review: I bought this book 2 months ago and I've made 4 recipes - each one a delicious winner. I even made 1 salad twice as my husband and I liked it so much (bulgogi lettuce wraps). This is about seriously tasty salads – not quick and easy salads. Some recipes require a fair amount of ingredients – particularly for the dressings – you may not have everything in your pantry. We have tried a few of the asian flavored salads because we like those flavors. On the plus side, we have tried all sorts of new ingredients - Korean gochujang paste, Japanese mirin, etc that have taken us beyond the staples of dark/light soy, sesame oil, rice vinegar, ginger, fish sauce, hoison, etc. Our grocery store carries all of these but depending on where you live, you may have to order some ingredients online.Chapters are organized by meat & poultry, fish & seafood, cheese & egg, grains/nuts/seeds, starch-based salads (potatoes, pasta, rice, bread), and fruit-based salads.PROs• Delicious recipes. We've been eating more veggies and the results are really good. I was shocked to see one reviewer call the dressings bland.• Lovely pictures of each salad to inspire you• Lay flat binding so the book stays open/flat for every page• Coated pages so you can wipe splashes from the pages• You will discover some new ingredients to help make your dressings betterCONs• I would have liked a split by season: spring, summer, fall, winter so you can concentrate on "in season" ingredients. To me, this would have been more helpful than organizing by categories.• Because we only have 2 of us, and we want leftovers, we frequently need to double the dressing. This books assumes that you will dress the entire salad, take it to the table, and a family of 4 will finish in 1 meal. We often seem to come up a little short on dressing on the next day. Given that they're a little labor intensive to make, this can be a pain.CONs (if you're only interested in convenience)• This is about seriously tasty salads – not quick and easy salads.• You will chop• This book will take planning. Some recipes require a fair amount of ingredients – particularly for the dressings – you may not have everything in your pantry. Depending on where you live, you may have to order a few (certainly not the majority) online• Read the recipes before buying ingredients. Some recipes require marinating meat – I’d highly suggest a nifty gadget called an “instant marinator” if you'd like to speed up the process

Title: Absolutely LOVE this book!
Review: I have own this book for a month or so and have made about 10 of the recipes in this book so far! 9/10 have been the best salads I’ve ever made at home. I have A LOT of cookbooks at home, but this book does a great job balancing the healthy & tasty parts of any meal.I agree with other reviews- you’ll likely need to run to the store to get some ingredients and the recipes are a little time consuming for just a side salad. However, I think the salads in this book are meant to be a meal. It’s perfect for those who love to meal prep. 2 salads/ week- plan ahead and it’s actually takes way less time to make a salad than it is to make an actual meal. This author did an amazing job. The salads are restaurant grade (and I live in the heart of Chicago, surrounded by amazing restaurants). I appreciate the diversity in salad recipes. Even some of the weird sounding recipes are so great!I’m exploring beyond my comfort zone and losing weight doing it!I recommend this book to everyone.

Title: Fantastic Salads, Perfect instructions and Layout
Review: I love a cookbook with pictures of every single dish. I love a cookbook with easy to read instructions that are not too wordy. I love a cookbook with easy to scale up or down and simple dishes with intense flavor. This nails it all! I have tried many of the salads and they are on point! Also, great for just using the dressings in the dish for veggies or meat leftovers you might have in the fridge to give them a new leftover life. Highly Recommend. I bought 3 as gifts for friends.

Review: Accurate recipes. Useful in everyday family scenarios. It transformed my view on salads and my family’s eating habit.I bought many cook books in the past and often ended up using just a very small percentage of the recipes contained. Nowadays I tend to just search for recipes online instead. However this book is worth buying - it opened my eyes to so many options I didn’t know existed. Highly recommend.
