From Coho and sockeye to Dungeness and Kumamoto

For thousands of years, the abundance of fish and shellfish in the Pacific Northwest created a seafood paradise for the Indigenous peoples hunting and gathering along the region’s pristine waterways, and, later, for the Chinese, Scandinavian, Filipino, and Japanese immigrants (along with many others), who have made this region home. Drawing on these diverse influences, the region fostered a cuisine that is as varied as its people, yet which remains specifically Northwestern.

Here, food writer Naomi Tomky leads readers through an exploration of this cuisine. She starts with the basics of buying great-tasting and sustainable seafood, surveys the variety of seafood on offer―from stars like halibut and oysters to unsung heroes like lingcod and smelt―and shares 75 delicious recipes reflecting the people who live in the region today, including Red Curry Mussels, IPA-Battered Cod, Dungeness Crab Deviled Eggs, and Pink Scallop Ceviche.

From the first cut of salmon, prized for its rich flavor and versatility, to the last crack of the sweet Dungeness crab, Tomky covers grilling, curing, and baking, and shares secrets for tricky tasks like removing pin bones and mussel beards. She explains how flavor-packed spot prawns put other shrimp to shame and why the region’s razor clams are unparalleled. For curious seafood rookies in search of the perfect fool-proof salmon and barnacled fish-cooking veterans looking for a new way to enjoy their favorite catch, The Pacific Northwest Seafood Cookbook is a must-have guide to cooking, and eating, the region.

Including recipes from Tom Douglas, Shiro Kashiba, Bonnie Morales, Mutsuko Soma, Ethan Stowell, Jason Stratton, John Sundstrom, and more.

Title: Best Seafood Book!
Review: I love this book! Honestly, this is the best seafood book I’ve owned. The book itself is beautiful, the pictures are great, the writing is very good.... but most importantly as I cook my way through this book I’ve found the recipes and instructions very accessible- and reliably very good! It’s obvious the author spent time not only eating the dishes but also cooking through them with groups of people and taking their input. You can always tell with an author “one and done” a dish, but this book helps you visualize and see and most importantly feel confident that the first time you put out the dish for guests it will be excellent. The style is most definitely PNW style- it’s a bit different than other seafood styles and that’s a good thing! This is my favorite seafood book, I’m confident you and your guests will enjoy this book too!

Title: Beautiful photographs, delicious recipes
Review: I do not cook fish much, mostly because I'm a little intimidated by recipes and screwing something up. I didn't grow up eating much seafood, so it is still a new area for me, even after living in the Northwest for more than 15 years. This book really broke the basics of Northwest seafood down for me, and made it very approachable, while also interesting! Plus the photographs are beautiful! The cover recipe was a hit with my family (including kids) and the potted salmon will come out as with my appetizers at Thanksgiving. Looking forward to trying more!

Title: Even if you do not live in the PNW, this book is a keeper!
Review: Beautifully photographed, well written book for someone who is afraid of cooking seafood. Even though I do not live in the PNW, this book is a keeper as I am able to locally find most ingredients even though the fish may be flash frozen. The step by step instructions are clear and concise. This is more than just a cookbook! Kudos to the author!

Title: Great fish cookbook no matter where you are
Review: Beautiful book! I don’t even live in the Pacific Northwest but the recipes will work for you pretty much anywhere with a good fish market. The recipes are spot-on so far - a couple bookmarked already as keepers.

Title: Recipes To Make You Feel Like You're Up East
Review: We got this book for my father-in-law for Father's Day because he loves to cook, and loves seafood. He had a great time thumbing through all the recipes and figuring out which ones he wants to try first. Some average ingredients, and others more expensive or hard to come by for us Midwesterners - but where there's a will there's a way! Makes a great present for a cook!
