NEW YORK TIMES BESTSELLER • IACP AWARD WINNER • The definitive seafood guide from the three-Michelin-starred chef of Le Bernardin, featuring gorgeous photography and step-by-step techniques alongside 85 accessible recipes that “will have you cooking fillets with pro-level precision on a Tuesday” (Epicurious)

“I hope that this book is a source of inspiration and education, encouraging you to cook with confidence and approach seafood with joy, and even love. The secret to Seafood Simple is to trust the process, and yourself.”

In its three decades at the top of New York City's restaurant scene, Le Bernardin has been celebrated as one of the finest seafood restaurants in the world and its iconic chef Eric Ripert as the expert in fish cookery. Now, in Seafood Simple, Ripert demystifies his signature cuisine, making delectable fish dishes achievable for home cooks of all skill levels—yet still with elegance and panache.

Breaking down cooking techniques into their building blocks, along with images to illustrate each step in the process, Seafood Simple teaches readers how to master core skills, from poaching and deep frying to filleting a fish and shucking an oyster. These techniques are then applied to eighty-five straightforward, delicious recipes, many of which include substitutions for maximum ease. Dishes like Tuna Carpaccio, Crispy Fish Tacos, Shrimp Tempura, Miso Cod, and Spaghetti Vongole show us how to bring out the vibrant flavor and incredible versatility of seafood. Each recipe is accompanied by a gorgeous image by renowned photographer Nigel Parry, as well as step-by-step photos for each of the twenty techniques taught in the book.

Stunning, delectable, and above all, actually doable, Seafood Simple is a master class from one of the world's greatest chefs, created especially for the home cook.

Title: Great recipes. Arrived With Smashed Corners!
Review: The book is a gift and has great recipes, lots of pictures and easy to follow. The problem is that it was shipped in a very thin paper envelope with no padding. As a result, the corners were smashed and I returned it. Hopefully, the replacement with be packaged better.

The focus is on how to make truly delicious seafood without the complications of technique and many steps in the preparation. Title: Comfortable even for a beginner cook!
Review: Fish can be difficult to cook and so easy to ruin. Yet there are simple recipes and techniques that can ensure success. This book from Eric Ripert, the three-Michelin-starred chef of Le Bernardin in NYC provides both. Seafood Simple is organized by some nine cooking methods poached, fried baked, grilled, etc. The chapters center, according to Ripert, on the “essential techniques” one needs to master to cook perfect fish. While that may sound intimidating at first, turns out even a beginner cook will be comfortable with the detailed instructions that chef provides. I have made Ripert’s Salmon Rillettes multiple times. This is an “amuse bouche” served at his elegant restaurant, yet it’s quite easy to make and, oh so delicious. Simple is the key here. Directions are very clear and complete so cooking seafood doesn't need to be mysterious or difficult. Le Bernadin's Chef Eric Ripert’s Seafood Simple illustrates that perfectly cooked fish can indeed be made at home. Whether marinated, fried, sliced thin, or served with a French-inspired sauce, seafood can be served for dinner any day of the week.

Title: My First Eric Ripert Cookbook
Review: I have been a fan of Chef Ripert for a very long time but was intimidated by recipes that appeared "complicated." This cookbook is just right for me. I can make upscale food with ingredients that I already have instead of having to hunt down something that I will only use once or cannot find at all. The photos are stunning and entice me to make the food. Thank you, Chef!

Review: Very nice recipes and delicious modern fusion fish and seafood dishes. Would be nice if the book would also have some kind of step by step cooking tips (it has some but only about how to cut the fish).

Review: I love Eric Ripert but had yet to buy any of his books. I'm so glad I bought this one. I love fish. He loves fish and all of the recipes in this book look awesome.I have yet to cook anything out of it as I only just received it, but there are so many that I will definitely do. All of the recipes look achievable and even though some look harder than others, you can can decide what level of difficulty you want to attempt. He shows you how to fillet fish and shuck oysters and anything else you need to do if you decide to go down that path instead of getting your fishmonger to do it.My next is his Vegetable Simple....
