The ultimate soup cookbook from the James Beard Award–winning author—including generous spoonfuls of culinary history and culture.

In restaurants and dining rooms on every continent, soup is on the menu. A Mexican chef simmers Roasted Poblano and Three Cheese Soup. A Sicilian nonna stirs Beans and Greens Soup, while her Thai counterpart cooks up Mushroom and Chile Soup. Wherever it’s eaten, a bowl of soup—whether elegant or hearty, creamy or clear, chilled or piping hot—delivers rich flavor and simple satisfaction. In this ultimate soup cookbook, Clifford A. Wright has collected 247 of the best classic, famous, and hidden-gem recipes to be found anywhere, including:

Italian Small Rice Balls in Broth * California Chilled Peach Soup * Georgian Beef and Apricot Soup * Tanzanian Black-Eyed Pea and Coconut Soup * Wonton Soup * Old-Fashioned Chicken Noodle * Chayote Soup from Nicaragua * Tuscan White Bean * Vietnamese-American Pho * Cambodian Stuffed Cabbage Roll Soup * Blackfoot Bison and Blackberry Soup * and many more

But this is no mere collection of recipes. Wright, a food scholar, applies his expertise in lively explorations of the history and culture behind each soup, which makes this book as rewarding to read as it is to cook from. He also provides Internet sources for every item—making them perfect for budget-conscious cooks whose taste know no boundaries.

Title: Simply awesome!!!
Review: Excellent book, lots of interesting soups that I'm simply going to have to try. I bought the book based on a sauerkraut soup that I had in Slovakia, which was fantastic. So I made the sauerkraut soup, and it was absolutely delicious and authentic. Major thumbs up. I did make some modest changes to the soup, namely, I substituted smoked turkey wings (wanted drumsticks, but they were unavailable) and used a beef kielbasa, and added 10-15 peppercorns and 8-10 crushed juniper berries, based on other sauerkraut soup recipes I researched, which seemed appropriate. I also used German sauerkraut (Kuehnes), as I saw elsewhere that German sauerkraut is milder than the American version, which uses vinegar and sometimes chemically altered instead of fermented. And it's true!!All in all, this is now going to become a staple in my winter soup repertoire!!!

Title: outstanding collection of soups with good instructions
Review: We have made a significant number of the soups and they turn out well each time. Some are just extraordinary. The Sicilian fish soup and the Palace soup which is really a variant of a mushroom soup are both high end. The Croatian soup also terrific. I could go on and on but these recipes are reliable and easy to access even for beginners although the flavors are often quite sophisticated. Strongly recommended.

Title: Uses unusual ingredients
Review: I had purchased this without viewing it because I so appreciated the recipes in Wright's other book, "Bake until Bubbly." However, a good deal of these recipes would require a purchase of one or more ingredients that either I have never heard of, or have a vague idea of what they are. There are probably about five recipes that I will end up trying in this very large cookbook.

Title: A Well-Chosen Assortment
Review: To me, a really good cookbook should contain a lot of recipes I would really like to make. For me, most specialized-topic cookbooks might have just a very few that fill that requirement. This one does a lot better than most.Yes, there are some recipes that don't appeal to me at all, and some I might be tempted to try but seem too time-consuming or complicated or require ingredients that are costly or not readily available at average American supermarkets. I am not so dedicated that I want to drive to a major city to find ethnic ingredients which are invariably pricy, but that may not matter to some.As you might expect, there are quite a few classics as well as some I never heard of that will be fun to prepare. I think the book is definitely worth Amazon's price.

Title: Excellent Coockbook
Review: I have many cookbooks, but this one is my first cookbooks dedicated to soups only. This book is extremely well organized. Very easy to follow instructions and every recipe has a bit of a side-history to elaborate on its origins. I use this book more and more every day and I have had only joyful experiences creating the recipes within (my family as well)! This is quickly becoming one of my staple cookbooks in my household.

Title: All The Soups You Would Never Want to Eat
Review: Fall will be here soon and time for soup - but not the ones in this book! First of all, I bought it by accident after just reviewing it, but while I was exiting the site, a message came up to thank me for purchasing it! For only $1.99, I did not call to cancel the purchase but thought it might have one or two recipes from 'around the world' that might pique my interest. Not so! From menudo, to either cold or hot borsch, to watermelon soup, I soon lost interest. The majority of recipes I found in this book are just variations of some kind of broth, some kind of meat, the 'same vegetables you would add to any stew or soup,' and the standard spices you would always add, (with the exception of a spice or two I've never heard off) so I've seen and cooked variations of most of these soups for over 50 years of cooking from scratch myself on any particular chilly day - no recipe needed. One thing I thought of particular interest was the history of the origins of these soups and the cultures of the people who created them. This was the only saving grace for me about this book and the only reason I gave it two stars.

Title: Giving, and Receiving
Review: I received this book as a gift a few years ago. I found it so incredible that I have now given it as a gift to others several times. If you enjoy trying new recipes, and a variety of soups, this is a great cookbook!
