Busiati (also known as busiate) are a traditional hand-shaped pasta from the Sicilian town of Trapani. Like other shapes commonly found in Southern Italy, such as Fusilli Avellinisi (page 68), this one is made using a knitting needle. Busiati are usually longer than fusilli. I learned how to make busiati in the Sicilian town of San Vito Lo Capo, where a local old lady taught me the art of rolling busiati by hand. The name of this pasta comes from the word buso, which is the name of a wooden stick from a plant that grows in abundance locally. The buso is what was traditionally used to shape busiati instead of the knitting needle.
To make the pasta
1. Dust the baking sheets with durum wheat flour.
2. Break the dough into about 2-inch balls and roll them into ½-inch-thick ropes using your fingertips.
3. Cut these ropes into 5-inch-long pieces.
4. Keep the cut ropes horizontal and place the middle part of the knitting needle at a 45-degree angle on the right end of the piece of dough and press it slightly with the palm of your hand, so that the knitting needle sticks to the dough.
5. Roll the knitting needle away from you at an angle with your hands, until the dough gets fully wrapped around the needle.
6. Gently roll it back and forth with your hand to make the pasta longer and thinner.
7. Carefully slide the pasta off of the knitting needle with your hand, while preserving the shape.
8. Put the shaped pasta on the prepared baking sheets.
9. Repeat the above steps until you have no dough left.

To cook the pasta
1. Set a large pot of salted water on the stove to boil (see page 40). Cook the pasta in the boiling water for 6 to 8 minutes, or until al dente. To test this, remove a piece of pasta from the pot and take a bite. It should be cooked but still slightly firm in the center.
2. When the pasta is ready, drain it through a colander and shake out the excess water.
3. Serve immediately with the sauce of your choice.
Serving Suggestion
Busiati are traditionally served with Pesto alla Trapanese (page 185) or with a simple Tomato and Basil Sauce (page 182). Both sauces are a staple in the area of Trapani, where busiati were created. Treat your taste buds to a complete Sicilian experience by serving busiati with slices of fried eggplant and grated Pecorino Romano on the top.
Tip
When shaping busiati, make sure to lightly dust the ropes of dough with durum wheat flour before rolling them. If the dough sticks to the knitting needle, you will not be able to slide out the busiato without ruining its shape.

Title: His noodles were awesome (I had never had homemade noodles before)
Review: My handyman has been making homemade noodles (with pasta machine) for over 10 years but never was able to use his cutter because his pasta fell apart before he could use the cutter part. .He made his noodles (hand cut with a pizza cutter) as a Christmas present for me. His noodles were awesome (I had never had homemade noodles before). I was hooked - I never knew there was such a huge difference between store-bought and homemade noodles.. I ordered this book and loaned it to him since he (with experience) would know what they were talking about. We had a pasta making day last Friday and it was awesome. He learned a ton from the book about how to make and handle the dough. We used my digital scale to weigh the flour (apparently a critical step).He kneaded the dough as usual, and wrapped it in plastic wrap to rest (which he had never done before) Simple steps, but it made all the difference. He was thrilled about how the dough went through the machine (using the steps in the book), and even more thrilled when he could use the cutters for making perfect noodles. He's still talking about it and how the simple steps perfected his dough, and his dough went through the pasta machine just like the photos in the book.Caveat: with homemade noodles (dehydrated or not) you have to use a lot more liquid than normal recipes. I made spaghetti Friday night. My cutter made basically angel hair pasta (which I like thicker spaghetti). It was ok, but my husband got heartburn from my sauce (my fault). Next night I made lasagna from the pasta we made. I couldn't find my recipe (and had to wing it). It was a flop, but not because of the pasta. I adjusted the sauce recipe (to keep hubby from having heartburn) but didn't adjust for additional liquid needed for fresh pasta (non boiled). Lasagna was too dry. Handyman and I critiqued my lasagna the next day and figured out how to change how I did it.Based on what I've learned, my next attempts should be much better, bordering on awesome. First attempts are can be frustrating, but you learn and improve.Regardless, this book is awesome and we will continue to use the simple steps to make perfect homemade pasta.

Title: Excellent how to cookbook!
Review: I am an avid cookbook reader and have many in my collection. Iâve never bought one that I havenât read most of the recipes in the book. (Many hours spent in coffee shops/book stores).I ordered an Atlas pasta machineðð¼, also from Amazon but realized that I didnât really have a book that thoroughly explained HOW to make pasta. I wanted a lot of information and this author explains everything...including where a particular pasta shape comes from in all the areas of Italy. It may not be a big deal to most but it makes the book interesting. There are very few pictures which other reviews have stated but Manuelaâs descriptions are clear and concise and you donât really need pictures to reinforce what you just read.This is a well written, informative and gives step by step directions. I bought the book unseen and I love it! Oooops...there goes my 30 minute timer! Time to roll my pasta!

Review: Wow, this book really has all the details for making pasta! You can tell this author was raised in Italy because they use so many different names for pastas that are literally the same except for the width you cut each noodle into.The instructions for shaping different pastas are very detailed and look very simple to follow. I just got the book today so I haven't had the chance to try the recipes yet, but I suspect I will be eating a lot more pasta now.Only one thing disappointed me. I was looking for recipes to make flavored pastas- chocolate, tomato, spinach, etc. This book concentrates on shaping the pasta instead. There is one page that mentions adding flavors to the basic recipe, but I was hoping for more. Oh well.This does look like a book I will use over and over.

Title: It's a great recipe and idea book
Review: The book is filled with recipes for many different types of pasta and sauces. If the person receiving the book is a first time pasta maker they may need a little pre-instruction to get the basics. If you understand the basics of making pasta dough and making one or several types of pasta, the book provides a lot of options for great meals. Included in the book are recipes for two basic types of pasta, semolina and egg pasta. All of the recipes in the book can be made with one or the other of these types of pasta - but why stop there? As the title of my review says, it's a great idea book too. We've started with several of the book's recipes and modified them to our own tastes. Now all I want to do is make pasta!

Title: Recipes for the avid Italian pasta fan
Review: It's difficult to find recipes for the multitude of different pastas throughout Italy. This book does an excellent job of presenting recipes and instruction for a ton of pastas as well as dished to be made with them. I'd recommend this book to anyone who is at least mildly interested in the shapes and uses for pasta!
