Welcome to Texas barbecue. They love to make it. They love to eat it. And they love to argue about it-igniting as many feuds as fires from Houston to El Paso. Legends of Texas Barbecue Cookbook delivers both a practical cookbook and a guided tour of Texas barbecue lore, giving readers straightforward advice right from the pit masters themselves. Their time-honored tips, along with 85 closely guarded recipes, reveal a lip-smacking feast of smoked meats, savory side dishes, and an awesome array of mops, sauces, and rubs. Their opinions are outspoken, their stories outlandish and hilarious. Fascinating archival photography looks back over more than 100 years of barbecue history, from the first turn of the century squirrel roasts to candid shots of Lyndon Johnson chowing down on a plate of ribs. A list of the best barbecue joints and a month-by-month rundown of the most influential statewide cook-offs round out this glorious celebration of barbecue found deep in the heart of Texas.

Title: If you need Texas BBQ this is legit as it gets
Review: I'm from West Texas (San Angelo) and have lived in Central Texas (Georgetown) as well as South Texas in Corpus Christi and in the panhandle in Lubbock. I have used this book as my Bible of barbecue for many many years. I recently bought the updated version to give to a client of mine here in California who said he was interested in cooking brisket. Of course I went straight to this book for a gift. There is an updated chapter compared to my older version and it's a solid addition. This book not only has great recipes but great history of Texas BBQ all over the state, pictures too. The history of Texas BBQ is so incredibly diverse and cool, which to me, reflects the reality of Texas, despite what many who have never been there seem to think. Anyway, this book is truly a wonderful resource, and I would recommend it to anyone, it is absolutely the real deal. If you have ever wondered about what Texas barbecue is all about this is it, past, present and all around. Good stuff.

Title: So that's how they did it!
Review: I grew up in S. Texas and BBQ was as much a part of the fabric of life as Tex-Mex food. In all those years of eating brisket off the butcher paper at Joe Cottens in Robstown, I never appreciated how they did it. Now I do. The simple recipes in the Legends book are not surprising (BBQ is basic stuff) but the descriptions about the various techniques, processes and variations demonstrates where the art really is.I've "done et" at several of the joints mentioned in this book (Coopers in Llano is "killer")and many more like them on the city squares in small towns across the state and at the road side stands. It is interesting to me as a transplanted Texican to know how the differences in BBQ flavor and texture come to be. It has certainly given me some additional pointers to try on my next BBQ adventure. The book is great for the cooking techniques, tips, and recipes alone. If you like Texas lore it's also great - I finally know why the tradition of serving BBQ on butcher paper exists. One final thing - Anyone can cook good BBQ - I have even found some up here in Mid Atlantic - but don't go looking for anything close to BBQ in Oregon. They don't know lengua from a latke.

Title: Newbie Q'er
Review: This was a gift for my brother who is an avid griller/smoker - unlike myself who merely dabbles. He lives on the Northeast coast and grills nearly year-round. He was thrilled with the book. He liked the variety of recipes and tips for both newbie and 'seasoned' outdoor meatmeisters. He recommended I get one for myself if I wanted to improve my bbq skills. I take this as high praise for the book as he has never read a cookbook in his life!

Title: Thoroughly enjoyed this book!
Review: I just love this book. I ordered it with "Salt Lick Cookbook" and they both arrived in the same box...super fast shipping. Amazon rarely disappoints in the shipping department. It's not a flashy cookbook but has some great history, stories, and best of all...recipes, from the great BBQ houses in our wondrous state of Texas. I have fond memories of going to Joe Cotten's in Robstown 50 years ago with my family on the way to Padre Island, eating on butcher paper. Life was simpler back then, when you were a kid and your biggest worry at that moment was if the waves were going to be big enough when you got to the beach. My husband and I are going to use some of these recipes to hone our barbequeing skills, especially with brisket. We need a lot of help and I think these books are just the thing!

Title: Fantastic reference and recipe book
Review: If you love Texas BBQ, you must buy this book. Initially I was put off by the duotone (two-colours used throughout the book)of the pages. Once I started reading it, I couldn't put it down. It's a treasure chest full of personal BBQ stories, recipes and historical information. All together these elements combine to paint an extremely rich and vivid picture of what Texas BBQ is all about. Robb Walsh is a renown food critic and writer, so his experience and passion really show through. Highly recommended.

Title: IF you only have room for one BBQ book, THIS is the one!
Review: This book IS, or should be, the bible of TX BBQ. And not just because I have a photograph published in it. Author Robb Walsh takes readers through the amazingly convoluted history of bbq in TX, and manages to make it a) very interesting, b) rich with detail, and c) replete with wonderful recipes us modern-day wanna-be bbq cooks can use. Successfully. I have the original copy from 2002; this updated copy has more recipes; and still proves to be a very worthwhile read. (IF you don't like BBQ, smoked meat of all kinds, you should skip on to the Walsh book on TX BBQ for Vegans. Coming to your bookseller, soon.)

Title: Great Recipes and Recollections
Review: Legends of Texas Barbecue Cookbook: Recipes and Recollections from the Pit Bosses (Paperback)This cookbook is amazing. It will take months to try all the recipes. The stories are wonderful and gives you an insight into how the barbecue came about. One thing that is different about this book that you don't see in most barbecue recipes is the sides to accompany the barbecue. You really need to try this book. You won't be disappointed. This book is everything we wanted, but I would like to see a sample of the inside of the books before buying. I realize you can't read the whole thing, but it would be nice to get an idea what you are buying.
