"Like Madhur Jaffrey and Marcella Hazan before her, Naz Deravian will introduce the pleasures and secrets of her mother culture's cooking to a broad audience that has no idea what it's been missing. America will not only fall in love with Persian cooking, it'll fall in love with Naz.” - Samin Nosrat, author of Salt, Fat, Acid, Heat: The Four Elements of Good Cooking
Naz Deravian lays out the multi-hued canvas of a Persian meal, with 100+ recipes adapted to an American home kitchen and interspersed with Naz's celebrated essays exploring the idea of home.
At eight years old, Naz Deravian left Iran with her family during the height of the 1979 Iranian Revolution and hostage crisis. Over the following ten years, they emigrated from Iran to Rome to Vancouver, carrying with them books of Persian poetry, tiny jars of saffron threads, and always, the knowledge that home can be found in a simple, perfect pot of rice. As they traverse the world in search of a place to land, Naz's family finds comfort and familiarity in pots of hearty aash, steaming pomegranate and walnut chicken, and of course, tahdig: the crispy, golden jewels of rice that form a crust at the bottom of the pot. The best part, saved for last.
In Bottom of the Pot, Naz, now an award-winning writer and passionate home cook based in LA, opens up to us a world of fragrant rose petals and tart dried limes, music and poetry, and the bittersweet twin pulls of assimilation and nostalgia. In over 100 recipes, Naz introduces us to Persian food made from a global perspective, at home in an American kitchen.

Title: Wonderful cookbook
Review: I've already made a few recipes out of this that came out really well! I have enjoyed reading the stories as well as the recipes. I've gone through and made a list of which recipes that i definitely want to try.My best friend is Iranian and doesn't use all the seasonings listed in some of the recipes I've asked her about. Lol. I've loved adding golpar to the Advieh recipe on page 15, and sprinkling crushed rose petals on the dishes I've made. What an interesting and delicious change. You will probably have to purchase a few dry ingredients to add to your spice cabinet. I had to get mint, golpar and rose petals. I'm still on the hunt for orange water. If you're looking for new recipes to try with a different flavor palette than "normal" (Chinese, Mexican, Italian...), this is a terrific book. The use of fresh herbs will be great in the summer when I'm trying to figure out what to do with all the dill, cilantro and parsley growing wild in all my perennial gardens!I do own a Persian rice maker (thanks to my best friend) and prefer to make my tahdig with that. The instructions in the book for making it without one are "authentic."Highly recommend this book! Thank you Naz!

Title: Beautifully written stories, delicious food
Review: I adored this book. I'm a cooking teacher with too many cookbooks to count. I started a small cookbook club as an excuse to take a deeper dive into some of my cookbooks and this was our first book. The essays were so moving-the writing is beautiful and heartfelt. The food is also delicious and recipes are well written. The author walks you through how to make a successful tahdig and I was quite proud of myself for turning out a beautiful masterpiece! Persian cuisine is ancient and incredibly delicious. Whether you are new to the cuisine or born into it, this cookbook is a worthwhile addition to your bookshelf.

Title: Excellent Book!
Review: To start with, a very high quality cover and pages. I was extremely impressed by the quality of the book itself. Secondly, a lot of cookbooks I've used (both persian food and non) will have the basic recipes which makes up like 15% of the book and the rest is filler or foods i will never cook or ever want to cook. This book is not like that. There are MANY common dishes in here and I will probably cook around 70% of them. That is a crazy high return rate for me with cookbooks. What surprised me was for example the Tadig. They could have had 1 recipe that taught you the basics and left it at that. NO! They gave multiple types and options. Ones I had never even thought of before and that i find to be incredibly creative. And finally they even included a little glossary at the end that tells you about the different spices for us melanin deficient folks to learn about spices and what they do/are for. I had never seen a resource like that in any book much less a cookbook and i was impressed about that inclusion. All in all, totally worth it. Get it. Do it!

Title: Great recipes, Broken binding x2
Review: great cookbook ! 5 stars for culture, recipes and the poetic and sentimentality in which it was written. BEAUTIFUL photos as well. my only issue is the first copy of the book I received- the binding had completely fallen apart when I opened the box. I exchanged the cookbook for a new one and now the second binding is also falling apart upon first time use. Wanted to let the seller know that there is an issue with the bindings of the book. Still giving five star because this book is still worthy of that, itâs more of an issue with whoever is binding the books together. I wonât return the second book because I tabbed up a bunch of recipes to try, but wanted to let the seller know this is happening!
