Title: One Of My Favorite Cookbooks!
Review: This is now one of my favorite cookbooks and I have dozens! Really easily and delicious recipes with healthy ingredients and lovely pictures, this is a must for every vegan with an Instant Pot. I plan to make every single one of these.

Title: Finally a vegan cookbook people with gluten and soy allergies can enjoy!
Review: Just weeks before COVID shut everything down I bought my first house and started demolishing the kitchen for a remodel. Iâd gotten myself an Instant Pot a couple months earlier but hadnât ever really used it. Now, in June 2021 I still donât have a range or oven in my kitchen, but Iâve become an Instant Pot pro thanks to Nisha Vora! Both my diet and my boyfriendâs are quite restricted due to several allergies that include avoiding dairy, gluten, soy, cane sugar, hemp, and sesame. However, I can eat almost all of Nisha Voraâs recipes with minimal substitutions.These recipes donât skimp on taste but the ingredients to get there can cost a pretty penny. Also, one has to be very cautious when considering the salt recommended in the recipes â I love salt but was unable to eat one dish because the recipe called for too much salt and I unthinkingly added it all. With all that said, this is currently my favorite cookbook. I feel like my culinary horizons have expanded and Iâve come across many new pleasant flavor combinations. And I LOVE being able to just follow a recipe and eat the food without having to make so many substitutions because of my allergies. Finally, the instant pot cook time charts at the beginning are fantastic!Below are my individual reviews of dishes Iâve made so far:p.79 Savory Turmeric Breakfast Quinoa â Satisfying: would be better with either more vegetables or 1/2-1/3 less quinoa. Made without tamari, pepper, or sesame seeds.p.103 Coconut-Millet Porridge â Wonât make again. Extremely bland but has good texture. Either needs salt or something sweet. Was able to eat a serving by adding applesauce and maple syrup. Definitely better than oatmeal so oatmeal lovers may like this and know how to season to their tastes. To be fair, I didnât eat it with the recommended toppings which could have made a difference (chocolate, pistachios, berry compote).p.123 Classic Creamy Polenta â Not worth making. Got burn notice. Should cook polenta enough that it just barely thickens before starting to cook it under pressure. Probably best to do pot-in-pot though. Stir quickly at beginning to avoid lumps. Iâll just have my boyfriend make his greasy oven-baked version in the future though.p.125 Rosemary and Garlic White Beans â Actually pretty good. Iâm not a fan of oregano so didnât think Iâd like these but found them satisfying. Omitted salt and added to taste at serving.p.129 Frijoles (Mexican-Style Pinto Beans) â Great flavor! Liked them so much Iâve made them twice. But prepare to suffer if you donât have Beano. Beans possibly needed more cook time since didnât have intestinal trouble with sufficiently cooked/reheated leftovers.p.139 Wild Rice Salad with Lemon-Shallot Vinaigrette â Life changing. This is the perfect blend of all my favorite things. Itâs what I imagine pesto salad might taste like if it were a dessert. I love tons of dressing so the next time I make this Iâll double the vinaigrette but most people would probably like as is. Iâd been planning to cook more recipes out of the book before writing my review, but this was so amazing I had to get the review written immediately after eating it.p.144 Spaghetti Squash Pasta Puttanesca â Worth making again even though I doât really like oregano. This is better as leftovers because the flavors have a change to meld. DONâT add extra salt!!!p.149 Lemony Asparagus with Gremolata â Not bad and Iâd eat again. Prefer my own dressing. Asparagus was way under cooked, had to saute it for another 3-5 minutes. Put the garlic and lemon zest in the dressing and used less parsley since Iâm not a huge parsley fan.p.183 Miso Mushroom Risotto â Was tasty until I added the miso then became unbearably salty. I could feel my tongue burning from all the salt. Had to throw most of it away.p.195 Chickpea Vegetable Biryani â So many flavors happening I couldnât really tell if I liked it. Probably wonât make again, but I loved the fried raisins!p.199 Tex-Mex Brown Rice and Lentils â Good! An excellent freezer meal. In anticipation of adding vegan cheese I omitted all the salt and ended up with a perfectly balanced dish. Increased cook time for rice. Also, tomatoes should be added last after everything else is stirred in. If they rest on top they wonât cause a burn notice.p.229 Creamy Dreamy Cauliflower Soup â Absolutely fantastic! The lemon, nutmeg, and caper combination really makes this. Seemed slightly watery, but I did use a small cauliflower. Not a super filling dish, but is so unique and delicious itâd be worth having as part of a meal with something else.p.231 Red Lentil Almond Curry â Got burn notice and slightly scorched this. Canât tell if I didnât like it because of the extra unintentional smoky flavor or what...probably wonât make again, but this recipe had rave reviews from other people.p.257 Pho (Vietnamese Noodle Soup) â Fantastic and Flavorful broth! This is the best pho Iâve ever had. And while the shiitakiâs make it expensive I tried it with regular mushrooms and it didnât have the same je ne sais quoi. Still yummy with regular crimini mushrooms, but Iâll be making it with shiitakiâs every time I make it in the future. One of my favorites. Instead of tofu I just added crimini mushrooms after the broth was done and strained.p.267 White Bean and Broccoli Soup â Will not make again; suitable for a different palate but the wine flavor doesnât work for me. The âLove and Lemonsâ blog Vegan Broccoli Soup recipe is much better. However, I feel like this recipe has a lot of depth in both flavor and texture. The almond crumble was really yummy and a nice texture counterbalance to the blended soup.p.275 Easy Sweet Potato Dal â Delicious and filling! Would definitely make again. This was the first recipe I made from the book so I didnât take a lot of notes, but the lemon juice really perks this dish up. Itâs like eating warm spicy comforting sunshine.I may edit this review as I make more dishes. Even with the dishes I didnât like this book has enough showstoppers that you should buy it. Iâve already given it a couple friends as a gift.Pictures are: Easy Sweet Potato Dal, Chickpea Vegetable Biryani with Raita, Creamy Dreamy Cauliflower Soup, and Miso Mushroom Risotto

Title: beautiful pictures!
Review: Where to start. I don't know what part of the booki took pictures of. I randomly flipped the pages 3 times and took a picture. Nisha Vora is talented. Flipping through the pages a of this beautiful cookbook, i realized that the author is a Person that i follow on YouTube. Veganism is new to me in a way. I often go to vegan restaurants and make vegan food just because I like it. I've worked many years as a bartender for restaurants. Most of the chefs and cooks are surprised when they see me get meat. They always assume that i am vegetarian because i love plant based food. It feels better. I have been working toward veganism. I stopped eating dairy a long time ago. Her vlogs have been very welcoming and informative. I bought this book because I just bought an instant pot. I bought an instant pot because i wanted make steel cut oats, beans and grains faster and easier. It is new to me. It is always quite disappointing to order a cookbook and discover it doesn't have pictures. There is a romance to a reading a cookbook. Flip through the pages, see something inspiring and learn how to make it. The pictures give you an idea of what a food is like that you have never tried before. It is very informative and precise. The food is great and so are the pictures. Her vlogs are amazing. She really makes cooking easier. I have discovered many new spices to play with and styles of making food by reading this book and watching her videos.

Title: Fantastic Book
Review: Great receipes and very easy instructions. Will slowly work my way thorugh them. I hotestly haven't used the stove since getting my Instant pot. I even heat things up out of the freezer while doing other things...love it.

Title: A fine addition to your Instant Pot cookbook collection
Review: Overall this is great. Some observations thus far:- In general, I highly recommend this as part of your Instant Pot adventure. This was my first Instant Pot cookbook and I am happy to have it. I've now switched about 50% of my cooking to Instant Pot, and look forward to trying many more of Ms. Nora's recipes.- The recipes themselves are great, from the few I've tried thus far, though a bit on the extravagent side in terms of sheer numbers of ingredients, e.g. spices. Not a knock, just something to note, in case you're looking for something more basic. My wife, OTOH, is a cooking fanatic, so is quite happy to reach deep into the pantry for these.- For those new to Instant Pot--as I and my wife are--there are a few things missing. For example, for steaming vegetables, it is still unclear to me what the "steam" function is vs. steaming in this and other guides. It seems steaming vegetables refers to still using the pressure cooker function, as opposed to the "steam" function of Instant Pot. A little more hand-holding on specific Instant Pot functions would be helpful. In general, I have yet to see any guidance on how to use the "steam" function of the Instant Pot.- One nice thing about this book is the set of tables with times for cooking basics (grains, veggies, etc.). HOWEVER, these times are quite approximate, and ultimately I think you'll have to experiment to see what works. If you compare the times in this book vs. those from Instant Pot, quite often there is a big difference, even if in many cases they are basically the same, so times are partly personal preference, necessitating experimentation.

Review: After becoming a vegan, I found that recipes were hit and miss - some were great, others not so much. I was so tired of putting in so much effort to get something that was just okay. This book is completely different. I have made at least half of the recipes and have loved every single on of them. I have no other cookbook that is that good (usually you get 5 or 6 good recipes and the rest of the book is no good). Buy it - it is work to make the food but if you want excellent food with lots of flavour, this is the book for you!

Review: Ho comprato l'Instant Pot da poco e grazie a Nisha non ho smesso un attimo di usarla.Nell'introduzione Nisha parla un po' di sé e delle funzioni base dell'Instant Pot, incluse tabelle sui tempi di cottura che mi sembrano simili a quelle fornite nel manuale di istruzioni.RICETTE INEDITE Consiglio a tutti di seguire anche il suo canale YouTube, dove c'è la versione video di alcune ricette del libro. Anche nel suo sito ci sono alcune ricette (non tutte realizzate utilizzando l'Instant Pot), infatti questa forse è una delle critiche che si possono muovere, essendo molte ricette reperibili gratuitamente. Tuttavia nel libro ce ne sono molte inedite e davvero goduriose!MOLTI INGREDIENTI? Non mi trovo d'accordo con chi critica la presenza di molti ingredienti nelle ricette; molti di questi sono infatti spezie, che si possono tranquillamente omettere. Vi faccio l'esempio della West African Peanut Stew: gli ingredienti possono sembrare tanti, ma di fatto si tratta di un soffritto con l'aggiunta di spezie, brodo (sostituibile con acqua) e gli ingredienti principali, cioè le patate dolci, i ceci e il cavolo nero (se vogliamo il pomodoro e il burro di arachidi). Chi critica la difficoltà di esecuzione è perché forse non ha mai seguito Nisha e non ha mai visto con che semplicità nei suoi video riesce a creare sapori così complessi.Inoltre questo libro mi ha dato modo di ampliare il mio uso delle spezie, che infatti ricorrono simili in tutte le sue ricette. E' quindi facile iniziare comprando la curcuma (che magari avevate già a prendere polvere in dispensa e non sapevare come usare), il cumino (basta lui a svoltare una zuppa di fagioli e pomodoro!) fino poi ad arrivare al coriandolo in semi, il cardamomo e il fieno greco.RICETTE AMERICANE? Purtroppo è vero che alcune ricette sono un po' americaneggianti, non so come possano venire la pasta o la lasagna cotte nell'Instant Pot, tuttavia la maggior parte sono stufati e salse di ispirazione indiana che era esattamente quello che cercavo.In generale le ricette sono semplici e consistono in Sauté di soffritto e spezie, inserimento degli ingredienti principali, chiusura dell'Instant Pot con Pressure Cook e lasciargli fare la sua magia.Insomma per chi è un fan di Nisha non si faccia intimidire dalle recensioni negative e si lanci a cucinare, soprattutto visto il prezzo vantaggioso della versione Kindle 😉

Pedà mi instant pot y el libro juntos, vienen muchas técnicas y recomendaciones sobre como funciona, como cocinar distintos alimentos, además de muchas recetas muy muy buenas ! Me encanta la comida oriental/ hindú y claro mexicana y hay un poco de todo. Lo recomiendo mucho! Vale la pena probar nuevos platillos y darle el uso a la instant pot

Pretty much every recipe has the ingredients on a different page than the instructions. You have to turn the page over and back while cooking. It's not practical.
