Title: Not a vegetarian but *could* be!
Review: My daughter and I have dabbled with vegetarian food for years, and she recently introduced me to Meatless Monday. Since I needed more recipes, other than the ones in my head, for a standing weekly "vegetarian date," I went the library to look for a (different title) vegetarian cookbook and happened across this one. Comparing the recipes between the two books, this one seemed more accessible for a busy family, with fewer ingredients and more simple directions.I chose three recipes when I got the book home, supposing at least one of them would turn out ok. Surprisingly, they were all very good, very flavorful, and perfect for our needs. A couple of the recipes did take longer to make than stated but that isn't an issue for me because I enjoy spending time in the kitchen (and I can always put the recipes together ahead of time and refrigerate or freeze the food for use later). When the outcome is food that's this good, 15 extra minutes (give or take) is certainly not a complaint.This might be too simple for experienced vegetarian cooks (the food is great so don't pass it by for a more complicated book, if that's the only issue) but for novice cooks or for interested omnivores / beginner vegetarians, this one is a real gem. I liked it so much that I returned it to the library, ordered my own copy, and will soon order his burger book.

Title: incredible recipes - subtly genius
Review: I live in Brooklyn and a lot of restaurants here like to serve mac n cheese done fancy. Or not done fancy but done delicious. So, I've tried a lot of different versions of mac n cheese. The recipe in this book-- using two types of mushroom and goat cheese-- is simply to-die-for (I don't even like that phrase, it just suits this dish too well!). And it wasn't from a restaurant but my own kitchen. Fancy that!Another thing I love about this cookbook is how down to earth it is. A lot of the recipes are smart, sophisticated ways to approach things that you were already making. The author focuses on using ingredients common in most pantries. The result is often an amazing meal when you were least expecting it- on a lazy day when you did't make it to the store.I also need to shout out the lentil soup recipe: it's gotta be the best in the world!Highly recommended!

Title: I really liked the format of this cookbook
Review: I really liked the format of this cookbook. It's the kind of thing that inspires you when you are wondering what on Earth there is to eat for dinner! But I was not crazy about a lot of the recipes. I also made the Whole Wheat Spaghetti, Kale, and Chickpea dish that Amelie reviewed and she was dead on with 'bilious'! And though the basic bones of the Stronganoff are good - you should listen to the voice in your head that says, "turnips in stroganoff?"I'll admit that sometimes surprising food combinations can be good (and I really liked the Red Bean Chili), but too many of the recipes in here tried too hard. There's too much focus on making novel food and not enough focus on food that tastes good.

Title: WONDERFUL!!
Review: I have a lot of vegetarian cookbooks and I don't use any of them.. except THIS one! My issue with vegetarian cook books is that usually the entrees seem intangible and hard to make. I'm also cow milk free and gluten free so many recipes are hard to convert. I usually open up a new cookbook and am completely disappointed to find very few recipes that I can actually make. But these recipes SOUND delicious and ARE. They are also easy and fun to make. It's easy to convert dishes to gluten free and many of them already are. Lukas starts at the beginning and explains everything wonderfully. The book isn't boring at all like a lot of veggie books. My husband is a veggie now by default and loves all the food i've made through here.. doesn't miss meat at all. Thanks Lukas!!!

Title: Another hit veggie cookbook by Lukas Volger
Review: I found Lukas's first book (veggie burgers) by accident, and it quickly became one of my favorites. In fact I gave copies to 5 other friends and relatives. They loved it, too. So I was very excited to learn about the new cookbook. I have tried several recipes so far, and they were all stunningly delicious. I also love the way I can figure out ways to vary the recipes here to make other similar dishes. For instance, Lukas provides two recipes for galettes. But knowing how to make these galettes, I can figure out lots of other stuffings that I think would be delicious. Same with the asian dumplings. The spinach, mushroom and tofu dumplings were yummy. And I can vary the stuffing to make lots of fun dumpling versions.I am not a vegetarian, but I'm trying to eat less meat and Lukas's cookbooks really help!

Review: I've recently moved to a part of the country that views vegetarians with a suspicious eye.Since there aren't too many restaurants who cater to us, I've been eating at home more.Wish some of the recipes had fewer and less costly ingredients, but they're easy to followand taste great!
