"This minimalist, whimsical and divine cookbook is going to fly off the shelves." –Glamour Magazine UK

“Perfect for flavor-first foodies like me, who are on a mission to add more plant-forward dishes to our tables!" – Michelle Tam, New York Times bestselling author and creator of Nom Nom Paleo

The Vegetarian Reset celebrates a lifestyle where a foodie sensibility intersects with healthy eating. It solves the never-ending dilemma that all plant-based eaters face: Is life fun when you eat salad every day, or is it worth it to let your health take a backseat to enjoy a big bowl of rice or pasta without enough protein?

In her debut cookbook, Vasudha Viswanath takes readers on a little trip around the world, drawing inspiration from an array of traditional and global cuisines that are rich in whole foods like vegetables, legumes, and healthy fats. Seasonal vibrant recipes are moderately low-carb and put vegetables front and center, while also being gluten-free! Learn to bake healthy bread from scratch, make paella out of cauliflower rice, transform paneer into gnocchi, and sweeten brownies with dates! Whether you already follow a low-carb lifestyle or simply want to add more healthy dishes into your rotation, The Vegetarian Reset will delight and inspire vegetarians, vegans, and omnivores alike to eat well, fully nourish, and reset your body.

Title: Tasty recipes; some caveats
Review: The layout and pictures are wonderful. We are new vegetarians but have enjoyed the Vegetable Paella, the Curried Lentil Mushroom Bolognese, the Paneer Mac-Khani and Cheese, the Zucchini Bread, Cacio e Pepe, the Caprese Salad (unlike one reviewer, I really appreciated the inclusion of this simple salad), and the Zucchini Bread. All these recipes have been easy to follow and have tasted great. I found I could double or triple these recipes, which is a great time-saver if, like me, you don’t enjoy cooking because some of them take about 1-1.5 hrs to prepare. We’re not tofu fans, so I was pleased it only features in 4 recipes. I like the nutritional breakdowns showing carbs, fats and protein proportions, and for this reason ordered a copy for my daughter, who also finds this information lacking from a lot of vegetarian cookbooks. I also like that traditional oven cooking alternatives for air fryer or Instant Pot cooking are provided. Furthermore, the inclusion of little notes on how to veganize certain recipes is a plus.I do have some caveats, though.1) I really wish there was an indication of expected prep and cook time.2) I wish more of the recipes indicated if they were to be served as a side or a main dish, as is done in the Salads chapter, because I’m unused to eating all vegetables for a meal and don’t know which ones need extra. e.g. is the Ven Pongal with Tomato Chutney a meal in itself, or should it be served with extras? With only 298 calories per serving, I guess extra sides are in order, but I’d prefer not to guess. I never serve a starter as well as a main dish - that is just too much cooking - so it would be helpful to know which recipes actually would be enough even when doubled (e.g. Khachapuri serves 4 as a starter, so if doubled would be enough for only 2 main meals for 2 adults, but it still needs at least 1 hr 15 mins to prep and cook, and I’m not sure how to cook 8 boats at once, and if they can be reheated successfully).3) I wish the Index was more comprehensive. When I first got the book, I skimmed through and ordered some spices (e.g. asafoetida, berbere, black mustard seed, tamarind paste) and lentils/beans that were new to me. Now, I have a jar of Split Black Matpe Beans, and so far have been unable to find the recipe for which I got them. I would have liked the lentils listing broken down further into red, yellow, green, brown and black, along with the recipes. (Okay, maybe this last is a bit too much of an ask, but it would be helpful to those new to cooking with lentils, because maybe I got the split black mapte beans mistaking them for another lentil).

Title: Must have cookbook
Review: If you’re looking for innovative recipes that are healthy and not boring this book is great. What I really appreciate is the wide variety ranging from Indian to African and Asian. The sheer array of cultures makes the book more appealing to me.While some of the recipes have a variety of steps they are easy to make with very clear instructions. It’s especially a welcome cookbook for those who are looking at low carb recipes that you may not think of making. For example one recipe for French onion soup is a real knockout that’s a winner.I also enjoy the author providing an intro to help the reader understand what the book is about and her cooking philosophy.I’ve bought many veggie and low carb books over the years but feel this is one of the best ever.I admit some of the recipes may have ingredients that you may not have on hand. But don’t be deterred I still made it and did substitute or leave out sometime. Overall kudos to the author.. I hope she writes more cookbooks as I enjoy her cooking philosophy and approach. What I also like is the types of ingredients used. For example, the zucchini bread uses a combo of almond and chickpea flour which gives the bread a delicious nutty taste. And yes there is room for desserts too. What I love about the desserts is that they are sweetened with fruits rather than other sweeteners.Overall this cookbook is one of the best for those who are looking to cook healthy vegetarian. Still if you are a meat lover the recipes could also be used to complement a meal. As a result, I feel the cookbook is an excellent choice for any cook who is looking for delicious recipes.

Title: Yum!
Review: I wanted a vegetarian book to add to my bookshelf and this one popped up. The recipes are explained well and (generally) easy to make. I like the photos and the book is well-organizedI agree with the comment about wishing it included prep/cooking times, but I do appreciate the macro and calorie breakdown! For some of the pasta recipes which call for alternate types of pasta (like zoodles) I just use regular or protein pasta since I am not that concerned about carb intake. It’s easy to make substitutes. The recipes do lean a little bit more Indian IMO, so be prepared to stock your spice cabinet!

Review: From the elegant cover to the cleverly chosen name & dietary guides for each recipe, this book is a perfect addition for any healthy, mindful foodie.I love the authors suggestions on some simple cooking tips and techniques, a fresh twist to some humble South Indian dishes and brave alternatives to traditional recipes (try her Berry Kajju katli, Cucumber papdi chaat, Saag Lasagna, Paneer Gnoochi).Growing up in a very meat forward household, plus being a foodie that always chose the meat options rather than veggies, this book has given me the change needed to realise you don’t need meat in every meal to make it yummy😋But my very own highlights to call out are the Vegetable Paella, the vegetarian Bibimbap and the chutney Ramen - all of which have become weekly staples in our family now. Even my 5 year old is a big fan❤️❤️!
