Title: Just the Cookbook I Needed
Review: What a wonderful cookbook. Ashley is a great writer and every single recipe contains some kind of special insight. The nutrition level of the recipes are higher than any other cookbook I have and for the most part these recipes are quite simple to make. Here's what I've made so far and I will update as I make more:1. Blueberry, Banana & Chia Muffins: So easy and they are the perfect muffin for breakfast or for afternoon coffee or tea. Wrap them individually in saran wrap and keep them in the freezer to make them last.2. Warming Carrot & Tomato Soup: Another easy dish but when I want tomato soup I think of the childhood favorite and this recipe contains cumin, cinnamon, fresh ginger and even though it is delicious, I would make it next time without those spices. However, it makes quite a base for a vegan chili so it did not go to waste!3. Bacon-ish Bits: These are worth the price of admission. They go well sprinkled on soups, salads and eating out of hand (although beware you can't eat just one).4. Tahini Caesar with Quick-Smoked Chickpeas & Baconish-Bits Oh, this salad dressing is so easy and so delish. The Quick-Smoked Chickpeas are so much easier to make than they sound; trust me and make them!5. The Parmesans: I made the Classic Almond Parmesan and it's great on pretty much everything.So if you are looking for oil-free, sugar free, highly nutritious recipes, this is the cookbook for you.

Title: We call it “the cookbook”
Review: I am plant based and love to try to inspire others to do the same, however no one has ever become plant based because of me 🙂 . But this cookbook has even inspired hard sells to adopt a plant based diet …that’s how good the food is.My whole winter has become centered around these meals. They are plant based and Whole Foods but so rich and satisfying that I will stay up late just to keep eating!I have been whole foods based for quite some time but these recipes are really combatting the burnout I was having from making the same things- and helping me to get extra calories, healthy fats and nutrients that my body needs.There is a learning curve but after a while I have learned a few recipes intuitively by heart, that I adopted for the instantpot. So now I can throw everything in the pot without looking at the book and basically have a killer meal in 10-20mins. I find it’s easy to sub out different veggies , too, to make them more versatile .The thing I love about eating the way I do (and the way this book promotes), is that it’s so easy on the gut (I have Sibo ibs and this is the only diet that works for me ), I can eat as much as I want (which is necessary in winter! Let’s stop abusing our bodies with calorie restriction!) and not feel heavy or bloated, and if I do gain weight it’s a healthy looking weight - my skin looks good and people have complimented me on my glow.Even if you are a die hard meat lover, give it a try! You may end up incorporating the Tofu lasagna into your week…, or if you are like me, you may end up eating it every day!

Title: Really lovely cookbook with very tasty recipes
Review: I like most everything about this cookbook. I have made many of the recipes and they were all at least good and some were terrific. I especially like her blueberry oat breakfast muffins and have made them so often--not too sweet and easy to put together. The burgers are great as are the bowls. Unfortunately I am now on a no added salt, sugar, or fats diet, so I'll have to make some substitutions--but it should be easy. I will use dates for sugar, Table Tasty for salt, and bananas, avocados, or nuts for fats--depending on what I'm whipping up. My only problem is with her use of psyllium husk so often. I am unable to get it easily and would prefer just using flax and chia.

Title: Best plant based whole food oil free cookbook I've found!
Review: I went plant based whole foods, oil free, no processed sugar 9 months ago from what I had thought was a pretty healthy omnivore diet, and it is definitely helping my health and weight, but I have struggled to find recipes that are not only healthy but delicious. I've used the FOK meal planning app, which was extremely helpful to get started but lacked in flavor. I've bought several cookbooks, and other than Engine 2, which I also recommend if you're looking for help with this way of eating, this is the only one I've found that tastes great. I am so impressed with this cookbook, it is my favorite. First, it is gorgeous. Her photograpy is SO appealing. The recipes are wonderful as written, not requiring lots of additions or more spice to make them tasty. I've loved everything. My son, who really dislikes the FOK recipes, tells me to mark these to make again. My sister who recently visited bought this cookbook after I made several recipes. The author thinks about the health benefits of the specific ingredients used. She does use nuts and soy. The downside that I've noticed is that the recipes often split the page turn, making it necessary to keep flipping the page between the ingredients and directions. I may start actually assembling the measured ingredients to make that easier. She also doesn't suggest how long recipes take, but I've never found those to be true in any cookbook anyway. The recipes I've made so far have been on the time consuming side, and it has been helpful to do some prep in advance for weeknight cooking. So far this has not been a toss dinner together in 30 minutes cookbook, but if you want great taste or are also cooking for someone who is resistant to this restrictive of an eating plan (you, perhaps?) these recipes will leave you very satisfied, and not at all deprived. Buy this cookbook!

After following Ashley's Blog (RiseShineCook.ca) for years, I was beyond thrilled to learn that she was creating her own cookbook! There is nothing like the visual and tactile satisfaction that a hard copy book delivers, and this one does not disappoint. From the mouth watering photography to her personal inspiration and reasons for choosing each recipe, it was hard to choose where to start! The first section of the book, from her introduction and personal story (inspirational), to the kitchen tools, cooking techniques, tricks and tips, leaves no questions you may have unanswered. If you are anything like me, what you eat has a lot to do with your mood. The arrangement of the recipes in this cookbook makes it easy to find exactly what you are “in the mood” for. You can choose something fresh and light or more savory and filling for any meal of the day. There are choices that compare to classic meals you’ve grown up with like pancakes, stews and shepherd’s pie, as well as new creations you'll want to try, like smoothie bowls, portobello pizzas and a herbed “cheese” ball. I cannot go without mentioning the Sweets and Treats chapter in this book. The Chocolate Lover Brownies, Raw Cinnamon Rolls and Pumpkin Pie Squares are among my family’s favorites… but there are so much more! As a primary school teacher and a busy mom of two children involved in extracurricular activities, I often want and need our meals to be quick but also nutritious and full of the vitamins and nutrients that we need. Since purchasing The Plant-Based Cookbook, the one pot meals and sheet pan dinners provide my family with just that. When we do slow down (just a little) on the weekends, my daughter and I thumb through the book and make her favorite meals and “treats”.
