Get the best possible results from your air fryer and discover the best ways to use it (not just frying!) with 75 fast, convenient, great-tasting recipes.

Air fryers promise crisp fried food without actual deep frying. Was it too good to be believed? And what can you cook in them besides French fries? In truth, air fryers cook food by blasting it with circulated hot air. The method is fast, convenient, and can be surprisingly good--if you have the right recipe. We cooked more than 70 pounds of potatoes to create the perfect air fryer French fry, with an evenly crisp exterior and creamy center. But what really drew us to this appliance was the variety of what you can make in it, effortlessly and without having to enlist numerous pots and pans.

In addition to crispy fried chicken and fries, you'll turn out evenly cooked steaks, such as Spice-Rubbed Steak with Snap Pea and Cucumber Salad (the spice rub gives them a bold crust), Sweet and Smoky Pork Tenderloin with Roasted Butternut Squash (the pork cooks directly on top of the squash to save time), and Tandoori Chicken Thighs. Many of the recipes yield both a main and a side for a complete meal. Most recipes take only 45 minutes or even less time, and all come with complete nutrition information.

Frozen foods cook up crisp in the air fryer, but the results are so much better when you start with homemade. So we offer freeze-it-yourself Chicken Nuggets, Southwestern Beef Hand Pies, and more that go straight from freezer to air fryer and cook to perfection. And we share plenty of kid-friendly meals and snacks, from Better-Than-Boxed Fish Sticks to Zucchini Fries.

Less-fat frying

Yes, the air fryer’s intended purpose holds true: Instead of quarts of oil, we can use just a

small amount and achieve beautifully crisp results for French fries, chicken, fish, and more.

Set it and (almost) forget it

Unlike stovetop cooking, air frying requires virtually no monitoring, thanks to its well-regulated temperature and automatic shutoff. Other than the occasional flip or toss, it does all the work, allowing you to focus on the rest of the meal.

Minimal mess

The food basket is enclosed in the air fryer, and this translates to a clean kitchen—no splattering oil or multiple dirty pots and pans. Plus, the baskets are simple to clean—most are nonstick and dishwasher-safe.

Your automated sous chef

Cooking multiple dishes in the oven can be a juggling act. Hand a side dish over to the air fryer and free up valuable space.

Title: Quality Recipes
Review: We were a little slow to join the air fryer craze, but that's because we seldom eat or make fried foods at home. When we found a Ninja air fryer at Costco, and read up on the versatility of the appliance, we decided to give it a try. In two months we have used it on-average about two times a week. We started with recipes found online, and as we got more comfortable and familiar with its capabilities, decided to invest in a cookbook. It seems the better cookbooks, ones that have good instructions and sufficient illustrations, are more expensive. As I see it, there are two types of air fryer users. There are those who wish to use it to heat or fry prepared foods that come out of the store's freezer case, things that are home-style 'fast food' and require few added ingredients and/or added steps in preparation. Then, there are those who wish to use it to prepare square meals from scratch that dress up the meat-and-potatoes theme. We fall into the latter category and this cookbook is designed for us.We own and use another America's Test Kitchen cookbook, so knew this one would be worth the cost. While we've only just started to use it, I already have some observations. Some recipes require meats or ingredients I doubt even the best chefs have on hand, like game hens, garam masala, thai chile (a pepper), or pomegranate molasses. Because we are retired and have the time to plan menus a week in advance, and can pick up the odd ingredients ahead of time, the recipes don't faze my husband and I. My second observation is that some of the recipes are dish-intensive, so that adds to clean-up time and dishwasher crowding. Still, not a game changer. The results are worth it. We made the Roasted Bone-In Chicken Breasts and Fingerling Potatoes with Sun-Dried Tomato Relish, page 32, and the results were delicious. We had to adjust cooking time because our store-bought breasts were apparently much fatter than the ones used in the Test Kitchen. But, we made copious notes in the book to aid us the next time we use the recipe. And, yes, the resulting chicken and potatoes looked every bit as appetizing as the illustration. So far, so good!

Title: Beautiful Cook Book
Review: I watched a show from America's Test Kitchen on the BEST Air Fryers before buying the one they ranked the highest, Instapot's VORTEX. ATK used recipes that are in this book. Must say like most of ATK's books this one is a gem. The recipes are easy and delicious.

Title: Ordered used Paperback edition
Review: This book is almost perfect. But I do slightly regret my purchase, as after receiving my copy in the mail and perusing the recipes, there are only two that I would try. The recipes in the book are fine, they're just not anything my husband and I would eat. Some of the recipes look quite labor intensive. I am so happy that I ordered a used copy instead of buying new. Otherwise, it's a beautiful book, with lots of gorgeous color photographs and concise directions. Next time I will download a sample of the book before buying, but I had enjoyed all of the other Americas Test Kitchens books I have purchased in the past and thought I would like this one too. Please keep an open mind and don't let my opinion sway you from buying this book, but if you're on the fence, you may want to consider downloading the sample before purchasing.

Title: The book I would have liked to find when I first got my air fryer!
Review: This is the best air fryer cookbook I've found yet! Good info on how the machine and the process works. Several pages of great tips to make your food come out perfectly. Lots of really lovely, flavor-loaded healthy, un-fussy recipes with easy-to-find ingredients. With the bonus (for me) that they're all written for 2-4 people. Full recipe nutritional information in a well-organized index in the back. I'm delighted with this one! P.S. The sides are phenomenal!

Title: A BIG DISAPPOINTMENT...
Review: I usually like ATC recipes, both on-line and on TV. However, this cookbook dedicated to Air Fryer recipes falls far short. The first 2 recipes I tried in the book were both for potatoes, and both had such overly complicated directions for what should have been simple processes that I have decided to write a review immediately. The first, for Crispy Smashed Potatoes, a 2 step cooking process, tells you to make a bowl out of aluminum foil, add some water, crimp tightly, and bake at 400 in air fryer for 25 to 30 minutes. Then you are supposed to smash, drizzle with oil, and crisp in fryer. (I assume at 400 also, it does not say.) But after 30 and even 40 minutes in the foil “bowl” the potatoes were still too firm to smash. And each time you want to test, you have to open foil or pierce it. Why? When only 10 or so minutes steamed on top of the stove would give you perfect potatoes for smashing. The 2nd recipe for French Fries adds so many extra steps to a simple recipe for no reason that I can detect. It starts out like most Air Fryer recipes for fries, with soaking potatoes. It does give a handy short cut to use hot water for 10 minutes instead of cold for 30. But then it has you alternate between cooking the fries and retossing them with oil in a bowl 7 times! Yikes! That’s 7 times you are supposed to place fries in bowl, toss with oil, remove from bowl and place in basket and cook 5 to 10 (depending on which step you’re at) minutes, remove, toss again and repeat again and again. Really? I did it... and all I got in return were average tasting baked fries... no crispier than other methods. And then there’s the little detail that is omitted from every recipe... what setting is being called for. It does not tell you whether setting should be at “bake” or “air fry”. It simply gives a temperature and leaves you to guess.Do I recommend? Definitely not for a new cook. And definitely not for a gift. The recipient will be cursing you the whole time s/he’s cooking.

Review: A class recommended this book for new air fryer owners - and I was very disappointed. I don't eat animals and avoid oil and like to keep my sodium low, so i kept my expectations low. But not low enough. A reasonable guideline for sodium content is to keep the mg at or below the number of calories per serving. Regretfully that is not a guideline for American Test Kitchen and in looking at the sodium content for vegetables, the mg per serving of sodium pretty much was consistently more than the number of calories per serving. Yes, a complete waste of my money.

Review: I have made 3 recipes from this cookbook so far and I am impressed with how easy they are to follow. ATK has eliminated un-needed steps to make the recipes quick and easy. There are some really useful hints and tips for using an Air Fryer which I appreciate since I am a novice. This cookbook is MUCH better than the one that came with the fryer.

Customers say

Customers find the recipes in the book good and tasty. They appreciate the great tips, basic information, and suggestions for using an air fryer. Readers also mention the book has clear directions and nice pictures. Overall, they say it's a great air fryer cookbook with good uses. However, opinions are mixed on the value for money, with some finding it well worth the price while others say it's overpriced.
