Peachy Sriracha Sticky Wings

If you ask me, wings are meant to be a simple pleasure. I’m happy as long as they taste good, are easy to make, and hit these three marks: Spicy. Sticky. Messy. If that’s enough to satisfy you, too, you’ll also love this simple, sweet-­and-­just-­a-­little-­spicy recipe. If you want more than just a little spicy, simply add more Sriracha. That’s what I do when my kids are not around.

1. Whisk together the peach jam, Sriracha, oil, fish sauce, and salt in a medium bowl until smooth. Separate 1/4 cup of the marinade and mix the vinegar into this reserve; set the reserve aside on the counter if cooking the wings within 2 hours or in the refrigerator if not cooking them until later.

2. Add the larger portion of the marinade and the chicken to a bowl with a lid or to a large food storage bag and seal.

Set on the counter to marinate for at least 2 hours or place in the refrigerator for longer, up to overnight.

3. When ready to cook, preheat the grill to medium-­high and brush with oil.

If the chicken was in the refrigerator, allow it to come to room temperature, if you have time. Place the wings on the grill and season generously with salt and pepper. Cook uncovered, turning and basting with the reserved marinade every 5 minutes, until crispy around the edges and cooked through, about 18 minutes. Season to taste with more salt and pepper, if desired, and serve immediately.

Title: A cookbook you’ll keep close by and grab a couple of times a week
Review: This is a super-useful, engaging, makes-life-easier cookbook.It’s organized by cooking method—in an oven, in a pan, in a pot, on the grill—which makes lots of sense. If you’re staring at a package of chicken thighs and want the oven to do most of the work, you know exactly where to look.The recipes are straightforward, trustworthy, and reliably delicious. And varied, though they rely on common ingredients. Many, like the sheet-pan fajitas and sheet-pan shawarma, are perfect for quick weeknight meals that will make everybody happy. A few, like the roast chicken with new potatoes and artichokes, are special-occasion or weekend fare.There’s lots of valuable cut-through-the-hype advice here too. For instance, dry brining (salting in advance) pays off; wet brining, not so much. Trussing isn’t necessary. Sometimes bottled lime juice is better than fresh-squeezed. There’s a sidebar titled “Any kind of arroz with any kind of pollo,” a note about a less expensive substitute for Italian parmesan, a tip about how to thaw chicken safely, et cetera. The recipes for sauces are a big bonus. The quick prune chutney to accompany chicken cutlets is a gem, quick and delicious. I first made it to accompany the dish it’s part of, and then made it again just to have around for use on sandwiches, etc. The garlic sauce and maple-cider vinegar glaze are similarly versatile.

Title: Best Chicken Recipe Book Ever!
Review: I borrowed a few cookbooks from my local library just to get some inspiration and found myself marking every page in this book for my next meal! The book starts off sharing best practices for handling the chicken and preparing the chicken and the rest of the book is amazing recipes with gorgeous photos. It didn't take me long to get onto Amazon and buy a copy for myself. This is going to be a repeat go-to!

Title: Amazing recipes and techniques you can use over and over
Review: I absolutely love this cookbook! About a month into owning it, I’ve made at least one recipe a week from it and each has been delicious. Not only are the recipes great, but the writing and tips are super helpful. I feel like I am exploring new recipes while also learning techniques I can apply in every day cooking. For example, Stacie shares a method for making chicken thighs on the stove that can be used with almost any spice blend. It’s a given that we’ll have at least 2 nights of chicken a week and I absolutely love just grabbing this book and thumbing through to find what sounds good. I would absolutely recommend!

Title: Full of winning recipes!
Review: I have this tendency to buy cookbooks and only try one or two recipes from them before they start to collect dust on my kitchen bookshelf. Stacie's book is definitely an exception. I've been trying recipe after recipe in this book, and loving all of them. I have yet to cook a recipe from here that my family doesn't like! They are all super easy and flavorful.

Title: Excited!!!
Review: Just got my copy and I’m in love with this book and I’m not a recipe book person! The book starts with very straight forward instruction on buying whole chickens, choosing the right tools for butchering and how to properly butcher. Not too much but just enough to make sure you know what your doing. There’s also carving a cooked whole chicken. The book is bright and the recipes are really inviting, so many weeknight recipes, with ingredients that you’ll have on hand. There’s specialty recipes, Indian style fried chicken, jerk, laarb (never heard of it before but trust me salad looks and sounds delicious). I can’t wait to try out all of these recipes...I will update my review once I try a few.
